HEARTY VEGETABLE SOUP
This is a tasty, low-fat soup. It's all vegetables, beans and rice so there's not a lot of calories, either. You can replace the soy sauce with low sodium soy sauce, if desired.

HEARTY VEGETABLE SOUP
Steps:
- Set a large saucepan over medium heat. Coat the pan with olive oil and add the diced onions, carrots, celery and garlic. Season with some salt and pepper, and then sweat the vegetables (cook without adding any color) for about 5 minutes. Add the kale, corn, edamame and red bell pepper and cook for a few more minutes so they have a chance to saute. Add the stock, season with salt and pepper and bring to a simmer. Cook until the vegetables are soft, 7 to 8 minutes. Serve.
- Begin by fortifying store-bought broth (this will add more depth of flavor to the finished soup). In a large stock pot, add the broth, 1 quart cold water, chicken carcasses, peppercorns, celery, carrot, onion, garlic, thyme and bay leaf. Set over medium heat and slowly bring to a rolling boil. Heating the broth up slowly will draw out the flavors of the chicken bones, vegetables and aromatics. Season lightly with salt and let the stock simmer (slightly covered) for 1 to 1 1/2 hours. When done, it will have reduced by about a quarter, leaving you with approximately 3 quarts of rich stock. Strain the stock through a large sieve, discarding the bones and vegetables. Chill the stock immediately until ready to use.

MOM'S HAMBURGER SOUP
I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

HEARTY HAMBURGER/RICE/VEGETABLE SOUP
This is an excellent soup for a cold Winter's evening, or for that matter, just about any old day. It's simple to put together, and probably can be done with ingredients you already have on hand. And like many soups and stews; it tastes even better when reheated the next day.

- Easy One-Pot Chicken Taco Soup. The chicken cooks right in the broth for the soup, which not only makes things easy on you but ensures the meat is extra-flavorful.
- Rosemary & Lemon Chicken Minestrone Soup. You only need 30 minutes for this hearty bowl to come together. This take on minestrone is extra-filling, thanks to crumbled ground chicken, and has a bright finish, thanks to a squeeze of fresh lemon.
- Italian Wedding Soup. The flexible nature of this recipe makes it perfect for weeknight cooking. You can use any type of ground meat, broth, or greens you have on hand to make it fit your needs for dinner.
- Chicken Noodle Soup. There’s no denying classic chicken noodle soup is delicious. If you have time to cook and shred the chicken at home, it’s worth the effort.

- Hearty Kale and Sausage Soup. This recipe swings more stew-like than soup. It’s packed full of beans, potatoes, kale, and sausage, so you don’t have to worry about being hungry at the end of this meal.
- Mushroom and Barley Soup. Soup doesn’t always require meat to be filling. This recipe uses dried and fresh mushrooms to provide all the savory flavor that you need.
- Miso Soup with Rice and Poached Egg. Miso is fermented soybean paste. When it’s stirred into broth, it adds a richness and saltiness to the soup. It’s usually served more simply.
- Quick Udon Noodle Soup. Thick udon noodles make this soup almost feel like a noodle bowl. It’s the perfect recipe to bulk up with leftovers, whether that’s tofu and greens as described, or leftover meat and roasted vegetables from the night before.

- In a large pot or Dutch oven over medium-high heat, heat the oil. Once hot but not smoking, add the turkey, onion, and celery. Cook, breaking the meat into small pieces, until it is no longer pink and fully cooked through, about 7 minutes. Stir in the tomato paste, garlic, salt, pepper, oregano, and cayenne and cook for 30 seconds.
- Transfer the meat to a 6-quart or larger slow cooker. Add the tomatoes, carrots, sweet potato, red bell pepper, green bell pepper, and Worcestershire. Pour in 3 cups of the beef broth. Stir to combine. Cover and cook on high for 3 to 4 hours or low for 5 to 6 hours, until the sweet potato and carrots are tender.
- Stir in the peas. If the soup is thicker than you would like, add additional broth until you reach your desired consistency. If you’d like the soup thinner yet, add water (or if you have more broth on hand, you can use that too). Re-cover the slow cooker and let cook 5 additional minutes to warm through and allow the flavors to marry. Serve hot with cheese and chopped green onions, if using.
