HEALTHY APPLE & PEAR CRISP image

An old favorite made healthy without losing any flavor. I could eat this all day long! I have left the skin on the apples and pears here but feel free to peel yours. Enjoy this classic!

3 medium apples, cored and chopped (peel if you prefer)
3 medium pears, cored and chopped (peel if you prefer)
3 tablespoons fresh lemon juice
1 tablespoon sugar (coconut or organic pure cane)
1 heaping teaspoon cinnamon
1 3/4 cup old fashioned oats
1/4 cup almond meal or flaxseed meal, optional
1 cup finely chopped walnuts, optional
1/2 cup pure maple syrup
3 - 4 tablespoons coconut oil (at room temp)
1 teaspoon vanilla extract
1/4 teaspoon mineral salt
cinnamon, to garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Wash apples well. Slice, core and dice apples and pears.
  • In a large bowl (or right in your baking dish), combine apples, pears, lemon juice, sugar and cinnamon. Mix well and layer into a 9 x 9 baking dish.
  • In a medium size bowl, combine oats, almond meal, walnuts, maple syrup, coconut oil, vanilla and salt, mix well. Spread oat mixture evenly over the apples and sprinkle with a little cinnamon.
  • Bake for 35 - 40 minutes, or until apples and pears are fork tender. Let cool 5 - 10 minutes before serving.
  • Serves 6 generously

This healthy apple pear crisp is the best fall dessert that everyone will love. It's filled with cinnamon, oats, pecans, and fresh fall fruit.

3 small apples, sliced very thin (I used Mac apples)
2 Bosc pears, sliced very thin
1 tsp vanilla extract
2 tbsp maple syrup
1/2 tsp cinnamon
1 1/2 cups old fashioned rolled oats
1/3 cup almond flour
1/3 cup chopped pecans
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp Kosher salt
1/4 cup maple syrup
1 tbsp coconut oil, melted
Your favorite vegan vanilla ice cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Spray an 8″x8″ ceramic baking dish with cooking oil.
  • In a large bowl, combine sliced fruit, vanilla extract, maple syrup, and cinnamon. Mix to combine, and add to prepared baking dish.
  • Mix together oats, almond flour, pecans, cinnamon, ginger, and salt in a medium mixing bowl.
  • Add maple syrup and coconut oil, and stir to combine to form the crisp topping.
  • Spread crisp topping in an even layer over the fruit.
  • Bake for 45-50 minutes, until fruit is soft and fork tender, and bubbling up around the edges.
  • Let cool slightly before serving.
  • Serve warm with vanilla ice cream.

  • Peel, core and slice the apples and pears, place them into a large mixing bowl, sprinkle them with the lemon juice and toss. This will prevent the apples from browning.
  • Add the brown sugar, cinnamon, melted butter, and a pinch of salt to the apples and pears and lightly toss them to coat them all. Pour the mixture into the baking dish.
  • Add all of the crumble ingredients except the butter to a mixing bowl and toss. Add in the butter, pinching it with your fingers to break it down into small pieces and mix it in with the rest of the crumble ingredients.

  • In a medium bowl, combine the apples, pears, cinnamon, ginger, vanilla extract, vanilla powder or paste, coconut sugar and tapioca flour. Stir to combine and coat all of the fruit evenly. Pour all of the fruit filling into an 8×8” (or similarly sized) pan and set aside while preparing the crisp topping.
  • In a separate bowl, combine the almond flour, coconut flour, and coconut sugar. Add the coconut oil and using a pastry cutter, two forks, or your hands, work the coconut oil into the flour until it comes together into a course meal with no dry flour remaining. Toss in the almonds and walnuts.
  • Cover the fruit evenly with the crumble topping and bake for 35-40 minutes, or until golden brown and bubbling. If topping is browning too quickly, tent the pan with aluminum foil halfway through to prevent burning.
