These burgers are so delicious, it's hard to believe they're lower calorie! Extra-lean ground beef is seasoned, then cooked and topped with melted cheddar cheese. Topped with sliced red onion, fresh avocado, lettuce, and a delicious dijon-mayo herb spread, this burger is piled high on an English muffin. Each bite of these healthy beef California style burgers is packed with flavor and fresh ingredients. This is a healthy recipe that is also family and kid-approved.

- In a mixing bowl, combine the lean ground beef, onion powder, garlic powder, and Worcestershire sauce.
- Form 4 equal-sized patties.
- Cook the patties on a grill pan or griddle over medium high heat, a couple of minutes per side or until cooked to your liking (do not overcook, as this makes the beef dry).
- Turn the heat off the pan, and add 1 oz of cheese to each patty and cover the pan with foil or the pot lid for the cheese to melt.
- Combine the herb mayo sauce ingredients together to form the spread.
- Toast the English muffins. Spread a heaping tablespoon of the herb mayo spread on each English muffin.
- Top each English muffin with the cooked burger and cheese, a slice of red onion, mixed greens, and 1/2 ounce of avocado (or more to taste).

HEALTHY BEEF BURGERS

- As we said earlier, our first step is to remove the excess fat content from the minced beef. To do this, let's soak the beef in boiled water. 1. Place the minced beef in a large bowl. 2. Boil enough water to cover the beef. 3. When it starts boiling, turn off the heat and slowly pour the water into the bowl placed with beef. Using a spoon, gently give it a stir. At this point, you'll see a change in the color of the beef. Allow it to rest for about 2 minutes. This step will not only help to remove the fat content but also remove the blood and dirt from the beef. 4. Stir once again and transfer this to a steel colander. 5. Wash the minced beef under tape water twice. 6. Allow it to rest in the colander for about 10 minutes to strain excess water. 7. After 10 minutes, transfer the minced beef to a large bowl. 8. Add all the ingredients except oil and mix with a spatula until combined. 9. Now give a good mix with your hand until the mixture is good enough for shaping. 10. When its done, divide into equal portions. (We made 12 burgers with this.) 11. Shape each of them into burgers with your palm. Be light or you'll break it. 12. When you're done, place them in a separate plate and allow it sit in the fridge for about 1 hour. 13. Heat oil in a large frying pan on medium heat. If you put them on high heat, the insides won't get cooked well. 14. Place the burgers into the pan and fry them until both sides are browned. Another trick to keep the burgers moistened is to cover the pan with a lid while frying and you won't end up with dried burgers. Healthy homemade burgers are ready to be served. You can serve it with some sauce/ketchup or as a side along with plain white rice. They taste best when they are still hot.

I found a recipe for meatballs for babies that used iron fortified rice cereal instead of bread crumbs and it was very good, so I thought...why not burgers? Then I was inspired to make it even healthier and my picky kids loved the results. Me, I still prefer my old recipe, but hey my kids like it and that is what counts. I am guessing at the amounts, I usually just eyeball it.

- Heat up the oil in a frying pan and add the diced onions.
- Reduce down the heat and let the onions sweat slowly, adding in the garlic to ensure it doesn't burn and become bitter.
- Add the beef to a mixing bowl and break up with your fingers.
- Tip in the onions and garlic, once cooled slightly and mix together thoroughly.
- Add salt and pepper and the dijon mustard.
- Pour in the egg and ensure that it has been mixed right the way through the beef and onions.
- Seperate the mixture into 4 portions and start moulding using your hands into burgers. Create a depression in the centre, this will ensure the burgers cook evenly and flat. Place in the fridge to chilled and stiffen.
- Once chilled and with the barbeque lit and the coals simmered down, place the burgers on the BBQ.
- Ensure that each side has sealed, if not they'll fall apart when you lift them off. Turn them over until cooked through or to the desired pinkness in the centre.
- Serve on crusty ciabatta with fresh watercress or leafy salad and enjoy. These can be frozen and defrosted for use later on.

- 1)Finely chop and quickly saute the red onion (3-4 mins on med heat). Set aside.
- 2)In a bowl, place the hamburger patty ingredients (all but the beef): sauteed red onions, finely chopped rosemary and garlic, bread crumbs, egg, worchester sauce, olive oil, salt and pepper. Mix well.
- 3)Add the ground beef to the bowl.
- 4)Blend thoroughly, gently and quickly - with a wooden spoon or with your hands.
- 5)TIP: avoid over-mixing which can make your hamburgers tough.
- 6)Form into three (3) 4" patties.
- 1)Prepare the toppings: thinly slice the white onions; slice the tomato and the cheddar cheese; wash and dry the romaine lettuce.
- 1)In a skillet on medium heat, warm the olive oil, and then place the patty. Cook each side for 2-3 minutes. Melt the cheese on top once you flip the burger.
- 2)Once your patty is cooked, set aside. Quickly saute the sliced white onions in the pan with the fond and flavorings from the beef patty.
- 3)If desired, toast your bread or roll.
- 1)Layer your burger: roll "bottom", condiment(s) of your choice, lettuce, cooked hamburger patty, tomato, sauteed onions and roll "top."
- 2)SERVE with a raw pickle or a side salad! (And a napkin!) Enjoy.

- Make the burger patties by adding the ground beef, ranch seasoning, dehydrated minced onion and Worcestershire to a large bowl. Without overworking the meat, mix with your hands until evenly combined. Divide into four (4-ounce) portions and shape into 1/4 to 1/2-inch patties.
- Press your thumb into the middle part of the burger to create a divot. This will prevent the burger from puffing up when it cooks. I like to cover and refrigerate the patties for about 1 hour, if I have time. (This will help the burgers keep their shape on the grill.)
