Steps:
- Preheat oven to 400 degrees and line a cookie sheet with foil and lightly spray with non-stick cooking spray. Set aside.
- Cook sauce first to let flavors blend as long as possible. In a large deep skillet over medium high heat warm the olive oil. Add the onions, garlic salt and pepper and cook until onion is limp and fragrant. Add 1/2 cup of the basil, fennel, oregano tomatoes brining to a simmer. Cook over medium heat stirring occasionally while preparing meatballs. Stir in remaining basil and wine (optional) when adding meatballs.
- For the meatballs, in a large bowl blend together the breadcrumbs, parmesan cheese, basil, parsley, milk, tomato paste, salt, pepper, eggs, garlic and onions. Add the turkey meat and sausage gently mixing into the breadcrumb mix with your fingers until combined. Form the meat mixture into 1 1/2-inch balls (approximately 24). Place meatballs on prepared baking sheet and drizzle olive oil on top. Bake until cooked for 12-15 minutes. Once cooked add to sauce.
- Serve with spaghetti noodles or for a carb-free option, steam or stir-fried broccoli slaw.

Steps:
- Preheat the oven to 400 degrees F.
- For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
- Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
- For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
- Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
- Serve with grated Parmesan alongside.
TURKEY SAUSAGE MEATBALLS
I use these turkey sausage meatballs with my homemade spaghetti sauce instead of beef meatballs. The addition of Cabernet Sauvignon and freshly grated Parmesan and Romano cheeses makes it something wonderful.

- Preheat broiler. Line a baking sheet with parchment paper and spray with cooking spray.

- Form the mixture into meatballs. Place on lined baking sheet. Using a medium cookie scoop makes 15 meatballs, 1-inch in diameter. You can definitely make them in whatever size you'd like, just make sure they are all the same size so they cook evenly.
- Broil on HIGH for 10 minutes or until meatballs are cooked through.* Brush with more sesame oil on top for more flavor. Serve with your favorite side dish. Enjoy!

Steps:
- In a medium size pot, heat olive oil over medium heat. Add garlic and saute until golden, being careful not to burn. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer on low 5-10 minutes.
- Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using wet hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ping ball (1/8th cup each).
- If you wish, you can brown the meatballs in a skillet, or brown them in the broiler on a sheet pan until the tops are golden, 7 to 8 minutes. OR you can gently plop them right into the sauce.
- Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and onion and serve over pasta or whole wheat Italian bread.

Steps:
- Preheat oven to 375 degrees F and line 2 large baking sheets with unbleached parchment paper and spray with cooking spray. Or I love using silicone baking mats, no oil necessary. In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
- Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
- Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
- Serve hot as an appetizer or main dish.

INA GARTEN'S TURKEY, SAUSAGE, AND PROSCIUTTO MEATBALLS RECIPE
It's tough to go wrong with spaghetti and meatballs, but I'm always up for a variation. This recipe from Ina Garten eschews the common beef for turkey instead. But while that's usually a terrible idea (because the way to go wrong with meatballs is to make them tough and dry), she keeps them interesting (and juicy) by adding in Italian sausage and finely chopped prosciutto.

Steps:
- Preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper. In a small bowl, combine the breadcrumbs and milk and let stand for 5 minutes.
- In a large mixing bowl, combine the turkey, sausage, prosciutto, bread mixture, Asiago, parsley, oregano, red pepper flakes, 1/2 teaspoon salt, and 3/4 teaspoon pepper. Combine lightly, taking care not to over mix, then add the olive oil and egg and stir lightly to form the mixture.
- Shape into 2-inch round meatballs and spread out on the sheet pan. Brush with olive oil and bake until tops are brown and meatballs are cooked though, 35-40 minutes.
- Meanwhile, bring the marina sauce to a simmer. Add the cooked meatballs and bring to a simmer.
- Cook the pasta in salted water until al dente, then divide amongst bowls. Top with meatballs and marinara sauce. Serve with more grated cheese.

- Turkey Sausage Pasta Primavera. Pasta primavera is a bright, fresh, and super colorful dish. It’s jam-packed with veggies and relies on a simple dressing of tomatoes, garlic, onion, and cheese rather than a heavy sauce.
- Turkey Sausage, Kale and White Bean Soup. Beans are great for adding to soup because they’re relatively mild, buttery, and loaded with fiber. They’ll also bulk out the pot without breaking the bank.
- Healthy Sausage Balls. These babies are like a cross between a biscuit and a meatball. They’re very meaty and loaded with fantastic flavor, all wrapped up in a fluffy and tender whole wheat dough.
- Italian Turkey Sausage. This isn’t quite a one-pot wonder, but it’s close. You’ll use the same skillet for cooking the meat and veggies and then again to bake the whole dish at the end.
- Sweet and Spicy Turkey Sloppy Joes. Sloppy Joes are such an indulgent and nostalgic meal. Unfortunately, they’re also messy and loaded with greasy goodness.
- One-Pot Mediterranean Turkey Sausage and Rice. Not only is this a one-pot meal, but it can be on the table in just 30 minutes. Though, it would be faster if you used leftover cooked rice.
- Easy Italian Sausage Tortellini Soup. When you add chicken to soups and stews, it brings a bit of flavor and plenty of protein. But it can get lost in the mix.
- Sausage Stuffed Acorn Squash. Acorn squash are super cute and the perfect individual portion. Unlike stuffed peppers, these have a mild flavor and offer lots of squash yumminess.
- Roasted Italian Sausages with Potatoes, Peppers, and Onions. Sausage and peppers in a huge deal in my house, and we eat it a lot. I like to serve the mix in hoagie buns with some extra cheese melted over the top.
- Turkey, Spinach & Cheese Meatballs. Meatballs are juicy, tender, and extra-tasty, and I find that they’re universally loved. Whether you serve them with pasta or in a sweet glaze, you really can’t go wrong.

- 1) Preheat oven to 350 degrees. In a large bowl combine the breadcrumbs, pesto, eggs, onion, carrot, parmesan, basil, tomato paste, garlic, salt, and pepper. Using a fork, mix together. Add the turkey and chicken sausage and mix until just combined. Cover and put in the fridge while you make the sauce. (You can keep in fridge for several hours and make later)
- 2) In a large pan heat the olive oil over medium/high heat. Add the onion, salt and pepper, and cook for 5-7 minutes. Add the garlic, tomato paste, honey, crushed tomatoes, and dried herbs and stir to combine. Bring sauce to a rolling simmer, then turn heat to low and let cook, stirring occasionally, while you form the meatballs.
- 3) Form 1 – 11/4 inch meatballs by lightly rolling them in your hands and set aside. This makes a ton of meatballs, so a little help is nice here!
- 4) Once all the meatballs are formed, take two 9×13 inch baking dishes and spoon enough sauce in each to cover the bottom. Add the meatballs to the dishes and spoon the remaining sauce evenly over them. Cover with foil and bake for 30-35 minutes or until cooked. Remove the foil for the last 10 minutes of cooking. Serve over pasta, rice, or just as is with a great salad!
