TURKEY BREAST FILLETS WITH DIJON MUSTARD SAUCE
Recipe for Turkey Breast Fillets With Dijon Mustard Sauce. This is one of those tasty, healthy, 30 minute recipes. You can buy pre-sliced turkey breast or purchase a single turkey breast from your butcher and ask him to slice it for you.

- Heat olive oil in a saute pan. Season turkey slices with salt and pepper. Add the fillets a few at a time and cooking a couple minutes each side until lightly browned and cooked through. Add extra oil if needed. Don't overcrowd the pan or the fillets will steam instead of brown. Move cooked slices to a warmed dish and tent loosely with foil to keep warm. Repeat until all the slices are cooked. Once the turkey is cooked and set aside; add the broth to the pan and stir with a wooden spoon to loosen the browned bits from the bottom of the pan. Simmer the broth until it is reduced to about 1/2 cup. Whisk in the Dijon mustard and the lemon juice and bring just to a simmer. Add tarragon if using. Pour sauce over turkey and serve. Steps:
- Heat the oil in a nonstick or cast iron skillet over medium-high heat. Add the turkey and cook for 10 minutes, or until no longer pink.
- Place the tomatoes, bell pepper, and onion in your food processor and pulse until chunky.
- Add the vegetable mixture, noodles, beans, chili powder, cumin, and salt to the skillet and let simmer for 15 minutes.

Steps:
- Cut off the membranes of the fillets, wash and dry them. Dont cut them, you need them whole.
- Squeeze out the juice of the orange into a bowl, mix it with all of the spices , salt and olive oil (plus mashed cloves ).
- Grate the garlic finely, rub the turkey meat with it and put it in the prepared marinade. Put away in the fridge for 2-3 hours.
- Smear the bottom of a tray with a little olive oil. You can cover it with foil if you like, to make clean up easier later.
- Place the fillets on and pour the marinade over them. Leave for 30 min. at room temperature.
- Heat the oven to 380°F (195 °C) and bake the meat about 30 min. or until golden in color. Check on it and dont over-bake, so it doesnt turn out too dry.
- Serve warm with a garnish of vegetables if desired.

- 1. in a medium sauce pan place the tomatoes,2 tablespoons butter, 1/4 cup Splenda,2 cups water and the 1/8 teaspoon cayenne pepper and cook low for 30 minutes until tender and thickened then keep warm. 2. in a large skillet place the 2 medium yellow squash pealed and chopped into 1/2 in pieces ,2 medium zucchini pealed and chopped into 1/2 in pieces, 1 14.5 oz can green beans drained, 1/2 teaspoon old bay seasoning, 1/4 teaspoon hot pepper seeds,2 tablespoons butter,cook on low heat for 30 minutes stirring occasionally until tender and keep warm. 3. lay out the turkey Breast Filets and salt and pepper both sides to taste, place in a preheated large skillet that has been sprayed with the cooking spray cook each side for 3 to 4 minutes until turkey is golden brown and cooked thru. 4. place tomatoes in a small cup , place Turkey Filets, and Vegetables on plate and serve.
