CREAMY CANNELLINI SOUP
Steps:
- Combine onion, sausage, and celery in a large saucepan. Cook until sausage has no pink remaining. Drain any fat.
- Add potato, seasoning, one can of cannellini beans, and 3 cups chicken broth. Bring to a boil, reduce heat and simmer 10 minutes.
- Meanwhile, combine remaining cannellini beans and 1 cup chicken broth in a blender. Blend until smooth.
- Add to soup and simmer an additional 5 minutes.
- Remove from heat, stir in pesto. Season with salt and pepper to taste.
- Garnish with parmesan cheese and parsley if desired.

But it's also a nice option for those times when you don't have a lot of time or headspace, but want to cook something from scratch that's satisfying and tastes like it cooked for ages.

- Heat olive oil in a large saucepan over medium heat. Add sausage and cook until browned, breaking apart with a wooden spoon. Stir in carrots, celery, and red onion; cook until softened, 5 to 10 minutes. Stir in tomato paste and cook until fragrant, about 1 minute. Pour in beans with their liquid.
- Add potatoes, thyme, oregano, salt, and pepper to the saucepan. Pour in enough water to cover, about 1 1/2 cups. Bring to a boil. Reduce heat and simmer until potatoes are tender and soup thickens, about 20 minutes.

- Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, onion, and garlic; cook and stir until sausage is browned and crumbly and onion is translucent, 8 to 10 minutes.
- Pour beef stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add water and bouillon cubes.
- Add tomato sauce, cannellini beans, kidney beans, garbanzo beans, green beans, diced tomatoes with juice, carrots, tomato paste, soup mix, cabbage, garlic powder, Italian seasoning, pepper, and salt. Reduce heat to medium and simmer for 40 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain.

- Begin by gathering and prepping all of your ingredients according to the ingredients list above to have organized and ready for use.
