100g raisin
150ml vegetable oil
200g golden caster sugar
1 large egg, beaten
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
¼ tsp bicarbonate of soda
300g oats

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.
  • Drop heaped tbsps of the cookie dough onto the baking trays, well spaced apart as they will spread when cooking. Bake for 12-15 mins until golden. Leave to cool on the trays for 10 mins before tucking in, or transfer to a cooling rack to cool completely. Will keep in an airtight container for up to 3 days.

1/2 cup brown sugar
2 egg whites
2/3 cup applesauce (unsweetened)
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal
2/3 cup raisins
1/2 cup walnuts (optional)

Steps:

  • Mix brown sugar thru vanilla together.
  • Add flour, soda, salt, cinnamon, nutmeg.
  • Stir in oatmeal, raisins& walnuts.
  • Drop on cookie sheets which have been sprayed or I use parchment paper.
  • (flatten with fork) Bake in 350 oven for about 10 minutes.
  • (I do not like a lot of sugar so by adding raisins you also add a little additional sweetness) Enjoy!

  • Add eggs: Beat in eggs one at a time until incorporated.
  • Mix in flour: Use a wooden spoon to stir the flour mixture in.
  • Stir in oats and raisins: Stir in oats and raisins - this requires a bit of effort as the dough gets firm!
  • Roll and flatten balls: Form 4cm / 1.6" balls (~18) and place onto baking trays 4"/10cm apart. I use an ice cream scoop. Then press down to slighty flatten into a thick disc shape.
  • Bake for 11 minutes. Then swap the trays between the shelves AND turn the trays around. Bake for a further 11 - 14 minutes, or until cookies are golden on the edges and LIGHT golden on the surface.
  • Cool on the trays for 5 minutes before transferring to cooling rack. Cool for 30 minutes before serving.

  • Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey or agave. 1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder

1/2 cup honey
1/2 cup oil (corn, grapeseed or olive)
1 tablespoon molasses
1 egg (beat with 1 Tbsp Water)

  • 1.In a large bowl, mix all the dry ingredients together.
  • 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
  • 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
  • 4.COOL the mix for 20 minutes in the fridge.
  • 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
  • 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.

1/2 cup (115 grams) unsalted butter ((softened))
1/2 cup (100 grams) packed light or dark brown sugar
1/4 cup (50 grams) granulated sugar
1 large egg ((room temperature))
1 teaspoon pure vanilla extract
1 cup (150 grams) raisins

Steps:

  • In a large bowl, whisk together the flour, cinnamon, baking soda, and salt. Stir in the old-fashioned rolled oats and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter, brown sugar, and granulated sugar together for 1 to 2 minutes or until well combined. Healthy Cinnamon Oatmeal Raisin Cookies are simply the chewiest cookies ever. The soft cookie base is made with sweet, hearty oats, and baked in 12 minutes.

1/4 cup unsalted butter (, room temperature)
1/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
1 cup quick-cooking oats
1/2 cup rolled oats
1/4 cup whole wheat flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon Kosher salt
1 cup raisins

Steps:

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a stand mixer, cream butter and sugar about 2-3 minutes until light and fluffy.
  • Add in the egg, vanilla, and applesauce in the stand mixer on the lowest speed setting until just combined.
  • Add quick oats, rolled oats, whole wheat flour, baking soda, cinnamon, and salt to a mixing bowl and stir until just combined.
  • Add the dry ingredient mixture in small amounts on the lowest speed setting until just combined.
  • Fold in raisins.
  • Roll 1 inch scoops of dough in your hand gently and add to baking sheet.
  • Dip cup into powdered sugar and tap away any excess.
  • Press the cookies slightly to flatten them
  • Bake for 12-14 minutes, until the edges just start to brown.
