Healthy Tortilla Chicken Pizza image

Have pizza without the guilt! High in protein, so you will feel fuller longer. Be sure to keep your eye on this dish while it is in the oven, because it broils quickly.

1/2 cup chopped cooked chicken breast
4 teaspoons olive oil
4 (6 -7 inch) flour tortillas, preferably high fiber
1/2 cup pizza sauce
1/3 cup minced fresh oregano
1/2 cup roasted chopped vegetables
1/4 cup grated lowfat mozzarella cheese
1/4 cup grated parmesan cheese
1 tablespoon fresh basil

Steps:

  • Position oven rack 4-5 inches from heating element. Preheat broiler.
  • Brush both sides of each tortilla with oil, using 1/4 teaspoon on each side.
  • Prick the surface of the tortillas in several places with a fork.
  • Place the tortillas directly on the oven rack and broil for 1-2 minutes on each side, or until lightly browned. WATCH CLOSELY!
  • Place tortillas on baking sheet. Spread each with the pizza sauce.
  • Arrange chicken and vegetables on each. Sprinkle with oregano and cheeses.
  • Broil 1-2 minutes or until cheese melts. Sprinkle with basil.

1 tablespoon honey barbeque sauce
1 low-carb whole wheat tortilla
1 tablespoon honey barbeque sauce
4 ounces shredded cooked chicken
¼ cup diced red onion, divided
1 tablespoon chopped fresh cilantro, divided
¼ cup low-fat finely shredded mozzarella cheese, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread 1 tablespoon barbeque sauce on tortilla.
  • Mix 1 tablespoon barbeque sauce and chicken in a bowl until coated. Spread chicken mixture, half the red onion, and half the cilantro onto the tortilla. Sprinkle mozzarella cheese over chicken mixture. Top with remaining red onion and cilantro. Place pizza on a baking sheet.
  • Bake in the preheated oven until tortilla is crisp and cheese is melted, 5 to 7 minutes.

I wanted to make a light version of buffalo chicken pizza, so I used light Bleu Cheese dressing, reduced fat cheeses, and wheat tortillas. It came out much better than I imagined! The measurements are estimates, you made need more or less depending on how full and hot you like your pizza.

4 (10 inch) wheat flour tortillas
1/2 cup light blue cheese dressing
1 1/2 cups rotisserie-cooked chicken, shredded
1/2 cup shredded low-fat cheddar cheese
1/2 cup shredded lowfat mozzarella cheese
2 tablespoons Tabasco sauce (more or less to your liking)
2 -3 tablespoons butter

Steps:

  • Heat oven to 425 degrees.
  • Crisp tortillas in the oven for about 3 minutes on each side.
  • Meanwhile, melt butter and hot sauce in a medium sauce pan, then add shredded chicken. Cook until heated through.
  • Spread 2 tablespoons bleu cheese dressing on the bottom of each tortilla, and top with chicken. Then sprinkle cheeses on top.
  • Bake until cheese is melted and bubbly, about 5 minutes.
