HEALTHY WHOLE WHEAT CINNAMON BUNS - ABM DOUGH
Nice and soft and all whole wheat. For the Oil, I've used coconut and grapeseed so far with success.

Steps:
- Add ingredients to breadmaker in the order recommended by the manufacturer, I reserve 1 cup of flour and add until the consistency is a nice soft ball.
- Let machine run through dough cycle.
- Turn out dough and split into two pieces.
- Roll out each on floured surface to approximately 12"x18" rectangle.
- Brush each with 1 tbsp oil.
- Top each with 1/2 cup succanat or sugar mixed with cinnamon.
- I also sprinkle a little salt on, but this is optional.
- Roll up each rectangle and cut each into 8 equal pieces.
- Arrange cut side up in two round pans. Bake at 325-350°F for 25-30 minutes.
- Prep time includes measuring dough ingredients and then rolling and assembling.

MOM'S 100% WHOLE WHEAT AIR BUNS (ROLLS) FOR ABM
I find most 100% whole wheat buns are very dense, and let's be frank, taste like the floor of a barn. This recipe is an adaptation of my "Mom's Air Buns" #168628, and makes delicious, soft, healthy,and easy to make rolls. I think the unusual addition of vinegar is what makes the difference. Edited to include links to recipe#419620, and recipe#419622 for those of you who wish to make whole wheat loaves instead of buns...same great taste and texture! Steps:
- Put water, butter, honey, salt and vinegar in the machine.
- In the bottom of a one cup measure, put 2 tablespoons of gluten, and then fill the cup with W.W. flour.
- Put that, and another 3 1/2 cups of flour on top of the liquids.
- Add yeast to surface, and programme for "dough" cycle.
- I make two 9 inch pans of rolls, each with 9 rolls per pan, and let rise until double (the rolls will fill the pans).
- Bake at 350°F (I use convection bake) for approximately 20 minutes. Rolls will be deeply golden and oh so yummy.

SUPER QUICK WHOLE WHEAT BUNS
These are so quick to throw together. I like to make these when I want a yeast roll but don't have the time to wait for it to rise twice. My mom made these when I was growing up and they were very soft. I loved to make peanut butter sandwiches with them. Store in plastic bag or covered container to keep soft.

Steps:
- Combine water, yeast, oil and sugar or honey; let rest for 15 minutes.
- Add salt, egg, and flour to yeast mixture and mix well.
- Roll out 3/4 inch thick and cut into 10-12 rounds.
- Place rolls on cookie sheet sprayed with nonstick cooking spray.
- Bake at 400-425 for 8-10 minutes or until lightly browned. Be careful not to overbake or they will be too dry. Every oven is different.
WHOLE WHEAT CINNAMON ROLLS FOR THE BREAD MACHINE
This is a modification from Sexymommalucas's recipe #312721, which I wanted to modify to reduce the fat and use whole wheat flour. Her recipe sounded so good that I had to try it! :)

Steps:
- Place all the ingredients in the bread pan of bread maching, in order as recommended by manufacturer. Process according to maufacturer's instructions for a dough setting and press start.
- When the bread machine has completed the dough cycle, remove dough from pan and turn out onto a lightly oiled surface, sprayed with Pam. Knead enough to punch down. Form dough into a ball, cover with plastic wrap and let rest for 10 minutes.
- After dough has rested, roll into a large rectangle. Sprinkle dough with cinnamon and Splenda. Roll up and cut into 1" slices. Place into a lightly greased baking dish, cover, and let rise in a warm place for approx 1 hour, or until doubled in size.
- Bake at 325F for approx 20-25 minutes. Frost if desired with your favorite frosting.

Steps:
- Stir together milk, vegetable oil, sugar and salt in a small saucepan.
- Heat to lukewarm.
- Pour yeast over 2 tablespoons lukewarm water and let sit 5 minutes.
- Stir into milk mixture.
- Transfer warm milk to a large mixing bowl and beat in half the flour by hand or with an electric mixer.
- Mix in enough remaining flour to make a soft dough.
- Let rest 10 minutes; knead well on a floured board or with an electric mixer and dough hook; let rest 10 minutes.
- Spray a large, clean bowl with cooking spray, add dough, cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.
- Lightly coat a 9-inch round baking pan with cooking spray.
- Turn the dough onto a floured surface and roll into a 12 x 10-inch rectangle.
- Spray with cooking spray.
- Stir together brown sugar, corn syrup, cinnamon, nutmeg and orange zest; brush over dough.
- Sprinkle with raisins.
- Roll up tightly, like a jelly roll.
- Cut into 12 pieces.
- Place buns cut-side up in baking pan.
- Cover with plastic and let rise until doubled, about 1 hour.
- Preheat oven to 350°F.
- Bake buns until firm and nicely browned on top, 30 minutes.
- Cool completely before inverting onto a serving plate.
- No guilt!
