These breakfast cookies are perfect for those on the go that still want to get in real nutrition. The recipe is very versatile, so you can switch things around to suit your needs. My version is packed full of superfoods such as oats, apples, bananas, chia seeds, and cinnamon.

2 ½ cups rolled oats
3 medium bananas, mashed
4 ounces unsweetened applesauce
5 tablespoons chia seeds
¼ cup skim milk
1 egg
2 tablespoons ground cinnamon
2 tablespoons agave nectar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Combine oats, bananas, applesauce, chia seeds, milk, egg, cinnamon, agave, and vanilla extract in a bowl. Let cookie dough sit for 15 minutes.
  • Scoop dough by teaspoons onto the prepared baking sheet.
  • Bake in the preheated oven until edges are set and golden, about 18 minutes.

1 cup oatmeal
½ teaspoon baking powder
1 pinch white sugar
2 cups milk
1 egg, or more to taste
¼ cup dried cranberries
¼ cup flaked coconut
¼ cup chopped nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix oatmeal, baking powder, and sugar together in a large bowl. Beat milk and egg together in a separate bowl; add to oatmeal mixture and stir to incorporate. Stir cranberries, coconut, and nuts into the oatmeal mixture; spread into the prepared baking dish.
  • Bake in preheated oven until beginning to brown along the edges, 50 to 60 minutes.

Baking the oatmeal may seem to be a lot of fuss. But once it comes out of the oven, you will not be sorry you waited.

3 tablespoons unsalted butter, melted and cooled slightly, plus more for coating baking dish
2 cups old-fashioned rolled oats
1/2 cup walnuts or almonds, toasted and chopped
1/3 cup fine-grain natural cane sugar
1 teaspoon aluminum-free baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon fine-grain sea salt
2 cups milk
1 large egg
2 teaspoons pure vanilla extract
2 ripe bananas, cut into 1/2-inch slices
1 1/2 cups huckleberries, blueberries, or mixed berries
Maple syrup, for drizzling

Steps:

  • Preheat oven to 375 degrees. Butter an 8-inch square baking dish.
  • Combine the oats, half the nuts, sugar, baking powder, cinnamon, and salt in a bowl. In another bowl, whisk the milk, egg, half the butter, and the vanilla.
  • Arrange bananas in a single layer on the bottom of the coated baking dish. Sprinkle with two-thirds of the berries, then cover with the oat mixture. Slowly drizzle milk mixture over the oats. Gently tap dish on a work surface to distribute liquid. Scatter remaining berries and nuts across the top.
  • Bake for 35 to 40 minutes, until the top is nicely golden and the oat mixture has set. Let cool slightly. Drizzle with remaining melted butter and maple syrup.
