Steps:
- Preheat your waffle iron according to manufacturer's instructions.
- In a medium mixing bowl, add the banana and use a fork to mash very well.
- Add the oil and eggs, and beat to combine well.
- Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
- Add the milk and stir until just combined.
- Make the waffles according to the directions that came with your waffle iron.
- When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).
- Serve hot with your favorite toppings such a maple syrup, buttermilk syrup, sliced bananas, pecans, whipped cream, or even chocolate sauce, Nutella, or peanut butter on top.

BANANA WAFFLES
The most delicious waffles! Usually served as a snack or dessert. Also try them with Korean red bean paste instead of the banana, it's even better! I remember eating these while visiting Korea, and recreated the taste at home.

HEALTHY BANANA WAFFLES
These banana waffles are crispy on the outside, fluffy on the inside, and packed with bright fruit flavor. They're great for meal prepping and quick grab-and-go breakfasts! My family loves them warm with a small pat of butter and generous drizzle of pure maple syrup, but I also enjoy them plain with fresh fruit on top. Leftover waffles will keep for at least one week if stored in an airtight container in the refrigerator, and they freeze well, too!

Steps:
- Preheat the oven to 350°F, and generously coat 2 waffle pans with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Add in the mashed banana, stirring until no large lumps remain. Stir in the vinegar and milk. Alternate between adding the flour mixture and water, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 4 equal parts.)
- Divide the batter between the prepared waffle pans, and spread the batter out with a spatula. (It doesn't spread much on its own!) Bake at 350°F for 13-16 minutes or until the centers feel firm to the touch and a toothpick inserted into the center comes out clean or with a few crumbs attached. Cool in the pan for 10 minutes before transferring to a wire rack.
- FOR WAFFLES WITH CRISPY OUTSIDES: Let the waffles cool completely to room temperature. Toast individual waffles in a toaster oven until deep golden brown on the outside. (If waffles are frozen, don't thaw them! Just put them in the toaster oven straight from the freezer. They'll just take a little longer to cook.)

- 2. In the mean time, add all ingredients into a blender and blend until smooth (it took about 2 minutes in my blender).
- 3. Pour about 1/3 cup batter into each waffle plate and cook according to manufactures instructions until deep golden brown. (I cooked for 5 minutes in my waffle iron - cooking it shorter than that will yield a more beautiful golden color but does not crisp up)
- 4. Remove waffles onto a plate and repeat with remaining batter. (The batter tends to thicken as it sits, so your last batch of waffles might be not so light as the first batch. You could stir in a tablespoon water for the last batch, if the batter looks too thick).

- In a large bowl, combine the flour, baking powder, salt and cinnamon. In another bowl, mash the bananas with a fork until no large lumps remain. Whisk in the eggs and melted coconut oil (be sure your coconut oil isn’t too hot or it will cook your eggs). Add the maple syrup, if using, and vanilla extract, then slowly whisk in the room temperature buttermilk.
- Make a well in the middle of the dry ingredients, then pour in the wet ingredients. Use a large wooden spoon to stir together until just combined – do not over mix! Depending on the size of your waffle maker, use 1/3 – 2/3 cup batter per waffle and cook for 6-7 minutes, or until crispy. Keep the completed waffles in the oven at 195 F while cooking the rest. Serve warm!

- Heat waffle iron on high heat, about one notch down from the highest setting. Preheat oven to 250 degrees Fahrenheit.
- In a medium bowl, whisk together the flour, sugar, baking powder, sea salt and nutmeg. Stir in the chopped walnuts.
- In a microwave-safe bowl, combine the melted coconut oil and milk. Microwave for 30 seconds, or until the mixture is lukewarm. Whisk in mashed banana, egg, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined. Be careful not to over mix. Tiny lumps may remain. Pour batter onto the heated waffle iron, enough to cover the center and most of the central surface area. Once the iron has stopped steaming and the waffle is deeply golden, transfer it to a cooling rack or baking sheet. Don’t stack your waffles on top of each other, or they’ll lose crispness. Place in oven to keep warm. Repeat.

- In a large mixing bowl, combine the oat flour, sugar, starch, baking powder, salt and cinnamon. Whisk to combine.
- In a medium mixing bowl, whisk the eggs. Then add the milk, coconut oil or butter, mashed banana and vanilla extract. Whisk until the mixture is thoroughly blended.
- Pour the liquid mixture into the dry mixture. Stir with a big spoon until combined (the batter will still have a few lumps). Let the batter rest for 10 minutes so the oat flour has time to soak up some of the moisture. Plug in your waffle iron to preheat now (if your iron has a heat setting, set it to medium-dark).
- Once 10 minutes is up, give the batter one more, gentle swirl with your spoon. The batter will be pretty thick, but don’t worry! Using a measuring cup, pour batter onto the heated waffle iron, enough to cover the center and most of the central surface area, and close the lid.
