THe best peanut butter pie recipe! Very sweet but super yummy! When ready to serve, melt some hot fudge syrup and drizzle over the top of each slice.

1 (8 ounce) package cream cheese, softened
⅔ cup creamy peanut butter
2 cups confectioners' sugar
½ cup light cream, divided
1 cup heavy whipping cream
1 chocolate sandwich cookie crumb crust

Steps:

  • Chill a bowl in the refrigerator or freezer for at least 20 minutes.
  • Combine cream cheese, peanut butter, and confectioners' sugar together in a separate bowl. Add about half the light cream; beat on low speed with an electric mixer, gradually increasing speed to high until mixture is smooth and thick. Scrape sides of bowl with a rubber spatula. Add remaining light cream, beating on low; gradually increase to high until well blended.
  • Beat heavy cream in the chilled bowl on high speed with an electric mixer until just past soft peaks, but not stiff peaks. Lift your beater straight up: the heavy cream will hold its shape, but won't form sharp peaks. Gently fold into peanut butter mixture. The batter will be swirled with streaks of white from the cream and brown from the peanut butter.
  • Pour batter into prepared crust. Freeze uncovered for 1 hour. Cover tightly with plastic wrap and freeze until set, 6 hours.

I whipped this up after school one day when I wanted peanut butter and a healthy snack. There are many other toppings that can be used with this such as Nutella®, extra peanut butter, granola, fruit, oats, graham crackers, cookies, or cereal. The possibilities are endless!

2 tablespoons peanut butter
¼ cup plain Greek yogurt
½ teaspoon stevia brown sugar blend
⅛ teaspoon vanilla extract
1 tablespoon chocolate chips, or to taste

Steps:

  • Microwave peanut butter in a microwave-safe bowl until liquid and smooth, about 20 seconds.
  • Stir Greek yogurt into the peanut butter with a spoon until smooth, scraping off any peanut butter stuck to the spoon. Stir in stevia and vanilla extract. Fold in chocolate chips.

2/3 cup peanut butter
1 cup milk
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla
1 1/2 to 2 teaspoons gelatin
2 tablespoons water
Chocolate ganache, recipe follows
Caramel red wine sauce, recipe follows
Chopped peanuts, for garnish
1 cup heavy cream
8 ounces semisweet chocolate, chopped
2 pounds (5 1/2 cups) sugar
1/2 cup water
1/2 bottle red wine

Steps:

  • In a saucepan, warm the peanut butter and milk then whisk to combine. In a mixer with a whip attachment, whip the cream, powdered sugar, and vanilla until medium peaks. Bloom the gelatin in the water and add to the warm peanut butter. Strain into a bowl and fold in the whipped cream mixture. Pour into flexi dome molds and freeze overnight.
  • Pop the frozen peanut butter mousses out of the molds and place on a wire icing rack. Ladle the ganache over to coat. Remove from the rack with a spatula and place on parchment paper in the refrigerator until set, about 10 minutes.
  • Garnish mousse with a pinch of chopped peanuts on the top and serve with caramel red wine sauce.
  • Heat the cream and pour over the chopped chocolate. Whisk to combine.
  • In a saucepan boil sugar and water together to make a light caramel. With a wooden spoon stir in the red wine, slowly. Chill.

If you thought chocolate mousse could not get any better, then try adding peanut butter for an amazingly delicious dessert.

1 cup dark chocolate ( chips or grated)
1/2 cup natural peanut butter (unsweetened)
3 large free-range eggs (separated)
1/4 teaspoon Kosher salt
3/4 cup whipping cream
Garnish
Salt flakes
Fresh berries

Steps:

  • Gather your ingredients.
  • Start by melting the chocolate . Either place the chocolate chips or gratings into a heatproof bowl set over a pan of simmering water. Do not let the bottom of the bowl touch the water, and resist the temptation to stir the chocolate until it has melted. Once melted, you can stir with a wooden spoon, not metal. Or, melt the chocolate in a microwave for 30 seconds, stir (with a wooden spoon) repeating for 30 seconds at a time until smooth.
  • Remove the bowl from the pan or the microwave. Stir in the peanut butter and set the bowl aside to cool for 5 minutes. Lightly beat the egg yolks with a fork, then stir into the chocolate to create a glossy, thick sauce. Add the 1/4 teaspoon of salt and stir again.
  • Whisk the egg whites using a stand or electric mixer, or by hand with a whisk. Ensuring the whisks and bowls you are using are scrupulously clean, because if not, they will not whip up very well. The egg whites are ready when they are firm and glossy.
  • Put the wooden spoons aside, use a metal tablespoon and stir in 1/3 of the egg whites to loosen up the chocolate. Then, again using the metal spoon, gently fold in the remaining egg whites.
  • Gently spoon the mousse into either one large bowl, or divide into four jars, glasses, or bowls. Pop these into the refrigerator for a minimum of one hour. You can also make the mousse the day before needed. Cover tightly and chill until ready to serve.
  • When ready to serve, loosely whip the cream to soft peaks and spoon onto the mousse. Decorate with more chocolate, salt flakes, or even fresh raspberries. The mousse does not store well and cannot be frozen, so enjoy fresh.

  • Place smooth peanut butter, maple syrup and coconut cream in a medium bowl. Whisk with a wire whisk until you obtain a uniform mixture. Don't panic if the mixture appears to seize halfway through, it happened to me on two occasions but more vigorous mixing recovered it.   • Place aquafaba in a clean (that’s very important as any grease residue will prevent the aquafaba from foaming) glass or metal bowl. Add vinegar (or lemon juice). Whip it until you achieve stiff peaks – you should be able to invert the bowl and the whipped aquafaba should not budge an inch. If it does it means that it hasn’t been whipped enough.
  • Fold stiff aquafaba into the peanut mixture with a clean spatula until the two are well incorporated. Do it very gently as you don't want to knock too much air out while mixing. The mixture will deflate a fair bit, don’t worry, that’s normal. Pour the mixture between 4 small glasses and place them in the fridge for 8 hours (or overnight) for the mousse to set.
  • Once the mousse has had a chance to set, place the chopped up chocolate and almond milk in a bowl over a water bath. Set the hob on the lowest setting and allow the two to melt into each other. Do not stir until most of the chocolate has melted. Take off the heat and gently mix the two together with a wire whisk.
