Steps:
- First, preheat oven to 350ºF and line a muffin tin with muffin liners. We suggest also spraying your muffin liners with cooking spray just in case.
- Next, place dry ingredients into a medium bowl and mix.
- Then, in a large bowl crack 2 eggs and whisk. Add maple syrup, almond milk, and preferred pureed fruit* and mix again.
- Add dry ingredients into wet ingredients and then mix. Then, add in melted coconut oil and mix again.
- At this point, add any of the add-ins for one of the 6 muffin recipes in this post and mix again.
- Fill each muffin about 3/4 of the way full (these are going to be big muffins). Then, place in the oven at 350ºF and bake for 18-22 minutes or until the center is fully cooked.
- Let cool for 5 minutes and then remove from the muffin tin to continue cooling.

HEALTHY BREAKFAST MUFFINS
I cant actually take credit for this recipe but i have added some additions. It tastes fabulous, is full of really healthy stuff and is the perfect for a breakfast on the go.

- In a large mixing bowl, combine the plain flour, wholemeal flour, oats (or oats and coconut if using), brown sugar, baking powder, cinnamon and salt.
- Create a well in the centre of the dry ingredients and add the mashed bananas, egg yolks, milk and sunflower oil. Mix together gently with a wooden spoon until a wet batter forms but do not overmix.
- In a separate bowl whisk the egg whites until soft peaks form.
- Gently fold the egg whites into the muffin batter along with the blueberries and any other additions you wish to include until everything is mixed through evenly.
- Divide the muffin mixture between 12 individual muffin cases and place in a preheated oven at 200C/fan 180C/gas mark 6 for 25 minutes until well risen and golden brown ontop.
- The muffins will keep for up to 4-5 days in a sealed tin or plastic container but preferably eaten on the day or day after baking for a fresher muffin. The muffins can also be frozen in a zipped plastic bag, thaw for 1 hour or until defrosted then pop in the oven for 10 minutes to reheat.

- Preheat oven to 375 degrees F.
- Stir together wheat germ and milk in a large bowl and set aside.
- Dice apples. (You want them to be pretty small.)
- Make crumb topping. In a small bowl, mix together butter, oats, and brown sugar with a fork.
- In a medium bowl, stir together all-purpose flour, whole wheat flour, cinnamon, baking powder, baking soda, and salt with a fork.
- Whisk the egg, maple syrup, and vanilla into the wheat germ bowl. Stir in dry ingredients and mix until combined. Fold in diced apples and transfer batter to lined muffin tins. Top muffins with crumble topping. Divide mix (about 1/3 cup scoop) into muffin tins, they should full.
- Bake for about 15-20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.

HEALTHY MYSTERY MUFFINS
This recipe taken from a local community paper. Healthy can be defined in many ways. This would be on the "maybe a little bit healthy" side of healthy...does that make sense? Whenever a recipe instruction lists chocolate chips in the ingredients and then says its healthy, I hesitate. I know pecans are good for you too, but in moderation. The only thing I find truly healthy about this recipe is the fact it contains no oil. I have other recipes that use pumpkin instead of or even applesauce and actually I prefer it. Feel free to think this is healthy. There are worse!!!

- Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
- In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
- Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
- Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.
