This Healthy Mexican Casserole is healthy, delicious and will be ready in 30 minutes!

Number Of Ingredients 13

1 pound lean ground turkey
1 tablespoon extra virgin olive oil
1/4 teaspoon cumin
1/4 teaspoon chili powder (1/8 tsp if you don't like it too spicy)
1/4 teaspoon red pepper flakes
1/8 teaspoon coriander
1 15 ounce can organic black beans (rinsed thoroughly and drained)
1 15 ounce can organic pinto beans (rinsed thoroughly and drained)
4-5 plum tomatoes (chopped and seeds removed)
1 teaspoon chopped chili peppers (add more or like to your taste)
1/2 cup frozen corn
1/4 cup reduced fat mexican blend cheese
1/4 cup chopped fresh cilantro for topping (optional)

Steps:

  • Preheat oven to 350 degrees. Put ground turkey in large sauce pan with oil and cook until no longer pink.
  • Add cumin, chili powder, red pepper flakes, coriander and a little water until seasoned. Add pinto & black beans, diced tomatoes, thinly sliced chilis, corn and mix it all together in sauce pan.
  • Place in a 9 x 13 casserole dish and add 1/4 cup of reduced fat mexican cheese blend on top. Bake at 350 for 20 minutes until cheese is melted.
  • For my kids, I crumble whole grain tortillas on top.
  • I like diced cilantro sprinkled on top. This is great the next for leftovers in a wrap too. ENJOY!

1 (16 ounce) package whole wheat rotini pasta
2 tablespoons olive oil
1 pound ground turkey
2 tablespoons chili powder
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground cayenne pepper
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 (15 ounce) can yellow corn, drained
1 (10 ounce) can diced tomatoes and green chiles, undrained
1 green bell pepper, diced
1 onion, diced
1 celery stalk, diced
1 carrot, diced
1 (15 ounce) can tomato sauce
1 (8 ounce) package pepper Jack cheese, shredded

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 10 minutes; drain.
  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Add chili powder, garlic, cumin, cayenne pepper, oregano, and black pepper; mix thoroughly. Cook and stir until turkey is browned and crumbly, 5 to 7 minutes. Add corn, diced tomatoes and chiles, green bell pepper, onion, celery, and carrot; mix thoroughly.
  • Place lid on skillet. Cook until vegetables are tender, stirring occasionally, about 8 minutes. Add tomato sauce; let simmer until thickened, about 5 minutes. Transfer turkey mixture to a 9x13-inch casserole dish and add the cooked pasta. Mix everything together. Top with pepper Jack cheese.
  • Bake in the preheated oven until cheese is melted, about 10 minutes.

4 teaspoons olive oil, divided
1 cup onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon ground black pepper
1 (12 ounce) package veggie crumbles (such as Lightlife Smart Ground)
48 baked corn tortilla chips
1 (15 ounce) can pinto beans, rinsed and drained
1 tablespoon fresh lime juice
2 cups plum tomatoes, chopped seeded (or use canned, diced tomatoes)
2 tablespoons fresh cilantro, minced
1/4 teaspoon salt
1 cup monterey jack cheese, shredded
2 tablespoons nonfat sour cream
2 tablespoons green onions, chopped
1/4 cup ripe olives, sliced

Steps:

  • Preheat oven to 375.
  • Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add onion to pan; cook 4 minutes or until tender. Add garlic and jalapeno; cook 1 minute. Stir in chili powder, cumin, black pepper, and crumbles; cook 3 minutes or until thoroughly heated. Arrange half of tortilla chips in an 11 x 7-inch baking dish coated with cooking spray; top evenly with the crumbles mixture.
  • Heat remaining 2 teaspoons oil in skillet over medium heat. Add beans, mashing with the back of a wooden spoon until chunky and thick; cook 2 minutes or until heated, stirring constantly. Stir in lime juice.
  • Combine tomato, cilantro, and salt. Layer beans and tomato mixture over crumbles mixture in dish. Top with remaining tortilla chips, pressing to slightly crush. Sprinkle evenly with cheese. Bake at 375 degrees for 13 minutes or until cheese is bubbly. Cut casserole into 6 equal pieces; top each serving with 1 teaspoon sour cream, 1 teaspoon onions, and 2 teaspoons olives.

This is my own creation. I was determined to come up with a healthier version of a taco inspired, cheesy pasta casserole. I started with whole wheat pasta, ground turkey, lots of chopped veggies, and I subbed lower fat cheese. This is very good, if I do say so myself!

2 teaspoons olive oil
1 lb lean ground turkey (93/7)
1 medium onion, chopped
1 medium zucchini, sliced and coarsley chopped
1 medium yellow squash, sliced and coarsley chopped
1 lb mushroom, sliced
1 (15 1/2 ounce) can black beans, drained
1 (15 1/2 ounce) can chili beans, undrained
1 (1 1/4 ounce) packet taco seasoning mix
1 (13 1/4 ounce) box whole wheat ziti
1 cup low-fat monterey jack cheese, shredded

Steps:

  • In a large, non-stick skillet over medium-high heat, cook the ground turkey in the olive oil until cooked through, about 5 minutes. Make sure you break up the meat with the back of a wooden spoon to make the meat universal in size.
  • Add the onion, zuchinni, yellow squash and cook, stirring occasionaly, until vegetables become soft and translucent, about 5 to 10 minutes.
  • Add the black beans and chilli beans, the taco seasoning. and mushrooms. Lower the heat to medium, and cook about 10 more minutes, until mushrooms are soft. If the mixture seems to thick, you might want to add a little water.
  • Meanwhile, cook a large pot of salted water till water comes to a boil. Add the pasta, and cook until al dente, about 7-10 minutes.
  • Drain the pasta and place in a large bowl. Add the sauce, and stir to combine. Sprinkle with the cheese and stir in till cheese is melted .
  • Enjoy!.

We love Mexican food so I made this recipe taste fantastic using more healthy options I discovered. It is just as good as all the others!

1 pkg low carb tortillas ( usually 6-8 in pack)
1 can(s) tomatoes and chiles (10 ounce)
1 jar(s) salsa, chunky 16 ounces
1 lb very lean ground beef( 10% or less)
1 medium sweet onion chopped
1 medium sweet red pepper chopped
1 tsp cumin
1 tsp chili powder
1 pkg 8 ounce low fat mexican cheese ( i like cheddar / jack blend best)

Steps:

  • 1. In a baking dish or pan place a little salsa then about three of the tortillas
  • 2. Mix remaining salsa with tomatoes with green chiles adding cumin and chili powder Mix well.
  • 3. Fry hamburger with veggies until Light brown
  • 4. Place ground beef mixture layer on tortillas Put half of cheese on top
  • 5. Place remaining three or four tortillas on this
  • 6. Cover with remaining sauce Then cheese on top
  • 7. Preheat oven to 375 degrees Cover with NONSTICK type foil As directed
  • 8. Bake about 35-40 minutes until hot and bubbly! It is wonderful You can add low fat sour cream on top if desired.
