1 Tbsp olive oil
1 lb lean ground beef
1/2 medium onion (diced)
1 lb mushrooms (sliced)
2 garlic cloves (minced )
2 Tbsp all-purpose flour
1 cup beef broth
1 cup whipping cream
1/3 cup sour cream
1 Tbsp Worcestershire sauce
1/2 tsp salt (adjust to taste)
1/2 tsp ground black pepper (adjust to taste)

Steps:

  • Preheat a heavy, deep pan over medium-high heat with olive oil. Add ground beef and stir to break down beef into tiny pieces. Add onions and pressed garlic. Saute until the onion is translucent and golden brown.
  • Add sliced mushrooms and saute for another 5 minutes.
  • Add flour and stir until fully incorporated. Be sure to mix in any lumps that form.
  • Add 1 cup beef broth, 1 cup whipping cream, 1 Tbsp Worcestershire sauce, 1/2 tsp salt, and 1/2 tsp black pepper and bring it to a simmer. Turn the heat to low and simmer for about 5 minutes.
  • Remove from the heat and add in sour cream. Stir to combine everything together and season to taste if needed. Serve over noodles, rice or potatoes.

4 cups low sodium beef broth
1 ½ teaspoons salt

Steps:

  • Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
  • In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
  • Drain any excess fat and return the pan to the stove.
  • Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
  • Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
  • Add the beef broth and bring the mixture to a boil.
  • Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
  • Stir often, until the noodles are tender, about 8 to 10 minutes.
  • Return the mushrooms to the pan and stir to combine.
  • Add the sour cream and stir. Top with chopped parsley.

  • Remove any fat and gristle from the roast and cut into strips 1/2-inch thick by 2-inches long. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and green onions and cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Remove to a bowl and add 1 tablespoon butter to the skillet. Cook and stir one half the beef strips until browned, about 5 minutes, then remove to a bowl. 12 ounces egg noodles (whole wheat if you can find them)
2 teaspoons olive oil (plus 2 tbsp. for noodles if desired)
1 pound ground turkey or beef
2 teaspoons reduced-sodium soy sauce
1 teaspoon worcestershire sauce
1/2 teaspoon dried oregano
8 ounces mushrooms (sliced)
2 tablespoons flour
1/2 cup chicken broth (plus up to 1/2 more if needed)
1/2 cup milk
1/2 cup greek yogurt or sour cream
freshly ground black pepper and kosher salt (to taste)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook noodles according to package directions, drain and set aside. If noodles are done more than a few minutes before your stroganoff is ready, you can toss them with 2 tsp. olive oil to prevent them from sticking together.
  • Meanwhile, heat olive oil in a 12" skillet over medium-high heat. Add ground meat, and brown and crumble. About halfway through cooking the meat, stir in soy sauce, worcestershire sauce, and oregano, and mushrooms. Continue cooking until meat is cooked through.
  • Sprinkle flour over the meat mixture, and stir until meat and mushroom are well coated. Slowly stir in chicken broth and then milk, stirring constantly, until smooth. Reduce heat to medium, and bring to a simmer. Stir in yogurt, and return to a simmer. If sauce is thicker than you would like, stir in up to ½ c. more chicken broth to your desired consistency. Cook 2-3 minutes longer before serving.
  • Taste stroganoff, and add salt and pepper to taste. Serve over cooked egg noodles.

8.5 oz. (240 g) wide egg noodles
4 tablespoons olive oil
1 lb. (450 g) beef (thinly sliced, sirloin or tenderloin)
salt and pepper
1 onion (finely diced)
3 cloves garlic (minced)
½ lb. (225 g) cremini mushrooms (sliced)
½ cup (120 ml) dry white wine
1 ½ cups (360 ml) beef broth (I used my homemade vegetable stock)
1 tablespoon all purpose flour
1 tablespoon Worcestershire sauce
2 teaspoons Dijion mustard
¼ cup (70 g) plain 2% fat Greek yogurt
fresh parsley (finely chopped)

Steps:

  • In a large pot filled with salted water, cook the egg noodles according to the package instructions.
  • As your pasta water is coming to a boil, sautee the beef with 2 tablespoons of oil in a large skillet over medium-high heat. Season with salt and pepper.
  • Let the meat cook for 3 minutes per side. When both sides are browned, remove the beef from the pan, and transfer to a plate. Set aside. (If the meat doesn't fit in 1 layer, you may need to work in batches).
  • With the remaining oil, sautee the onion for about 3 minutes. Add the garlic and mushrooms, and stir to combine. Continue sauteing for another 5 minutes, or until the mushrooms are cooked and the onions are soft.
  • Add the white wine to deglaze the pan, scraping up the browned bits. You can also use a small amount of beef broth if you don't want to use alcohol.
  • In a medium bowl, whisk together the beef broth, Worcestershire sauce, Dijion mustard and flour until smooth.
  • Once the wine has cooked off pour the mixture into the pan, stir and let it simmer for about 5 minutes, stirring occasionally.
  • Add the Greek yogurt and stir until combined. Return the beef back into the skillet, stir to combine and season with additional salt and pepper if needed.
  • Serve this healthier beef stroganoff over the egg noodles and garnish with chopped parsley.
  • Enjoy!
