1 (13 1/2 ounce) can pineapple chunks
1/4 cup vinegar
1/4 cup sugar
2 teaspoons soy sauce
1/2 cup water
2 1/2 tablespoons cornstarch
2 teaspoons peanut oil or 2 teaspoons vegetable oil
1 medium onion, chopped into large pieces (about 3/4 inch)
2 medium green peppers, chopped into large pieces (about 3/4 inch)
1 (7 ounce) can solid white tuna, drained and broken into large chunks
1 medium tomatoes, sliced into wedges (optional)
1 1/2 cups hot cooked rice (or amount preferred for personal taste)

Steps:

  • Drain the canned pineapple chunks, reserving the juice.
  • In a bowl, combine the juice from the pineapple, vinegar, sugar, soy sauce, water and cornstarch. Whisk together very well until smooth, then set aside.
  • In a wok or large frying pan, heat oil on medium high heat until very hot. Add onion and pepper and stir-fry for about 30 seconds. Add pineapple chunks and stir-fry for about another 30 seconds. Add tuna and stir-fry gently for about another 15 seconds.
  • Stir reserved liquid mixture again, then pour over tuna pineapple mixture. Stir gently to combine, bring to a boil, and cook just until thickened.
  • If desired, stir in tomato wedges until heated through.
  • Serve on hot cooked rice.

This is a combination of two fabulous marinades. My kids absolutely love it and ask for me to make it all the time! And, just by using a gluten-free soy sauce, the entire recipe is gluten free! Serve with wasabi paste and rice.

¼ cup tamari (gluten-free soy sauce)
¼ cup sesame oil
2 tablespoons mirin (Japanese sweet wine)
2 tablespoons honey
2 tablespoons rice wine vinegar
2 tablespoons grated fresh ginger
2 green onions, thinly sliced, divided
2 cloves garlic, minced, or more to taste
4 (6 ounce) tuna steaks
2 tablespoons sesame seeds, or to taste
1 tablespoon olive oil

Steps:

  • Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
  • Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
  • Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

2 tablespoons ground black pepper
2 teaspoons salt
2 teaspoons ground cumin
2 teaspoons garlic powder
2 teaspoons ground cinnamon
1 pound ahi tuna steaks
2 tablespoons olive oil
4 tablespoons fat-free sour cream
4 (10 inch) flour tortillas, warmed
½ whole fresh pineapple - peeled, cored, and diced
½ medium red onion, diced
2 tablespoons chopped fresh cilantro, or to taste
2 tablespoons lime juice
1 tablespoon crushed red pepper
2 teaspoons grated lime zest

Steps:

  • Mix black pepper, salt, cumin, garlic powder, and cinnamon together in a small bowl. Rub all over tuna steaks. Cover and refrigerate for at least 15 minutes.
  • Meanwhile, stir pineapple, red onion, cilantro, lime juice, red pepper, and lime zest for salsa together in a bowl until combined. Cover and refrigerate until needed.
  • Heat oil in a cast iron skillet over medium heat. Add tuna steaks and cook to desired doneness, 1 1/2 to 2 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium doneness. Remove from the skillet and slice steaks thinly.
  • Spread sour cream in a thin layer over each warmed tortilla. Add tuna slices, top with pineapple salsa, and wrap to seal.

4 tuna steaks
peanut oil or vegetable oil, for searing
salt
1/4 cup orange juice
1 tablespoon olive oil
2 teaspoons fresh thyme leaves
1 clove garlic, minced
1 teaspoon orange zest

1 cup chopped fresh pineapple
1 cup chopped yellow bell pepper
1/3 cup rice vinegar

Steps:

  • Prepare marinade by combining marinade ingredients in shallow dish.

  • Gradually add olive oil.

  • Add small amount of peanut oil to skillet so tuna does not stick.
  • Remove tuna from marinade, season with salt to taste.
  • Add tuna to skillet and cook until brown on each side, about 3 mins per side.
  • Spoon sauce on plate.
  • Place tuna on top of sauce.
  • Serve.

At the Mauna Lani Bay Hotel on Hawaii's Kohala coast, CanoeHouse chef Pat Saito uses ono steaks (a type of mackerel) for this dish. Ahi tuna, which is easier to find, makes a good substitute. Saito serves the fish with wasabi-laced mashed potatoes.

5 1/2 tablespoons sesame oil
4 cups green cabbage (about 8 ounces)
3 ounces fresh shiitake mushrooms, stemmed, caps sliced
1 baby bok choy, very thinly sliced (about 3 ounces)
1 large carrot, cut into matchstick-size strips (about 3 ounces)
4 green onions, thinly sliced
6 tablespoons oyster sauce
3 1/2 tablespoons reduced sodium soy sauce
3/4 cup chicken stock or 3/4 cup canned low sodium chicken broth
1/4 cup butter, 1/2 stick
3 tablespoons rice vinegar
36 ounces ahi tuna steaks, each about 3/4 inch thick
sesame seeds, black and white (optional)

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat.
  • Add cabbage, mushrooms, bok choy, carrot and green onions and stir-fry until vegetables are crisp-tender, about 3 minutes.
  • Add 3 tablespoons oyster sauce and 3 tablespoons soy sauce; stir 1 minute to blend flavors.
  • Season to taste with salt and pepper.
  • Transfer vegetable mixture to medium bowl.
  • To same skillet (do not clean) add the broth, 1/2 tablespoon oil, remaining 3 tablespoons oyster sauce, remaining 1/2 tablespoon soy sauce, butter and vinegar.
  • Boil until sauce thickens, whisking occasionally, about 3 minutes.
  • Season with salt and pepper.
  • Keep warm.
  • Sprinkle tuna with salt and pepper.
  • Heat remaining 3 tablespoons oil in another large skillet over high heat.
  • Add 3 tuna steaks and cook to desired doneness, about 2 minutes per side for medium-rare.
  • Transfer to small baking sheet.
  • Repeat with remaining tuna.
  • Divide vegetables among 6 plates.
  • Top with tuna.
  • Ladle sauce around tuna.
  • Sprinkle with sesame seeds, if desired.
