APPLE BREAD
Steps:
- Preheat your oven to 350 degrees F and lightly coat an 8x4-inch loaf pan with baking spray. Set aside.
- Spread the walnuts in a single layer on an ungreased baking sheet. Place in the oven and bake until toasted and fragrant, about 8 to 12 minutes, stirring once throughout. DO NOT WALK AWAY during the last few minutes and set a timer. Nuts love to burn the very moment you stop watching. Transfer to a cutting board. Once cool enough to handle, roughly chop and set aside.
- In a large mixing bowl, combine the white whole wheat flour, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together the applesauce, canola oil, milk, sugar, egg, and vanilla until smooth.
- Make a well in the center of the dry ingredients, then add the wet ingredient all at once. Mix in by hand just until combined. The batter will look very thick and stiff.
- Fold in the apples and walnuts. It will be hard to do because the batter is so thick. Use a rubber spatula and smush and push it around gently but firmly as needed. Distribute the apples and walnuts as evenly as you can.
- Pour the batter into the prepared loaf pan. With the back of a rubber spatula, press and smooth the top so it is mostly flat. For the cinnamon sugar topping, stir the cinnamon and coarse sugar together in a small bowl. Sprinkle evenly over the top of the batter.
- Bake for 25 minutes, loosely tent with foil, then bake for 20 additional minutes, until a toothpick inserted in the center comes out clean without any wet batter clinging to it.* Place on a wire rack and let cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely. Enjoy warm or at room temperature.

HEALTHY APPLE BANANA LOAF

- Preheat oven to 180°C (350°F) and line a 20cm x 10 cm (8 x 4 inch) loaf tin with baking paper.
- In a small bowl mash your bananas, add your chopped apple to the bowl and set aside for now.
- In another large bowl add the almond meal.
- Add the butter, vanilla, mashed bananas and apple to the large bowl with the almond meal and stir until combined (taste test here).
- Finally add the eggs and mix once again until combined.
- Transfer the mixture into prepared tin and place into the oven for 30 minutes or until golden brown.
- Take out of the oven and allow to cool completely before you turn out and slice.
- Serve warm with extra butter and a sprinkle of roasted nuts!
HEALTHY APPLE OATMEAL COOKIES
These healthy soft apple oatmeal cookies are so easy to make! They are vegan, gluten free and they don't contain any sugar.

- Preheat the oven to 350°F(177C°). Line baking sheet with parchment paper or silicone baking mat. Set aside.
- Slice the banana and place in a medium bowl. Mash with a fork. Set aside the bowl.
- Peel the apple and grate. When you grate the apple, there will be some excess juice left. Leaving that excess juice (don't squeeze the apple, I mean the excess juice that stay on where you zest the apple) place the grated apple over the mashed banana and add the cinnamon, mix with a spoon/fork.
- Add the peanut butter and mix again. Finally mix in the oats.
- Make 1 and ½ tablespoon big balls. The mixture will be sticky so you should either use a cookie scoop or a spoon. Place them on the baking sheet and flatten with your fingers.
- Bake for almost 14 minutes or until the cookies become firm on top and they don't stick to the parchment paper. When you remove the cookies from the oven, they will be soft to handle but they will be firm as they cool on the baking sheet for 10 minutes.

- In a bowl, put butter, sugar and 1 egg. Beat to obtain a creamy mixture. Add the second egg and beat well. Add vanilla and cinnamon if using. Stir and add apples.
- In another bowl, mix flour, baking powder, baking soda, salt and walnuts. Pour in the dough. Stir only to wet. Put in a greased loaf pan of 9 x 5 x 3 inch.
- Cook in a preheated oven of 350 F for 50 to 60 minutes or until toothpick inserted comes out clean. Let rest 10 minutes then remove from the pan. Put on a grill to cool down and wrap it.

HEALTHY APPLE ENERGY LOAF
I've adapted this from a Rosemary Stanton recipe putting my own little twist on things. This loaf is a bit healthier than many regular loaf and cake recipes. It's free of lactose, butter and eggs and is a great snack when you're on the move or looking for a healthier alternative to satisfy those indulgent cravings!

- In a small saucepan heat the dates, honey, bicarbonate soda, apple juice and the reserved apple juice. Bring to the boil whilst stirring then allow to simmer for 2-3 minutes. Remove from heat and allow to cool slightly.
- In a large mixing bowl mix togther the apple, walnuts, flour and baking powder. Make a little well in the centre and pour in the contents of the saucepan. Mix well until all combined.
- Pour the mixture into a lined 14 x 21 loaf tin and bake in a moderate oven for 40 minutes, or until the centre is cooked. Allow to cool before cutting into slices.

APPLESAUCE CAKE
Steps:
- PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise, your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
- WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature-- See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
- DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
- BAKE: Transfer batter to the prepared 8x8-inch pan. Bake for 28-33 mins at 350 degrees F oven or until a fork when inserted comes out clean. Be careful not to over-bake, as it will make this cake less tender and less flavorful. Allow cake to cool completely before frosting.
- FROST: Place softened cream cheese in a large bowl (give it ample time to set out so your frosting isn't chunky). Using a hand mixer, beat the cream cheese with the vanilla until smooth. Add in the salt and slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to your desired consistency. If it is too thick, add in a little bit of milk. If you'd like a tangier or soft frosting, only add 1 and 1/4 cups powdered sugar. For a sweeter, thicker frosting, add closer to 1 and 3/4 cups.
- DECORATE: Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with the chopped pecans.
- STORAGE: Store cake at room temperature, covered with plastic wrap. Applesauce Cake is best when used within 1-2 days. Freeze (un-frosted) pieces for up to 3 months; thaw at room temperature and then frost. Frosted cake doesn't freeze and thaw well.
