ARUGULA, GOAT CHEESE FLATBREAD WITH FIG BALSAMIC DRIZZLE
Steps:
- Grate garlic in oil and side aside.
- Wash arugula leaves and dry.
- Baste Lavash flatbread with garlic oil.
- Spread goat cheese in dots all around the bread.
- Place under the broiler for about 5 mins or until the cheese starts to bubble.
- Remove and top with arugula.
- Drizzle with balsamic vinegar.
- Cut and serve.

Healthy Veggie Flatbread Pizza is quick, easy to make and will please the whole family. It's a great way to sneak some extra vegetables into your diet, and it's delicious!

Steps:
- Preheat oven to 425 F.
- Place flatbread on a baking sheet lined with parchment paper or foil and sprayed with non-stick cooking spray. Spray the flatbread directly with extra virgin olive oil or avocado oil cooking spray.
- Place flatbread in the preheated oven for about 5 minutes BEFORE adding any toppings. This will help it get a little bit crispy.
- While flatbread is in the oven, cook meatless crumbles in a small skillet over medium-high heat (according to package instructions) and sprinkle with Italian seasoning. This should take 3-4 minutes.
- After the flatbread has cooked for 5 minutes, remove it from oven and add your toppings.

- In a large skillet, heat butter over medium-high heat. Add mushrooms and green pepper; cook and stir 5-7 minutes or until tender. Add spinach, salt and pepper; cook and stir 2-3 minutes or until spinach is wilted., Brush both sides of flatbreads with oil. Grill flatbreads, covered, over medium heat 2-3 minutes on 1 side or until lightly browned., Remove from grill. Spread grilled sides with pesto; top with vegetable mixture, tomatoes and cheese. Return to grill; cook, covered, 2-3 minutes longer or until cheese is melted. Cut pizzas in half before serving.
