This is a homemade favorite, with a special interchangeable fifth ingredient, sure to suit adults and children alike!

Steps:
- Crack eggs into a large bowl and whisk briskly until incorporated.
- Open Hatch Green Chili sauce and heat on low in a small sauce pan.
- In a large non stick skillet begin to brown sausage, chopping with spatula into crumbles as you would for chili.
- When about half cooked, add 2 heaping cups Simply Potatoes Diced Potatoes with Onions, seasoning potatoes to taste. Continue cooking until sausage is browned through and potatoes are soft and picking up some color.
- Remove from skillet with slotted spoon into a large bowl and cover; pour off any drippings from skillet.
- Give eggs a final whisk in bowl and pour into the skillet, season as normal, and scramble eggs.
- When eggs are scrambled soft, return sausage and potatoes to the skillet and finish cooking, incorporating eggs, sausage and potatoes together.
- Remove from heat and serve, spooning two to three large spoonfuls onto a warm tortilla. Top with your favorite Green Chili sauce (Hatch green chili enchilada sauce is tasty and available everywhere), or, if preferred for the youngsters, sprinkle medium cheddar cheese shreds on top like a taco.
- This is a hands on breakfast, so pick them up like a taco and enjoy, no silverware necessary. In a hurry? Wrap in foil and take breakfast with you!

- Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.
- Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

- Whisk the chipotle paste with the egg and some seasoning in a jug. Heat the oil in a large frying pan, add the kale and tomatoes.

- Meanwhile, in a small bowl, combine chipotle with mayo.
- Scramble the eggs: heat a non-stick pan over medium-low heat. Whisk eggs in a bowl. - In a large skillet over medium heat, cook turkey bacon according to package instructions. Remove and set to the side.
- Using the same skillet, add diced sweet potatoes and season with salt and pepper. Cook until soft. Remove from pan and set aside.
- Add diced red bell peppers and cook until softened. Remove from pan and set aside.
- Cook spinach, then set aside.
- Reduce heat to medium-low and pour in beaten eggs. Remove from pan once cooked.
- To assemble the burritos, place down parchment paper, then put the tortilla on top. Add scrambled eggs, sweet potatoes, spinach, bell pepper, turkey bacon, and cheese.
- Fold the left and right side of the burrito in, then fold the bottom up and roll tightly.
- Roll burrito into parchment paper.
- Serve now or place into a bag or reusable container.
- Transfer to the freezer. Freeze for up to 1 month.
- To reheat, remove burrito from parchment paper and wrap in a damp paper towel.
- Microwave for 3 minutes or until warm.
- Rest for one minute.
- Enjoy!

- Spray your pan with cooking spray. Cook your bacon until lightly browned. Put it aside until cool. Put in your potatoes and cook until brown. Microwave your tortilla for 30 seconds. Put your potatoes on the tortilla. Spray the pan and pour in the Egg Beaters. Crumble the Stripples in the pan on top of the eggs and cook together. Add the finished mixture on the potatoes and make your burrito. Personally, I like to add a little garlic to the potatoes.
