Steps:
- Cut fish into serving-size pieces.
- Place milk in a shallow bowl.
- In another shallow bowl, combine potato chips, parmesan cheese, thyme, garlic powder, pepper.
- Dip fish in milk, then with the potato chip mixture.
- Sprinkle a greased 8-inch square baking dish with crumbs; drizzle with butter.
- Bake uncovered at 500 degrees for 12-14 minutes or until fish flakes easily with a fork.

- Position racks onto the upper and lower third of the oven and preheat to 450°F Cover one baking sheet with aluminum foil and place on lower rack so it heats up.
- Slice potato into 1/4-inch thick rounds and toss with olive oil. Mix thyme, garlic powder, salt and cornstarch together and toss evenly with potatoes. Place on hot baking sheet and on the bottom rack in the oven. Cook for 30 min, flipping the potato slices half way through.
- For Fish: Mix mayo, Old Bay, cayenne pepper, lemon juice and water in a small bowl. Add more water, one teaspoon at a time, until you have a smooth and lightly thickened consistency. Place the flour and the panko breadcrumbs in separate shallow bowls and dip cod strips into flour, removing excess flour. Then dip into the mayonnaise mixture and finally in the breadcrumbs, making sure to press the panko into the fish so that it adheres.
- Place fish strips on a baking sheet lined with parchment paper and spray with PAM non-stick spray. Place on the top rack of the oven and cook for 6-10 minutes, depending on the thickness of the fish, until fully cooked. If needed, broil for 1 minute so that the fish are browned.
- Remove fish and chips from oven and serve immediately.

- Pour salad dressing in a bowl, then dip each fillet into the dressing, coating both sides.
- Arrange in a single layer on a greased cookie sheet.
- Crush the potato chips in a large zip-top plastic bag using a rolling pin.
- Sprinkle the chips evenly over the fish.
- Top with shredded cheese.

EASY CHEESY RANCH-POTATO CHIP FISH FILLETS
You can be creative and use whatever flavor of potato chips you like, plain, sour cream and onion, salt and vinegar, spicy etc,if using plain flavor I suggest to add some spices, make certain to use a good brand of potato chips --- plan ahead the fish must be refrigerated in the dressing for 1 hour before breading --- I made this using tilapia fillets about 3/4-inch thick and found that 12 minutes was just enough time, cooking times will of coarse vary depending on the size of your fish, I also made this using basa fillets, any meaty fish fillets will work fine for this --- you will love this!

- Grease a 13 x 9-inch baking pan.
- Rinse the fillets under cold water then pat dry using paper towels.
- Place the ranch dressing in a shallow dish; add in the fish fillets then toss to coat with the dressing (you can use more dressing if desired).
- Cover and refrigerate for 1 hour.
- Set oven to 450 degrees F (oven rack set to lowest position).
- In a shallow bowl mix the crushed potato chips with the shredded cheese.
- Coat the fillets into the potato chip coating.
- Place into prepared baking dish.
- Bake uncovered for about 8-12 minutes or until the fish flakes (cooking time will depend on the size of your fillets).
- Serve with lemon wedges on the side.

- Preheat oven to 450F. Line a baking sheet (large) with foil. Spray a 9x9x2 inch baking pan lightly with nonstick cooking spray. Set both pans aside. Rinse fish; dry by lightly patting with paper towels. Cut into 4 pieces (if necessary). Measure thickness of fish fillets (will determine how long to cook).
- In a large bowl (or ziplock bag) coat sweet potato and potato slices with 1 Tbsp olive oil. Arrange slices in a single layer on the prepared baking sheet. Salt (with sea salt) and pepper to taste. Bake potato slices until browned and crisp (approx. 15 - 20 min.) Check frequently and remove any slices that have browned more quickly. Remove from baking sheet and let cool. .
- Line up 3 shallow bowls/dishes. In first bowl add flour. In second bowl combine egg white and almond milk. In third bowl combine bread crumbs, almonds, snipped fresh thyme and cayenne. Dip each piece of fish in the flour, followed by the egg and finally into the bread crumb mixture. Place in the prepared baking dish and drizzle with remaining 1 Tbsp olive oil.
- Bake fish for 4-6 min. per 1/2-inch thickness of fish (until fish flakes easily when tested with a fork).
