HEALTHIER WORLD'S BEST LASAGNA

Healthier World's Best Lasagna image

This truly is the World's Best Lasagna! I love this recipe but I am always looking for ways to take out the fat when I cook. I substituted lean ground turkey and turkey sausage for the meat. I also used lite mozzarella and cut out the egg and salt.

Provided by MakeItHealthy

Categories     Meat and Poultry Recipes     Turkey     Ground Turkey Recipes

Time 3h15m

Yield 12

Number Of Ingredients 17

1 pound turkey sausage
¾ pound lean ground turkey
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
¼ teaspoon ground black pepper
2 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
¾ pound low fat mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • Heat a Dutch oven or large skillet over medium heat; cook and stir turkey sausage, ground turkey, onion, and garlic until well browned, about 15 minutes. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with basil, fennel seeds, Italian seasoning, pepper, and 2 tablespoons parsley. Simmer, uncovered, for about 1 1/2 hours, stirring occasionally.
  • Preheat oven to 375 degrees F (190 degrees C).

  • Spread 1 1/2 cups turkey sauce in bottom of 9x13 baking dish. Arrange 6 noodles lengthwise over sauce. Spread half the ricotta over noodles. Top with a third of the mozzarella cheese slices. Spoon 1 1/2 cups turkey sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers and top with remaining mozzarella and Parmesan cheese. Cover with aluminum foil; make sure foil does not touch cheese to prevent sticking.
  • Bake in preheated oven until sauce is hot and cheese is melted, about 25 minutes more. Remove foil and bake until cheese is golden brown, about 25 minutes. Cool 15 minutes before serving.

THE BEST HEALTHY TURKEY LASAGNA YOU'LL EVER EAT

The Best Healthy Turkey Lasagna You'll Ever Eat image

The BEST turkey lasagna ever. This healthy turkey lasagna recipe is made with a homemade tomato basil sauce packed with fresh herbs & Italian spices, lean ground turkey, mozzarella, creamy ricotta and a touch of parmesan. Perfect for serving crowds, family-style dinners, or freezing for later!

Provided by Monique Volz of AmbitiousKitchen.com

Categories     Dinner     Gluten Free     Italian     Pasta

Time 1h30m

Number Of Ingredients 33

For the sauce:
1 teaspoon olive oil
1 pound 94% lean ground turkey (or use ground turkey sausage for even more flavor!)
1 white onion, finely diced
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 (15 ounce) can tomato sauce
1 tablespoon pure maple syrup
1/2 cup water
1/4 cup julienned fresh basil
2 teaspoons italian seasoning
2 teaspoons dried oregano
1 teaspoon fennel seeds
1/2 teaspoon red pepper flakes
1/4 teaspoon nutmeg
1 teaspoon salt, plus more to taste
Freshly ground black pepper
For the lasagna noodles:
10 whole wheat or gluten free lasagna noodles
For the ricotta mixture:
1 (15 ounce) container part skim ricotta
1 egg
1/4 cup torn or diced fresh basil
1/2 teaspoon salt
Freshly ground black pepper
For the layers:
1/4 cup packed fresh basil, diced
16 ounce fresh whole milk mozzarella, cut into thin slices
1/2 cup grated parmesan cheese
To garnish:
1/4 cup grated parmesan
Fresh basil

Steps:

  • Add oil to a large pot or dutch oven and place over medium high heat. Once oil is hot, add in garlic and cook for 30 seconds, then add in the ground turkey and onion and cook until turkey is no longer pink. Stir in crushed tomatoes, tomato paste, tomato sauce, water and pure maple syrup. Next add in fresh herbs & spices: basil, italian seasoning, oregano, fennel, red pepper flakes, nutmeg and salt and pepper, to taste. Cover and simmer on low while you cook the lasagna noodles.
  • Bring a large pot of water to a boil. Cook the lasagna noodles for 6-8 minutes or until al dente, then drain and rinse with cold water. Another option is to soak the lasagna noodles in very warm (hot) water for 20-30 minutes if you do not want to boil them. (You can also use no cook lasagna noodles, but they aren't my favorite!)
  • While the lasagna noodles are boiling, make the ricotta mixture: In a medium bowl, mix together the ricotta, egg, basil and salt and pepper.
  • Preheat oven to 400 degrees F. Grease a 9x13 inch baking pan with nonstick cooking spray.
  • To assemble the lasagna, spread 1 1/2 cups of the turkey meat sauce over the bottom of the baking dish. Place 5 of the cooked lasagna noodles on top, 4 vertical and 1 horizontal. Spread with half of the ricotta cheese mixture, 2 tablespoons diced basil, then top with 1/3 of the mozzarella slices. Next, add 1 1/2 cups of the meat sauce on top of the mozzarella and sprinkle with 1/4 cup of parmesan cheese. Repeat layers once more: remaining noodles, ricotta, basil, 1/3 of the mozzarella slices, any remaining meat sauce and 1/4 cup parmesan. Top with remaining mozzarella.
  • Cover with foil and bake covered for 25 minutes. Remove foil and bake another 20 minutes. If you'd like bubbly, golden brown cheese, broil the top for 2 minutes or until mozzarella is golden brown. Garnish with 1/4 cup parmesan and extra basil. Cool for 15-20 minutes before serving. Serves 12.

HEALTHY LASAGNA

Clock full of winter veggies and cheese -- a healthier version to a family favorite! This can also be made a day ahead -- just put in the fridge and add 10-15 minutes to baking time when ready to cook! If you freeze the unbaked lasagna (can keep in the freezer for up to one month) - add 1 1/4 hours to baking time if cooked while still frozen -- an emergency meal life safer! HEALTHY LASAGNE

Healthy lasagne image

Enjoy our lighter version of the family classic - lasagne. It has bags of flavour, but comes in at under 500 calories a portion, as well as packing in four of your five-a-day

Provided by Sara Buenfeld

Time 1h30m

Number Of Ingredients 15

1 tbsp olive oil
1 large onion (250g), finely chopped
320g carrots, finely chopped
2 celery sticks (140g), finely chopped
2 bay leaves
500g 5% beef mince
3 large garlic cloves, finely grated
400g can chopped tomatoes
2 tbsp tomato purée
1½ tsp vegetable bouillon powder
400ml semi-skimmed milk
30g wholemeal flour
generous pinch of nutmeg
6 sheets wholemeal lasagne (125g)
25g finely grated parmesan

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan over a medium heat and fry the onion, carrots, celery and one of the bay leaves for 8-10 mins until the veg softens and is starting to turn golden. Add the mince and garlic, and stir-fry until the beef browns, about 5 mins. Tip in the tomatoes and a canful of water, the tomato purée and bouillon, bring to the boil, then cover and simmer for 20 mins, removing the lid after 10 mins to reduce the mixture slightly.
  • Meanwhile, pour the milk into a medium pan with the flour and whisk over a low heat until the mixture is lump-free. Add the second bay leaf and a good pinch of nutmeg, and continue to cook, whisking, for 8-10 mins until thick.
  • Remove the bay from the mince and white sauce, and discard. Spoon a third of the mince into the base of a 19 x 24cm baking dish and top with two lasagne sheets. Spoon over half of the remaining mince, then top with two more lasagne sheets, the rest of the mince and the remaining lasagne sheets. Spoon over the white sauce and sprinkle with the cheese. Bake for 40 mins until bubbling and golden.
