4 large hard-boiled egg whites, cut into chunks
¼ cup low-fat mayonnaise
¼ cup chopped fresh chives
1 teaspoon Dijon mustard
½ teaspoon celery salt
½ teaspoon paprika
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Mix eggs, egg whites, mayonnaise, chives, mustard, celery salt, paprika, kosher salt, and black pepper together in a bowl.

¼ cup fat-free mayonnaise
1 celery stalk, chopped
1 carrot, shredded
2 tablespoons minced red onion
2 tablespoons Dijon mustard
1 tablespoon white wine vinegar
½ teaspoon salt
½ teaspoon hot pepper sauce

Steps:

  • Mash hard-boiled eggs using a fork in a large bowl; add mayonnaise, celery, carrot, red onion, Dijon mustard, vinegar, salt, and hot pepper sauce. Mix well. Refrigerate until chilled, at least 30 minutes.

Easy, Healthy Egg Salad image

Easy, healthy egg salad. Lower in calories and fat than your typical egg salad but full of flavor!

6 Eggs
2 T. Fat Free Greek Yogurt
1 tsp. Extra Virgin Olive Oil
½ T. White Vinegar
¼ tsp. Salt
¼ tsp. Smoked Paprika
Pepper to taste

Steps:

  • Place eggs in a pot and cover with water. Add a splash of vinegar and salt.
  • Bring water to boil. Once boiling, turn off the heat and cover your pot. Let the eggs sit in the hot water for 10 minutes.
  • Drain the pot and rinse eggs with cold water. You can either make the egg salad immediately, or refrigerate your hardboiled eggs for later use.
  • Peel eggs. Remove the yolk from 4 of the eggs. Roughly dice the 2 eggs and 4 egg whites.
  • Add the remaining ingredients to your eggs.
  • Enjoy as is or add to a sandwich or salad!

Because it doesn't use mayo, this is a lighter and healthier version of the standard egg salad sandwich, and the mustard and scallion give it a little kick.

2 hard-boiled eggs
2 chopped scallions (white and green parts)
2 tablespoons Dijon mustard
2 pieces lettuce (I prefer romaine)
4 slices whole grain bread, toasted
salt and pepper

Steps:

  • With the back of a fork, mash egg yolk with mustard to make a thick paste.
  • Stir in chopped scallions and chopped egg white. Mix in salt and pepper as desired.
  • Divide mixture on top of 2 slices of bread.
  • Top with lettuce leaves, and cover with remaining slices of bread. Makes 2 sandwiches.

4 hard cooked eggs (plus 2 hard cooked egg whites (save the extra yolks for another use or discard))
3/4 cup diced celery (about 3 medium stalks)
1/4 cup plain non-fat Greek yogurt
1 teaspoon dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh dill
Whole grain bread (toasted (for 4 open faced sandwiches))
Arugula (tomato, additional chopped fresh dill)

Steps:

  • Peel the eggs and cut into a rough dice. (For detailed instructions on how to hard boil eggs, see Step 2 of my Avocado Egg Salad recipe.) Place in a large mixing bowl, then add the celery, Greek yogurt, mustard, salt, pepper, and dill. Stir to combine.
  • Serve egg salad on toasted bread with tomatoes and arugula, or enjoy atop greens for a healthy salad.
