HEALTHY SPINACH DIP
Better for you Healthy Spinach Dip with creamy Greek Yogurt, twice as much spinach and just a touch of mayo! Classic appetizer guaranteed to be a crowd pleaser at your next party.

Steps:
- Place spinach in a colander and defrost for at least 8 hours or overnight. Alternatively you could use a microwave.
- Using your hands, squeeze as much water out as possible and transfer to a medium bowl. Set aside.
- Preheat ceramic non-stick skillet on medium heat and swirl oil to coat. Add onion, 2 minced garlic cloves and carrot; sauté for 7 minutes or until translucent, stirring occasionally.
- Transfer to a bowl with spinach along with yogurt, mayo, salt and pepper.
- Stir well to mix and add grated garlic to taste. If have time, refrigerate for a few hours to let flavours "marry" each other.
- Serve with pretzel chips or brown rice crackers.

Steps:
- Gather the ingredients.
- Place wilted spinach in a colander and remove excess water by either pressing a wooden spoon against the spinach or placing spinach in a towel and squeezing until dry. Chop finely and place in a medium bowl.
- In a separate small bowl, add yogurt and cream cheese and stir, mixing together until smooth. Add this mixture to the spinach. Stir in the remaining ingredients and blend thoroughly.
- Refrigerate until ready to serve.
- Enjoy.

I came up with this based partly on the Knorr recipe and partly on a recipe I found on Pinterest for low fat, high protein ranch dressing using cottage cheese! I am posting to get the nutritional content : ) I also highly recommend trying Spinach dip with the new dill flavored Triscuits! YUM!

Steps:
- In food processor combine Greek yogurt and cottage cheese. Blend until smooth.
- Add water chestnuts and pulse a few times to chop them up.
- Pour into mixing bowl. Add chopped green onions and Knorr soup mix.
- Rinse and drain spinach. Wring dry. Mix with other ingredients until well combined. Enjoy!

SUPER HEALTHY SPINACH DIP
This recipe is only vegetables and goat cheese with some oil for cooking and that's it! This is majorly low in calories and incredibly healthy but also SO DELICIOUS. I have a hard time eating, and I find this very easy to eat.

Steps:
- Preheat oven to 375 degrees Fahrenheit. Add log of goat cheese to oven safe dish with measurements at least 7" x 5" x 1.5". Put the dish with goat cheese into preheated oven to soften.
- Cook down fresh spinach on medium to high heat, no water or oil necessary. The goal being to dry out the spinach more than you typically would in the pan. Add cooked spinach to the now softened goat cheese. Mix uniformly. Put back into the oven.
- Add a generous amount of olive oil to pan on medium high heat along with onions and fennel. Sauté until caramelized.
- Add caramelized onion and fennel to the goat cheese and spinach. Mix uniformly. Salt to taste, and put back into the oven for at least 30 minutes.
- I like to broil it for 5 minutes or so following for a nice browned top. Let sit for 5 minutes then enjoy with any type of healthy crackers or bread!

This recipe came from our cookbook at the beauty shop where I work. We had many pot lucks, and every one wanted this and that recipe, so we all gave recipes and had our own book printed and sold them in the salon.

- Thaw and drain the spinach.
- Squeeze the spinach with paper towels to remove excess water.
- Mix all ingredients together in a bowl.
- Let set in the fridge for a couple hours before serving.
- I like to serve it inside a hollowed out round loaf of bread.
- Scoop out the loaf and place dip inside.
- I use what I scoop out for making croutons.
- Serve with fresh vegetables.
