THE BEST HEALTHY OATMEAL COOKIES
Soft and chewy healthy oatmeal cookies are made with oats, honey, coconut oil, chopped nuts, raisins, chocolate chips, and much more! They're super nutritious and make a great snack or even breakfast.

- Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
- In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.
- Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop and flatten to about ¾'' thickness. Bake 10 minutes then allow in the pan for at least 5-10 minutes and enjoy!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla and nutmeg.
- In a separate bowl, combine the oats, flour, baking powder, baking soda, salt, hazelnuts, sunflower seeds, flax seeds and wheat germ; gradually stir into the creamed mixture.
- Drop by rounded spoonfuls, a couple of inches apart, onto cookie sheet(s).
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a medium sauce pan combine the almond milk, oatmeal, cinnamon and maple syrup, heat on low until most of the milk is absorbed (stir as needed).
- Once most of the milk is absorbed add in the apple sauce and stir together. If you like your apples soft add them in now too, if you like some crunch wait until you are about to serve to stir in.
- Once all the apple sauce and milk is absorbed, about 15-20 minutes total, remove from heat and serve.

Steps:
- Mix the oatmeal, milk, and 4 cups of water in a large, deep saucepan and bring to a boil over medium high heat. When it boils, quickly lower heat to very low. Stir in brown sugar, dried cranberries, flaxseed meal, sunflower seeds and salt. Cook at a low simmer for 15-20 minutes, or until very thick and creamy.
- Stir often to prevent burning.
- Serve with additional milk and sprinkle with a tablespoon of the Grape nuts cereal if desired, or cool and refrigerate to reheat later in the week.
