- In a large bowl, beat the cream cheese, butter and confectioners' sugar until smooth. In a large bowl, whisk milk and pudding mixes for 2 minutes; let stand for 2 minutes or until soft-set. Gradually stir into cream cheese mixture. Fold in whipped topping. , Spread 1-1/3 cups crushed cookies into an ungreased 13x9-in. dish. Layer with half the pudding mixture and half the remaining cookies. Repeat layers. Refrigerate for at least 1 hour before serving. Serve with shaved white chocolate if desired.

DIABETIC DIRT CAKE
I had this recipe from a long time ago. I have recently converted this to diabetic so that my husband can have a sweet treat. Most diabetic Dirt Cake recipes don't include the cream cheese, which is what makes the recipe for me! Hope everyone enjoys this as much as we do!

- 1. 1. Mix vanilla pudding and milk. Set aside. 2. Cream together cream cheese, cool whip, butter and vanilla. 3. Mix cream cheese mixture with pudding. 4. Chop Oreos in a food processor or blender. (I like to chop my fine. It really looks like dirt. But you can make yours as chuncky as you like.) 5. Spread a thin layer of cookie in bottom of large bowl or pan. Spread a thick layer of pudding. Then another thin layer of cookie. Keep layering until you have used everything. And your top layer is cookie. The Bowl that I use makes 3 cookie layers and 2 pudding layers. 6. Put in fridge and let chill for a couple of hours. 7. Enjoy!!!!
A LITTLE LESS EVIL DIRT CAKE
I substitute lower-calorie items. You may opt to use splenda instead of powdered sugar, but I won't vouch for it. I despise the texture and aftertaste of splenda.

Steps:
- Grind the Oreos in a food processor or put them in a ziploc bag and use a rolling pin to mash them up into a dirty powder.
- Cream softened butter and neufchatel cheese with confectioner's sugar.
- In a separate bowl, combine the pudding mixes and milk, slowly fold in thawed Cool Whip.
- Combine the creamed cheese and pudding bowls.
- Line the bottom of a clean, unused flowerpot with foil.
- Pour in 1/3 of the pudding mixture.
- Pour in 1/3 of the ground Oreos.
- Repeat and finish with layer of Oreos.
- Refrigerate for 2 hours or overnight. Garnish with a bunch of plastic flowers (clean the plastic stem first).
- Enjoy! It's still not a diet food, but it's a little less fatty/sugary.
DIRT CAKE I
This is a great conversation piece at parties. Adults love it as much as the children do. Get a new garden trowel, medium sized flower pot and artificial flower at a craft store for full effect.

- Chop cookies very fine in food processor. The white cream will disappear.
- Mix butter, cream cheese, and sugar in bowl.
- In a large bowl mix milk, pudding and whipped topping together.
- Combine pudding mixture and cream mixture together.

- Combine the pudding mix and milk in a large bowl and whisk constantly until thickened, about 5 minutes. Refrigerate until firm, about 10 minutes.
- Meanwhile, add the cookies to a food processor and process until fine crumbs form. Remove 4 cups and set aside. Drizzle the butter into the remaining crumbs and pulse until mixture starts to hold together when pinched between your fingers. Pour into a 2 1/2-quart glass bowl and pack with the bottom of a measuring cup to form an even layer. Refrigerate until ready to use.
- Beat the cream cheese and confectioners' sugar in a large bowl with an electric mixer on medium speed until no lumps remain, about 2 minutes. Beat the cream in a medium bowl with an electric mixer until stiff peaks form, about 2 minutes. Fold the whipped cream into the cream-cheese mixture until well combined, then fold this mixture into the pudding until well combined.
- Pour half of the pudding mixture over the cookie crust and smooth with an offset spatula. Sprinkle with half of the reserved cookie crumbs, then top with the remaining pudding mixture and smooth with an offset spatula. Sprinkle with the remaining cookie crumbs, decorate with the gummy worms and refrigerate until well chilled, at least 3 hours and up to overnight. Serve cold.

- First make sure your coconut milk has been chilling in the fridge overnight or at least 8 hours. This will allow it to harden enough to whip into whipped cream.
- Prepare pudding by adding cornstarch and sugar to a small saucepan and whisking in almond or soy milk to avoid clumps. Cook over medium heat until it thickened and bubbling, stirring frequently. Then reduce heat to low and cook for 4-6 more minutes, using a rubber spatula to scrap the sides and bottom almost constantly. Once it appears "jiggly" and a visible ribbon forms when you drizzle some over the top with your spatula, remove from heat and let cool 10 minutes. Then transfer to a glass or ceramic bowl and cover with plastic wrap. Refrigerate until set - 2-3 hours. At the same time, place a glass bowl in the freezer for your coconut whipped cream.
- When your pudding is almost set, whip your coconut whipped cream. Remove can from fridge, being careful not to shake or turn it and remove top. Gently scoop out the top hardened "cream" into the chilled bowl, leaving the liquid watery part behind. You can use this for smoothies or in baking, if you wish. Otherwise discard it.
- Use a handheld mixer to whip the coconut cream until it begins to look like whipped cream - about minute. Then add smaller measurement of powdered sugar (3 Tbsp as original recipe is written). Beat again until light and airy - about 2-3 minutes. Set in fridge.
GLUTEN FREE NO BAKE DIRT CAKE
