Healthier Mediterranean Tuna Salad image

A very refreshing and light snack or meal! This dish makes a great Mediterranean alternative to your stereotypical tuna salad made with mayonnaise. Serve with whole grain crackers.

2 (5 ounce) cans chunk light tuna in water, drained
¼ cup finely chopped red onion
¼ cup chopped fresh parsley
3 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
½ teaspoon lemon zest
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Combine tuna, onion, and parsley in a medium bowl.
  • Whisk oil, lemon juice, lemon zest, salt, and pepper to make the dressing. Toss with the tuna mixture.

I live on this salad! Tuna is really good protein, and preparing this salad with my fat-free dressing makes it a yummy and nutritious meal.

1 (6 ounce) can chunk lite tuna in water
1/4 cup fat free sour cream
2 tablespoons pickle relish
2 hard-boiled eggs
1 cup macaroni (optional)

Steps:

  • Drain water from tuna can.
  • Mix tuna, sour cream, and pickle relish in a small bowl.
  • Remove shells from the eggs.
  • Mix egg yolks into the salad.
  • Cut egg whites into small pieces.
  • Add egg whites into salad.
  • You can omit the yolk, to eliminate the fat.
  • To serve as a salad, add macaroni.
  • This also makes a good sandwich filling, prepared without noodles.
