Healthy Extra Moist Chocolate Cake image

Flourless, butter free and naturally fruity sweetened... this is what this incredibly tasty and extra moist chocolate cake is all about.

7.5 oz (200g) unsweetened baking chocolate or at 70% cocoa
1 Tablespoon unsweetened cocoa powder
1/2 teaspoon baking soda
1 1/4 cup (200g) pitted dates, or about 10 dates
3 large eggs
1/4 cup (60ml) coconut oil
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a food processor, pulse chocolate, cocoa powder and baking soda until texture of coarse sand.
  • Pulse pitted dates, then eggs, coconut oil and vanilla.
  • Transfer the batter into a 8×8 inch (20 x 20 cm) baking dish.
  • Bake for about 25 minutes or until a toothpick comes out clean.
  • Allow to cool before serving.

4 large eggs, separated
10 tablespoons butter, cubed
1/2 cup sugar, divided
6 ounces semisweet chocolate, chopped
3 ounces unsweetened chocolate, chopped
2 teaspoons vanilla extract
Chocolate Ganache, optional
1/4 cup finely ground pecans, toasted
Sliced strawberries and fresh mint, optional

Steps:

  • Let egg whites stand at room temperature for 30 minutes. In a heavy saucepan, melt butter, 1/4 cup sugar and chocolates over low heat, stirring constantly. Cool until mixture is lukewarm. , In a large bowl, beat egg yolks until thick and lemon-colored, about 3 minutes. Beat in vanilla. Gradually beat in pecans and chocolate mixture. , In a small bowl and with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high speed until stiff peaks form. Stir a small amount of whites into chocolate mixture. Fold in remaining whites., Pour into a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Cool on a wire rack for 20 minutes. , Carefully run a knife around edge of pan to loosen; remove sides of pan and cool completely. Frost with Chocolate Ganache if desired. Garnish with strawberries and mint if desired.

This delicious cake proves you can never have too much of a good thing, combining heavenly dark chocolate with just-the-right-amount-of Canadian craft beer.

1/2 cup grass-fed butter or 1/2 cup coconut oil
4 ounces 70% dark chocolate
3 large eggs
1/4 cup cocoa powder
3/4 cup honey
1/4 cup granville island brewing's lion's winter ale
1 teaspoon vanilla
1 pinch salt

Steps:

  • Preheat the oven to 375°F (190°C). Grease an 8-inch spring-form pan generously with coconut oil or butter.
  • Melt the dark chocolate and butter together, stirring until completely smooth. You can use a double-boiler for this, or you can melt the chocolate into an oven-safe bowl in the oven for about 4 to 5 minutes.
  • In another small pan bring the beer and vanilla to a soft boil. Reduce to low and slowly add in the beer mixture, then the chocolate and butter mix until well incorporated. Combine with cocoa powder, honey, and eggs. Whisk well until a smooth batter forms. Pour batter into the greased pan, smoothing the top with a spatula.
  • Bake for 20 to 25 minutes, until the centre looks firm. Allow to cool in the pan for 15 minutes, then remove from the sides - you'll appreciate the spring-form pan in this step. Allow to cool completely before serving.
