Categories     Dessert

Time 20m

Number Of Ingredients 9

1/3 cup / 80g banana (mashed, very ripe (1 small banana))
1/2 cup / 50g almond flour
1/2 cup / 50g almond butter (unsalted)
1/4 cup / 50g butter (softened!)
1 egg (large)
1/4 cup / 50g golden erythritol
1 tsp cinnamon
1 tsp baking powder
1/4 cup / 20g crushed walnuts (optional)

Steps:

  • Preheat the oven to 180 C / 350F and line a cookie sheet with parchment paper.
  • Mash the banana with a fork. Then blend all ingredients (except for the walnuts) in a bowl with an electric mixer until smooth.
  • Using a tablespoon, dollop the cookie batter onto the cookie sheet (1 tbsp per cookie).
  • Space the cookies out because the batter spreads. Top with the crushed walnuts if using.
  • Bake for 10-12 minutes or until very lightly browned on the sides. Remove from the oven and let cool COMPLETELY before handling.

HEALTHY OATMEAL BANANA COOKIES

Healthy Oatmeal Banana Cookies image

Try these totally guilt-free, healthy cookies with only 5 ingredients... bananas, oatmeal, chocolate chips, and vanilla. This is a softer cookie, so it would make a great breakfast with an ice cold glass of milk!

Provided by Simply Fresh Cooking

Categories     Drop Cookies

Time 25m

Yield 24 Cookies, 6 serving(s)

Number Of Ingredients 6

3 bananas, ripe
1/3 cup canola oil
2 cups quick-cooking oats
1/2 cup chocolate chips
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

My family really enjoyed these cookies. They are so sweet and have a great banana flavor. When I made these cookies I added 1/2 more banana to use it up. I also added a scoop of protein powder to the cookie mix. I got this recipe from Ossg Recipes.

Time 1h5m

Yield 40

Number Of Ingredients 15

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup mashed ripe banana
½ cup sour cream
1 teaspoon vanilla extract
1 cup margarine
1 cup white sugar
2 large eggs
1 teaspoon baking soda
1 cup chopped walnuts
½ cup unsalted butter
1 cup brown sugar
¼ cup milk, or more as needed
2 ½ cups powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
  • Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
  • While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
  • Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
  • Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
  • Spread frosting on cooled cookies.
