Iceberg Salad with Italian Dressing image

If this brings back memories of the "house salad" from that Italian-American restaurant you grew up eating at, then we consider our jobs done.

Number Of Ingredients 12

1/2 cup olive oil
5 tablespoons white wine vinegar
1 tablespoon mayonnaise
1 tablespoon sugar
1 1/2 teaspoons dried oregano
1 garlic clove, finely grated
Kosher salt, freshly ground pepper
1 small head of iceberg lettuce
1/2 small red onion, sliced into rings
2 ounces provolone piccante cheese, thinly sliced
1 cup drained small mozzarella balls, torn
10 peperoncini, halved if large

Steps:

  • Whisk oil, vinegar, mayonnaise, sugar, oregano, and garlic in a small bowl. Season with salt and pepper.
  • Cut lettuce in half through stem end. Tear apart into large pieces. Arrange on a platter and scatter onion, provolone, mozzarella, and peperoncini over, nestling in among leaves. Drizzle with dressing to coat to your liking (you'll probably have some extra) and top with more black pepper.

2/3 cup buttermilk, well-shaken
1/3 cup mayonnaise
4 ounces Danish blue cheese (about 1 cup)
1 tablespoon lemon juice
A few dashes hot sauce, such as tobasco
2 tablespoons chopped chives
salt and pepper, to taste

Steps:

  • In a bowl, combine buttermilk, mayonnaise, half of the blue cheese, lemon juice, and hot sauce.
  • Stir to combine
  • Stir in chives, salt, and pepper.
  • Serve with iceberg wedges and top with remaining blue cheese.

2 dashes hot sauce
One head of iceberg lettuce, outer leaves removed, cut into quarters
4 slices bacon, cooked and crumbled
1/2 cup cheddar cheese, shredded
1 tablespoon chives, finely diced

Steps:

  • In a small bowl, combine dressing ingredients. Stir well with a whisk.
  • Plate each salad separately, placing iceberg lettuce quarter on plate, then topping with bacon, cheese, chives and dressing. Serve cold.

I love salads, and this is no exception. Enjoy it with homemade Ranch Dressing instead of Blue Cheese.

1 small head iceberg lettuce
1 small cucumber, sliced (thinly)
1/2 cup sour cream
1/4 cup plain yogurt
1/2 cup mayonnaise
1 garlic clove, pressed (or minced)
1 tablespoon white vinegar
1 tablespoon chopped chives
1/4 teaspoon salt (kosher)
1/4 teaspoon pepper, ground

Steps:

  • Trim the core even with the bottom of the lettuce and cut the lettuce into quarters through the core. If the quarters look too big for a single serving, either cut them in half or trim them to whatever size you feel is a good serving.
  • Combine the sour cream, yogurt, mayonnaise, garlic, vinegar, and chives in a bowl until well mixed. Season with salt and pepper. Cover and refrigerate until ready to use.
  • To serve, set the wedge of iceberg in the center of a salad plate, add cucumber, and spoon the dressing over and dash it with a good pinch of chives.

1 small daikon radish
2 tablespoons Thai fish sauce

1 tablespoon rice wine vinegar
2 tablespoons vegetable oil
1 tablespoon soy sauce
1 tablespoon Pernod
2 tablespoons sesame oil
2 teaspoons finely grated fresh ginger

Steps:

  • Thoroughly wash and dry lettuce. Break into bitesized pieces and place in a large salad bowl. Julienne carrot, cucumbers, and radish, and toss with greens.
  • Whisk dressing ingredients together in a bowl. Toss with salad just before serving.

The 'Berg's back! For a while it was almost embarrassing to even think of eating Iceberg lettuce?it was blacklisted as flavorless, colorless and watery. But Iceberg is an All-American favorite that doesn't deserve to be shelved. It's refreshing and crisp, and the 'rents are sure to love it because it's probably what they grew up on. And it's so simple! To serve, I just split a head of iceberg into wedges and top them with some homemade ranch dressing and fresh chopped chives. Nothing simpler. Nothing better.

3 thin-slices prosciutto*
1 head iceberg lettuce, about 1 1/2 pounds
3/4 cup sweet grape tomatoes, halved and/or quartered
1 ripe avocado, seeded, peeled, and chopped
1 recipe Homemade Buttermilk Ranch Dressing
Kosher salt and fresh black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Arrange the prosciutto in a single layer on the baking sheet. Bake until wrinkled and slightly shrunken, about 11-13 minutes. Set aside to cool completely. It will crisp up as it cools.
  • Discard the outer leaves of the lettuce and cut the iceberg in half right through the middle, then cut the halves into four wedges.
  • Arrange the wedges on a platter or individual plates, spoon a generous amount of Buttermilk Ranch Dressing over each wedge so that it drips down the sides, then top with chopped tomatoes and avocado.
  • Crumble the cooled prosciutto and sprinkle over each wedge. Season with salt and pepper, to taste. Serve immediately.
