sweet, chewy dessert, chocolate lovers, cereal lovers, Peanut butter lovers. I got this recipe from a co-worker of mine and have since changed it in many ways, but this is the original version.

Steps:
- melt together corn syrup and sugar.
- turn off heat and add P-nut butter.
- stir in cereal.
- dump in lightly greased 9x13 in.
- pan, pressing lightly with buttered fingers or wax paper.
- melt together chocolate chips, buttterscotch chips,and butter in microwave until completely melted.
- Spread over bars and allow to cool.
HEALTHIER SPECIAL-K BARS

Steps:
- Grease 9×13 pan with butter/oil or line with parchment paper; set aside.
- Drain dates and place in bowl of food processor with S-blade; process dates until broken down into paste, add 1 tablespoon milk at a time until creamy paste forms. You may need 3-4 tablespoons here.
- Transfer date paste to large pot on stovetop. On medium heat combine date paste with peanut butter, stirring continuously. Add coconut oil and stir until melted/combined - add another 1 tablespoon of milk here if mixture is sticky.
- Add cereal to date & peanut butter mixture until cereal is broken down and fully combined. Transfer to prepared pan, pressing firmly down and evenly into all four corners.
- Sprinkle on butterscotch chips and dark chocolate chips. Here you can cover the pan with foil to help lock in heat and melt chips. OR you can place the covered pan back on the warm (turned off) stovetop, turning the pan every 2 minutes and removing after 4-5 minutes (to prevent from burning). Wait for the chips to melt before smoothing top with spatula.
- Allow pan to rest at room temperature for an hour or so until topping sets. You can also place pan in fridge for 30 minutes to speed up the process.
- Cut into bars and enjoy!

WORLD'S BEST SPECIAL K BARS
These bars are everything wonderful. The bottom layer of the Special K Bars is peanut buttery and chewy with a little bit of crunch. The top layer is smooth, sweet and chocolatey deliciousness. The combination is truly heaven.

- Step 1 Butter a 9 X 13 dish very well. Step 2 Combine the white syrup and sugar in a large saucepan or heavy stock pot. Bring this to a boil over medium or medium-low heat, stirring constantly. As soon as the mixture has reached a full boil (large bubbles all over the surface) remove it from the heat. Step 3 Add the peanut butter and stir until everything is nice and smooth and combined. Step 4 Add the Special K cereal and stir well so that all of the cereal is coated. Step 5 Pour the mixture into the buttered dish. Press down on the mixture a bit to get a nice even and compact layer. Set aside. Step 6 Combine the chocolate chips and butterscotch chips in a glass bowl. Microwave on 50% for about 3 minutes or until everything is melted and smooth. Stir every 30 seconds or so. Step 7 Pour the chocolate mixture over the peanut butter/cereal layer and smooth out as best you can. Step 8 Refrigerate for about an hour until everything is nice and firm. Cut into bars and serve.
NO BAKE PEANUT BUTTER SPECIAL K BARS

- Melt together corn syrup and sugar until sugar is dissolved (don't let it boil).
- Remove from heat and stir in peanut butter until smooth.
- Add Special K or Rice Krispies, stirring along the way.
- Grease 9x13 pan and add mix to pan. (Trick: I use a buttered spoon to spread evenly in the pan)
- Melt chocolate chips and butterscotch chips together with 1/2 c butter, 30 seconds at a time in the microwave until melted.
- Spread over the bars.
- Refrigerate until hardened.
- Cut and serve.

This easy no-bake recipe features chewy peanut butter cereal bars topped with a chocolate and butterscotch frosting.

- Grease a large bowl with butter and place the Special K in the bowl.
- Grease a 9x13 or 8x11 baking dish. The 9x13 will make thinner bars, the 8x11 bars will be thicker (as pictured).
- Place sugar and corn syrup in a saucepan over medium heat. Heat the mixture stirring occasionally, until the edges start to bubble. Remove the saucepan from the heat and immediately stir in the peanut butter.
- Working quickly (before the mixture cools), pour the peanut butter mixture over the Special K and stir until combined. Scoop into the prepared baking dish and press into an even layer. Proceed with the frosting.
- Place chocolate chips and butterscotch chips in the bowl of a double boiler. Cook, stirring frequently, until melted and smooth. Note: make sure the boiling water is not touching the bottom of your bowl, only the steam.
- Immediately pour the frosting over the bars and smooth into an even layer. Sprinkle with flaky sea salt. Allow several hours for the frosting to firm up, then cut and serve.

- Measure corn syrup and brown sugar into large saucepan.
- Cook over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbly.
- Remove from heat.
- Stir in peanut butter.
- Add cereal and raisins.
- Stir until well coated.
- With back of spoon, press mixture evenly and firmly into 13X9 pan coated with cooking spray.
- Let stand until cool.

- Add the dates and salt to the bowl of a food processor and process until they form a thick paste. Add the peanut butter and 2 tablespoons milk, process until smooth and creamy. Scoop the mixture out and into a microwave safe bowl, microwave 30 seconds, stir and microwave another 30 seconds. Continue until the mixture is warm and melty. This took me 1 minute. Stir in the vanilla. If the mixture seems too stiff add 1 more tablespoon milk, but no more. If you add too much milk the cereal will become soggy.
- Add the cereal to a large bowl. Slowly mix in the peanut butter mixture until throughly combined. Press the cereal into the prepared baking dish in an even layer.
- Microwave the chocolate on 30 second intervals, stirring after each, until melted. This took me about 1 1/2 minutes. Spoon the melted chocolate over the bars in an even layer. Cover the pan and place them in the fridge for 1 1/2 -2 hours or until firm. You may also put them in the freezer for 30 minutes, but I find the fridge works best.

- In a saucepan, combine the sugar and corn syrup over medium heat. Heat until sugar is dissolved and JUST starting to come to a simmer. If you let mixture boil the bars will be hard instead of soft and delicious.
- Remove sugar mixture from heat and stir in peanut butter. Pour over bowl of Special-K. Gently stir to combine.
