1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg
1/2 cup fat-free milk
1/4 cup canola oil
1 cup chopped peeled tart apple
1/4 cup raisins
CRUMB TOPPING:
2 tablespoons all-purpose flour
2 tablespoons quick-cooking oats
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. Combine the egg, milk and oil; stir into dry ingredients just until moistened. Fold in the apple and raisins. , Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For topping, in a bowl, combine the flour, oats, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 375° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1/2 cup all-purpose flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
2 large egg whites
1 cup canned pumpkin
1/2 cup fat-free milk
2 tablespoons canola oil

Steps:

  • In a small bowl, combine the first six ingredients. In another bowl, whisk the egg whites, pumpkin, milk and oil until well blended. Stir into dry ingredients just until moistened. , Coat muffin cups with cooking spray; fill half full. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Steps:

1/4 c wheat bran
1/4 c raisins
1 tsp baking soda
1 tsp cinnamon
1 1/3 c buttermilk
1 Tbsp vegetable oil
3 Tbsp honey
1 tsp vanilla
extra oatmeal to sprinkle on top, if desired

Steps:

  • 1. Mix all dry ingredients together. In another bowl, mix liquid ingredients together. Combine the wet and dry ingredients and mix gently until just moistened. The batter will be lumpy.

1 cup flour
1 tablespoon baking powder
1/2 cup brown sugar
1/4 cup honey
1 teaspoon cinnamon
1/2 cup dried apricot (or raisins, or nuts, or whatever)
1 egg, beaten (or 2 egg whites)
2 tablespoons oil
1 1/4 cups skim milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
  • Separately beat the egg with 2tbs of sugar until fluffy and light.
  • Warm up milk (just until lukewarm) and dissolve honey in it.
  • Mix milk, egg, oil and vanilla.
  • Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
  • Line a muffin pan with paper baking cups.
  • Bake 18 to 20 minutes.
  • NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
  • To retain moisture, store in a plastic bag.
  • They're best served warm; reheating with the microwave works just fine.

1 cup applesauce (unsweetened)
3/4 cup maple syrup or honey
2 tbsp unsulphured molasses
1/4 cup avocado or olive oil
1 tsp pure vanilla extract
1 1/2 cups oat bran
1 1/4 cups whole wheat or spelt flour
1/4 cup flaxseed
1 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup raisins
1/3 cup Medjool dates (pitted & chopped)

Steps:

  • Preheat oven to 425 degrees F, line 12 muffin tin with unbleached parchment paper muffin liners and spray with cooking spray. Set aside.
  • In a large mixing bowl, add eggs, applesauce, maple syrup, molasses, oil and vanilla extract; whisk well to combine. Set aside.
  • In another medium mixing bowl, add oat bran, flour, flaxseed, cinnamon, baking powder, baking soda and salt. Stir with spatula to mix until no lumps, transfer to a bowl with wet ingredients and stir gently just enough to combine. Do not over mix and let batter sit for a few minutes to thicken, then stir a few more times.
  • Add raisins, dates and walnuts. Stir a few times just enough to incorporate.
  • Using an ice cream scoop, divide batter evenly between 12 openings of a muffin tin and bake for 10 minutes in preheated to 425 degrees F oven. Reduce heat to 375 degrees F (no need to wait for oven to cool off) and bake for another 10 minutes or until a toothpick inserted in the centre comes out clean.
  • Remove muffins from the oven, let muffins cool for about 5 minutes and transfer to a cooling rack to cool off a bit more.

1 ½ cups Oat Bran (regular or gluten-free)
1 cup Buttermilk
1 Egg (lightly beaten)
1/3 cup Applesauce
2/3 cups Light Brown Sugar
½ teaspoon Vanilla Extract
1 cup All Purpose Flour (regular or measure-for-measure gluten-free flour blend)
1 teaspoon Baking Powder
1 teaspoon Baking Soda
½ teaspoon Kosher Salt
Zest from ½ an Orange
1/2 cup Raisins

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray a muffin pan with non-stick cooking spray and set aside. DO NOT USE MUFFIN LINERS.
  • Combine the bran and buttermilk in a large mixing bowl. Stir to fully combine. Allow to sit for 10 minutes.
  • In a small mixing bowl, whisk together the egg, applesauce, brown sugar and vanilla extract. Just until combined.
  • Add the mixture to the bran-buttermilk. Stir just until combined. NOTE: the bran mixture may be thick. Just stir by hand until all ingredients have blended together.
  • In a separate mixing bowl sift or whisk together the flour, baking powder, baking soda, salt and orange zest. Add to the bowl with the other ingredients and stir to combine.
  • Stir in the raisins.
  • Scoop the batter into the prepared muffin pan evenly (to just below the rim). Tap the pan gently if needed for the batter to fill in the cavities.
  • Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  • Allow the muffins to cool a few minutes in the pan until comfortable to lift out and place on a cooling rack to cool completely.

2 cups unprocessed wheat bran
1 1/2 cup giant raisins
1 cup prune juice
1 cup plain nonfat yogurt
6 tablespoons unsulphured molasses
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Heat oven to 375 degrees. Lightly butter six giant-size muffin cups, or line them with paper liners.
  • Combine wheat bran, raisins, prune juice, yogurt, molasses, butter, eggs, and vanilla in a large bowl. Let stand for 10 minutes.
  • Whisk together flour, baking powder, baking soda, and salt in a small bowl. Stir dry ingredients into the bran mixture just until dry ingredients are moistened. Do not overmix.
  • Spoon 1 cup batter into each of the giant muffin cups. Bake in the center of the oven until a cake tester comes out clean, 27 to 30 minutes.

Steps:

  • Preheat oven to 350°F. Generously butter muffin cups.
  • Whisk together flours, baking soda, and salt in a large bowl, then stir in oats, cereals, and raisins. Whisk together butter, buttermilk, sugars, and eggs in another bowl, then add to cereal mixture and stir until just combined. (Batter will be very thick.)
  • Spoon 1/3 cup batter into each muffin cup and bake in middle of oven until golden and a tester comes out clean, 17 to 20 minutes. Remove muffins from pan and cool on a rack.
