Healthier Homemade Mac and Cheese image

To make this rich mac and cheese recipe healthier we use whole wheat bread crumbs, low-fat milk and cheese, whole wheat noodles, and reduced the amount of butter. Serve with a salad for a healthy meatless dinner.

1 (16 ounce) package whole wheat macaroni (such as Smart Taste®)
2 tablespoons butter
2 ½ tablespoons all-purpose flour
2 cups shredded low-fat Cheddar cheese
½ cup grated Parmesan cheese
3 cups low-fat (1%) milk
2 tablespoons butter
½ cup whole wheat bread crumbs
1 pinch paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly. Stir in Cheddar and Parmesan cheeses and cook over low heat until cheese is melted and sauce is thick, about 3 minutes. Place macaroni in large baking dish and pour sauce over macaroni. Stir well.
  • Melt 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and stir until butter is absorbed, 2 to 3 minutes. Spread over macaroni to cover. Sprinkle with paprika.
  • Bake in preheated oven until cheese sauce is hot and breadcrumbs are browned, about 30 minutes.

Usually when I hear "healthy" I run in the opposite direction, especially when combined with something like mac and cheese, but this recipe was delicious. It was flavorful and creamy and didn't taste like any flavor had been sacrificed in the name of making it healthy. Healthy doesn't have to mean bland! This recipe is a keeper.

8 ounce(s) low fat cottage cheese
2 cup(s) low fat sharp cheddar cheese
1 small onion
3 clove(s) garlic
1 cup(s) low fat milk (i used almond milk)
1 package(s) whole grain macaroni
1 tablespoon(s) garlic salt
3 tablespoon(s) paprika
1 tablespoon(s) spicy brown mustard

Steps:

  • Prepare macaroni until "al dente." I boiled mine for about 5 minutes and it was good to go. Drain and set aside.
  • Process milk, onion, garlic, cottage cheese, cheddar cheese, mustard, paprika, and garlic salt in blender until smooth. Stir macaroni and cheese mixture until well combined.
  • Pour macaroni mixture into greased baking pan and bake at 350 for about 20 minutes until top is golden brown and insides are bubbly. Serves 6.

8 ounces dried elbow macaroni
1 cup 2% cheddar cheese, shredded
1/4 cup nonfat plain yogurt
1/2 tablespoon mustard
2 teaspoons butter or 2 teaspoons margarine
salt
pepper

Steps:

  • Cook macaroni in a large pot according to package directions. Drain, and set aside.
  • While the pasta is cooking, combine the cheese and yogurt in a small bowl.
  • Melt the butter in a large pot over medium heat, and stiff in the mustard.
  • Add cooked macaroni to the butter mixture, and toss to coat.
  • Stir in the cheese mixture and salt and pepper to taste.
  • Stir until cheese is fully melted.

6 slices white bread
3 tablespoons cold butter, cubed
1 package (16 ounces) uncooked elbow macaroni
6 tablespoons butter, cubed
1 garlic clove, minced
1 teaspoon water
1 teaspoon ground mustard
1/4 teaspoon cayenne pepper
6 tablespoons all-purpose flour
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cans (12 ounces each) evaporated milk
1 cup 2% milk
4 cups shredded Colby cheese
2 cups shredded cheddar cheese
1/2 teaspoon salt
1/8 teaspoon coarsely ground pepper
3 cups cubed fully cooked ham (1/2-in. cubes)

Steps:

  • Grease a 13-in. x 9-in. baking dish: set aside., For bread crumbs, pulse bread and cold butter in a food processor until crumbs are fine, about 20-25 pulses; set aside., Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt butter over medium heat. Whisk in the garlic, water, mustard and cayenne for 30 seconds. Stir in flour until blended; cook and stir for 2-3 minutes or until golden brown. Gradually whisk in broth and milk. Cook and stir 4-5 minutes longer or until mixture begins to thicken., Remove from the heat; stir in the cheeses, salt and pepper. Drain pasta; add to cheese mixture. Fold in ham. Pour into prepared baking dish; sprinkle with bread crumbs., Bake, uncovered, at 375° for 20-25 minutes or until crumbs are golden brown. Let stand for 5 minutes before serving.

Hearty Mac & Cheese image

This was adapted from an Ellie Krieger recipe. I made a few of my own tweaks. A friend of mine challenged me to find a mac & cheese recipe that wouldn't leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesn't taste like squash. It's nice and creamy with a crispy, browned top. If you're looking for a light alternative to many people's favorite comfort food, give this a try.

1 lb pasta, whole wheat (I like Barilla plus)
2 (10 ounce) packages winter squash puree, frozen (I used Cascadian Farms brand)
2 cups 1% low-fat milk
6 ounces extra-sharp cheddar cheese, grated
2 ounces monterey jack cheese, grated
1/2 cup part-skim ricotta cheese
3/4 teaspoon salt
1 teaspoon mustard powder
1/8 teaspoon cayenne pepper
1/4 cup parmesan cheese, grated
1/4 cup seasoned bread crumbs
2 teaspoons olive oil

Steps:

  • Preheat oven to 375 degrees. Coat a 9 X 13 baking pan with olive oil or cooking spray.
  • Bring a large pot of water to a boil. Add pasta and cook until al dente, about 6-8 minutes. Drain.
  • Meanwhile, place the frozen squash and milk in a medium saucepan and cook over low heat until the squash is fully defrosted. Turn the heat up and cook until almost simmering. Add the ricotta cheese. Use an immersion blender to make sure the squash, milk and cheese is nice and smooth (this isn't necessary, but it helped the consistency).
  • Remove the pan from the heat and stir in the Cheddar, Monterey Jack, salt, mustard and cayenne. Add drained macaroni to the cheese sauce and transfer to the prepared baking dish.
  • In a small bowl, combine the bread crumbs, Parmesan and olive oil. Sprinkle over the top of the mac & cheese. Bake for 20 minutes. Then broil for 3 minutes to crisp-up the top.
