3 cups rolled oats or old fashioned oats
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking soda
2 large eggs
1/4 cup honey
1 cup bananas (mashed)
2 teaspoons vanilla extract
1 cup milk
1/4 cup coconut oil, melted
1 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Grease a muffin pan with non stick cooking spray. In a large bowl combine the oats, sugar, cinnamon, salt and baking soda.
  • In a medium bowl combine eggs, honey, mashed bananas, vanilla, milk and coconut oil.
  • Add the wet ingredients into the dry ingredients. Stir until combined, do not overmix.
  • Fold in the chocolate chips.
  • Scoop batter evenly into prepared muffin tin. Bake for 30 minutes or until set and the tops are slightly brown.
  • Allow the muffins to cool in the pan for 10 minutes then remove to cool completely.

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  • In another bowl whisk together the eggs, oil, milk, and mashed bananas.
  • Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
  • Divide the batter between the muffin cups, they will be quite full.
  • Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

1 tablespoon flaxseed meal (OR 1 large egg (if you do not need the muffins to be vegan))
3 large overripe bananas (about 11 ounces (1 1/2 cups mashed))
1/3 cup unsweetened applesauce
2 tablespoons canola oil (or melted cooled coconut oil*)
1/3 cup coconut sugar or light brown sugar
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups white whole wheat flour
1/2 cup dark chocolate chips (mini or regular (I used mini; dairy free if you'd like the muffins to be vegan))

Steps:

  • In a small bowl, stir the flaxseed meal together with 2 1/2 tablespoons water. Set aside for 5 minutes to thicken. (This creates a flax egg. If you are using a regular egg, you can skip this step and add the egg with the applesauce in Step 3.)
  • Place the rack in the center of your oven and preheat the oven to 350 degrees F. Lightly coat a standard 12-cup muffin tin with nonstick spray.
  • Mash the bananas in the bottom of a large bowl until mostly smooth. Double-check to ensure you have the 1 1/2 cups called for in the recipe.
  • Whisk in the flax egg (or regular egg if not using flax), then the applesauce and oil. Whisk in the coconut sugar, maple syrup, and vanilla.
  • Sprinkle the baking soda, cinnamon, and salt over the top, then stir gently until combined. Gently stir in the flour until barely combined, then fold in the chocolate chips, reserving a few for sprinkling on top if desired.
  • Divide the mixture evenly among the muffin cups and sprinkle on any reserved chocolate chips.
  • Bake for 22 to 26 minutes, until a toothpick inserted in the center of a muffin comes out clean and the tops spring back lightly when touched.

Steps:

  • Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
  • Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.

3/4 cup whole wheat flour
2 teaspoons baking powder

3 medium ripe bananas, mashed
1 egg
2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, combine the dry ingredients. In another large bowl, beat butter and brown sugar until crumbly. Beat in the bananas, egg, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Coat muffin cups with cooking spray or line with paper liners; fill three-fourths full. ¾ cups old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 large eggs
½ cup sugar
½ cup brown sugar
½ cup canola oil, (or another flavorless oil, or even coconut oil)
2 teaspoons vanilla extract
1 cup mashed bananas, (about 2 large or 3 medium)
1 cup chocolate chips, ((milk, dark, a mix of both, whatever you like!))

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
  • In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
  • Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
