MULTIGRAIN BREAD RECIPE
Multigrain Bread Recipe is an easy, healthy yeast bread recipe that's full of good-for-you ingredients like chia seeds and whole wheat flour!

Steps:
- Place cereal mix in bowl of stand mixer fitted with dough hook, and pour boiling water over it; let stand, stirring occasionally, until mixture cools to 100-105 degrees (F), about 1 hour.
- Meanwhile, whisk flours and salt together in separate bowl; set aside.
- Once grain mixture has reached 100-105 F, add honey, butter, and yeast and stir until combined.
- Let mixture sit for 5-10 minutes.
- Add flour mixture, 1/2 cup at a time, and knead until dough starts to come together.
- Cover bowl tightly with plastic wrap, and let dough rest for 20 minutes.
- Knead on medium-low speed until dough clears sides of bowl, 3-4 minutes. If it does not clear sides, keep adding 2 tablespoons additional all-purpose flour and knead until it does.
- Once it comes together, continue to knead dough for 5 additional minutes.
- Add seeds, and knead until seeds are evenly dispersed throughout the dough and dough forms smooth, round ball.
- Place dough in large, lightly greased bowl; cover tightly with plastic, and let rise at room temperature until nearly doubled in size, 45-60 minutes.
- Grease two 9×5 inch loaf pans.
- Transfer dough to lightly floured counter and divide in half.
- Stretch first piece of dough into 9×6 inch rectangle.
- Roll dough into a cylinder, and place dough seam-side down in prepared loaf pan.
- Repeat with second piece of dough.
- Spray loaves lightly with water or vegetable oil spray.
- Sprinkle both loaves in oats.
- Cover loaves loosely with greased plastic, and let rise at room temperature until nearly doubled in size 30-40 minutes.
- Preheat oven to 375 F.
- Bake until loaves register 200 degrees, 30-40 minutes.
- Transfer pans to wire rack, and let loaves cool in pan for 5 minutes.
- Remove loaves from pans, and let them cool to room temperature on wire cooling rack.

- In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
- Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

EASY WHOLE GRAIN BREAD
This hearty whole grain bread is easy and quick to make almost any time. - In a small microwave safe bowl, mix the flax seed, bulgar wheat, and pearl barley. Add 1 cup of water, mix well, cover, and microwave on high for 3 minutes. When finished, set aside to cool while you mix the dry ingredients.
- In a large mixing bowl, mix together flour, oats, salt, baking soda and baking powder.
- Cut in/mix in the seeds/grains until well blended.
- Add remaining 2 cups water and mix until well blended.
- Bake in center of your oven at 400 for 45 minutes.
- (Note: The dough will be very moist and sticky, so do not try to knead or work with your hands. However, it should not be so wet that it acts like a batter. Use a spatula to transfer it direcly from the mixing bowl to a greased/vegetable sprayed 4x4x8 loaf pan. My wife and I eat a low-sodium diet, so we don't add any extra salt, and use Featherlite baking powder. When making it this way, the total sodium per slice falls to 42 mg.

- Preheat your oven to 400 degrees.
- Cook the oatmeal in the 1/4 cup water and milk. Let cool.
- Cook the quinoa in the 2 cups water until all the water is absorbed. Let cool.
- Place everything except the egg and sesame seeds in your bread machine in the order as suggested by the manufacturer.
- Knead on the "dough" cycle.
- You may have to add a little more flour, if too sticky.
- Turn onto floured board and punch down and let rest for 10 minutes.
- Shape into a large circle and place on greased cookie sheet.
- Cover with plastic wrap sprayed with Pam and let rise for approximately 40 minutes or until doubled.
- Remove plastic wrap and brush top with egg white and sprinkle the sesame seeds on top.
- Bake at 400 degrees for 35 minutes.

- Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
- In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
- Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
- Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
- Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

This may take more of less time depending on the weather or temperature in your home.

- Soak the grains of your choice overnight. It can be pure wheat berries or a combo of wheat berries and any (or all) of the following grains: rye, spelt, millet, oat berries, barley, buckwheat and quinoa.
- Combine slightly warm almond milk with apple cider vinegar, maple syrup (or another liquid sweetener of your choice) and fresh yeast. Leave for 10 minutes to activate the yeast.
- Cover with cloth and let rest for about 1 hour or until doubles in size (see notes).
