1 tbsp cream cheese
1 tsp tomato paste
1 tsp chili flakes
1 tsp cumin
1 cup chicken, shredded
2 garlic cloves, minced
½ cup mozzarella, shredded
½ zucchini, grilled
2 tortillas
½ avocado
2 tbsp olives, pitted and chopped
2 tsp jalapeno slices, pickled
1/2 cup spinach
2 tbsp fresh chopped basil*

Steps:

  • In a small bowl mix the chicken with cream cheese, tomato paste, chili flakes, cumin, garlic, basil (or cilantro) and mozzarella.
  • Put ½ of the mixture in the middle of a flour tortilla.
  • Add jalapeno, spinach, zucchini, and olives.
  • Wrap like a burrito and toast on both sides in a pan with a little bit of olive oil at medium for 2-3 minutes or until golden brown. Slice in the middle and enjoy.
