BEST BANANA WAFFLES

BEST Banana Waffles image

Banana Waffles have the dreamiest crunch to softness ratio, and deliver the best flavor of subtle-yet-sweet banana fruitiness in this hearty breakfast dish that the whole family will salivate over and love.

Provided by Melissa Griffiths

Categories     Breakfast

Time 20m

Number Of Ingredients 9

1 medium banana
2 tablespoons light oil, such as canola or vegetable
2 eggs
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 1/3 cup milk

Steps:

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a medium mixing bowl, add the banana and use a fork to mash very well.
  • Add the oil and eggs, and beat to combine well.
  • Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
  • Add the milk and stir until just combined.
  • Make the waffles according to the directions that came with your waffle iron.
  • When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).
  • Serve hot with your favorite toppings such a maple syrup, buttermilk syrup, sliced bananas, pecans, whipped cream, or even chocolate sauce, Nutella, or peanut butter on top.

Provided by Amy Whiteford

Categories     Breakfast

Time 20m

Number Of Ingredients 11

2 Ripe Bananas
1 Egg
1½ tablespoons Oil
1 teaspoon Vanilla Extract
1 cup (250ml) Milk
¼ cup (25g) Rolled Oats
½ cup (70g) All-Purpose / Plain Flour
½ cup (70g) Wholemeal Plain Flour
1 tsp Baking Powder
1 tsp Ground Cardamon
½ Cup (80g) Blueberries

Steps:

  • Mix the flours, oats, cardamom and baking powder together.
  • Mash the bananas in a large mixing bowl. Add the egg and stir until combined. Add the oil and whisk again. Add the milk and vanilla and stir until mixed well.
  • Add the dry ingredients to the wet ingredients and gently stir until just combined. The batter should be cake-like in texture. It will be thick, not runny, but pourable.
  • Add the blueberries and stir once more.
  • Preheat waffle iron. Once iron is ready, spray with cooking spray (not all waffle machines require this)
  • Add approx 1 cup of batter to the waffle iron (adjust based on size of waffle iron) and cook according to manufacturer instructions. (Mine took 4-5 mins)
  • Remove and place on a cooling rack. Repeat until batter has finished.

HEALTHY BANANA WAFFLES

Healthy Banana Waffles image

These banana waffles are crispy on the outside, fluffy on the inside, and packed with bright fruit flavor. They're great for meal prepping and quick grab-and-go breakfasts! My family loves them warm with a small pat of butter and generous drizzle of pure maple syrup, but I also enjoy them plain with fresh fruit on top. Leftover waffles will keep for at least one week if stored in an airtight container in the refrigerator, and they freeze well, too!

Yield 12 waffles

Number Of Ingredients 11

2 ¼ cups (270g) Bob's Red Mill Organic Whole Wheat Pastry Flour or gluten-free* flour (measured like this)
2 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp coconut oil or unsalted butter, melted
2 large egg whites, room temperature
1 tbsp (15mL) vanilla extract
¾ (195g) mashed banana (about 2 extra large-see Notes!)
¼ cup (60mL) white vinegar
½ cup (120mL) unsweetened cashew milk
6 tbsp (90mL) water

Steps:

  • Preheat the oven to 350°F, and generously coat 2 waffle pans with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Add in the mashed banana, stirring until no large lumps remain. Stir in the vinegar and milk. Alternate between adding the flour mixture and water, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 4 equal parts.)
  • Divide the batter between the prepared waffle pans, and spread the batter out with a spatula. (It doesn't spread much on its own!) Bake at 350°F for 13-16 minutes or until the centers feel firm to the touch and a toothpick inserted into the center comes out clean or with a few crumbs attached. Cool in the pan for 10 minutes before transferring to a wire rack.
  • FOR WAFFLES WITH CRISPY OUTSIDES: Let the waffles cool completely to room temperature. Toast individual waffles in a toaster oven until deep golden brown on the outside. (If waffles are frozen, don't thaw them! Just put them in the toaster oven straight from the freezer. They'll just take a little longer to cook.)

  • 2. In the mean time, add all ingredients into a blender and blend until smooth (it took about 2 minutes in my blender).
  • 3. Pour about 1/3 cup batter into each waffle plate and cook according to manufactures instructions until deep golden brown. (I cooked for 5 minutes in my waffle iron - cooking it shorter than that will yield a more beautiful golden color but does not crisp up)
  • 4. Remove waffles onto a plate and repeat with remaining batter. (The batter tends to thicken as it sits, so your last batch of waffles might be not so light as the first batch. You could stir in a tablespoon water for the last batch, if the batter looks too thick).

  • In a large bowl, combine the flour, baking powder, salt and cinnamon. In another bowl, mash the bananas with a fork until no large lumps remain. Whisk in the eggs and melted coconut oil (be sure your coconut oil isn’t too hot or it will cook your eggs). Add the maple syrup, if using, and vanilla extract, then slowly whisk in the room temperature buttermilk.
  • Make a well in the middle of the dry ingredients, then pour in the wet ingredients. Use a large wooden spoon to stir together until just combined – do not over mix! Depending on the size of your waffle maker, use 1/3 – 2/3 cup batter per waffle and cook for 6-7 minutes, or until crispy. Keep the completed waffles in the oven at 195 F while cooking the rest. Serve warm!
