This salad is very easy to make and always requested by my family. People think they are eating something special because it is made with hearts of palm. Best if chilled overnight.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.

100g green bean , trimmed and cut into 2.5cm lengths
1 lemon , halved
1 small red onion , thinly sliced into half moons
2 avocados , stoned, peeled and chopped
150g pack cherry tomato , halved
2 x 410g cans palm heart , sliced into 1cm slices, see tip, below
5 black olives , halved
1 tbsp white wine vinegar
juice 2 limes
3 tbsp extra virgin olive oil
1 tbsp clear honey
1 tbsp chopped coriander

Steps:

  • Blanch the green beans for 1-2 mins in boiling salted water, drain and rinse in cold water. Dry on a tea towel and put in a large salad bowl.
  • Squeeze some lemon over the onion and avocados and let sit for 1 min. Add the tomatoes, hearts of palm, olives, onion, and avocado to the beans.
  • Put the dressing ingredients in a small jar with a fitted lid. Add some seasoning and shake well. Just before serving, pour the dressing over and mix.

1 (15-ounce) can hearts of palm, drained and sliced 1-inch thick on a bias
1 (15-ounce) can artichoke hearts in water, drained and quartered
1/4 cup orange marmalade
1 lemon, juiced
2 teaspoons Dijon mustard
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
1/4 cup sliced almonds, toasted

Steps:

  • Arrange romaine lettuce, hearts of palm and artichokes on large platter. Combine the marmalade with lemon juice, mustard, season with salt and pepper and whisk in the olive oil slowly. Pour dressing evenly over salad when ready to serve. Garnish with toasted sliced almonds.

2 small cucumbers, peeled
5 hearts of palm (about 1/4 can)
1/4 cup chopped fresh mint and 1/4 cup chooped flat-leaf parsley
2 lemons
1/4 teaspoon white pepper
1/2 cup canola oil
salt and black pepper to taste

Steps:

  • Chop tomatoes and cucumbers into large bite-sized chunks. Rinse hearts of palm in cold water and blot dry. Peel off ny outer layer that seems too tough to eat and slice into 1/4 inch rounds. Prepare dressing: juice lemon into medium bowl, removing seeds. Add white pepper and whisk in canola oil, pouring in slowly to produce a smooth blend. Season to taste with salt and pepper. Toss tomatoes, cucumbers and heart of palm with desired amount of dressing and stir in chopped herbs. Let sit one hour to allow flavors to blend.
