MAKE-AHEAD BREAKFAST BARS



Make-Ahead Breakfast Bars image

I like to make a batch of these and then cut them and wrap single servings in foil to have handy in the freezer for the week. Much cheaper than the freezer breakfasts from the store and you can basically add/substitute whatever ingredients you want or have handy.

cooking spray
3 cups frozen Southern-style hash browns
4 eggs, lightly beaten
1 cup cubed fully cooked ham
1 cup shredded Cheddar-Monterey Jack cheese blend
½ teaspoon onion powder
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x11-inch casserole dish with cooking spray.
  • Mix hash browns, eggs, ham, Cheddar-Jack cheese, onion powder, salt, and pepper together. Pour mixture into the prepared dish. Shake dish gently from side to side to level out ingredients.
  • Bake, uncovered, in the preheated oven until top starts to brown, about 40 minutes. Cool before cutting into bars.

I found this for a response to healthy breakfast on the run with natural ingredients. I intend to make these for my DH and I too. I found it on Iowa State University's whole grains food recipes site.

2 eggs, beaten
1 cup unsweetened applesauce
1/4 cup honey
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup wheat germ
1/4 cup oat bran
3 cups old fashioned oats
1/4 cup raisins
1/2 cup walnuts

Steps:

  • Blend together eggs, applesauce, honey and vanilla.
  • Add baking soda and stir.
  • Add remaining ingredients and stir until moist and blended.
  • Spoon into either a 12 cup cupcake pan or into a 9x13" baking pan. When spooning into pan, keep loose. Do not pack down.
  • Bake at 375 degrees from approximately 15 to 20 minutes.
  • Cool.
  • Makes 12 servings.

These oat and barley bars can serve a dual purpose for children and adults alike. They are a quick and very nutritious breakfast on the run or they can be packed into school lunches. And unlike commercial bars, they contain few preservatives or additives.

Number Of Ingredients 11

1 1/2 cups rolled oats (large or quick flakes)
1 cup barley
1/2 cup shredded coconut
1/2 cup dried cranberries
1/4 cup unsalted sunflower seeds
1 cup light peanut butter
1 cup brown sugar
1/3 cup unsalted butter
2 teaspoons vanilla
1 teaspoon cinnamon
1 large egg

Steps:

  • Preheat oven to 350°F Grease and line a 9-inch square pan with parchment paper so the paper hangs over the sides of the pan.
  • In a bowl, toss together oats, barley flakes, coconut cranberries and seeds. Set aside.
  • In a saucepan, combine peanut butter, brown sugar, butter, vanillla and cinnamon and stir over medium-low heat until melted. Pour melted mixture over dry mixture and stir together. Blend in egg and spread mixture into pan, patting down evenly.
  • Bake for 30 minutes and then let cool for 20 minutes. Cut into bars and store in an airtight container.
