8 thin-sliced chicken breasts
8 tomatoes, sliced
4 fresh mozzarella balls, sliced
1 bunch fresh basil
2 eggs
1 -2 cup seasoned dry bread crumb
olive oil
black pepper
salt
cooking spray

Steps:

  • Preheat oven to 350°F.
  • Wash and pat dry the chicken.
  • In a small bowl, crack and beat the eggs. In another small bowl, add the breadcrumbs.
  • Dip each piece of chicken in the egg batter and then dip in the breadcrumbs, lightly coating both sides.
  • Place chicken pieces in baking dish or tray coated with cooking spray.
  • Bake chicken in oven for 10 minutes. After 10 minutes, turn chicken over and bake for 10 more minutes.
  • After 20 minutes total, take chicken out of oven.
  • Place tomato slices over each piece of chicken, followed by fresh basil pieces and mozzarella slices.
  • Add black pepper and salt as needed.
  • Bake for another 15-20 minutes or until cheese is bubbly.
  • Enjoy!

3 ounces baked whole-grain wheat crackers, such as Triscuits (about 12)
1/3 cup fresh flat-leaf parsley
1/2 teaspoon dried oregano
Coarse salt and freshly ground pepper
1 can (28 ounces) diced tomatoes (no salt added), with juice
1/2 medium onion (3 ounces), coarsely chopped
2 garlic cloves, coarsely chopped (2 teaspoons)
1 tablespoon extra-virgin olive oil
2 large egg whites
6 boneless, skinless chicken breast halves (6 ounces each)
3 ounces part-skim mozzarella cheese, grated (about 1 cup)
1 ounce pecorino Romano cheese, finely grated (about 1/2 cup)

Steps:

  • Preheat oven to 425 degrees. Pulse crackers, parsley, oregano, and 1 teaspoon salt in a food processor until finely ground. Season with pepper, and transfer to a plate. Puree tomatoes with juice, onion, garlic, and 1/2 teaspoon salt with an immersion blender or in clean food processor until smooth.
  • Coat a 9-by-13-inch baking dish with oil. Lightly whisk egg whites, and transfer to a shallow dish. Dip each chicken breast half in whites to fully coat; let excess drip off. Dredge chicken in crumb mixture, lightly pressing, to coat both sides.
  • Transfer chicken to prepared baking dish, and flip once to coat in oil. Bake until crisp, about 10 minutes.
  • Pour tomato sauce over chicken, allowing some sauce underneath each piece. Top with cheeses, and bake until bubbling and top is lightly browned, 15 to 20 minutes.

Chicken parm in the instant pot leaves chicken breast cutlets juicy and tender, and there's just one pot to clean. And it doesn't require a lot of added fat to boot. Serve the chicken with whole-grain pasta, zoodles or steamed vegetables if you like.

1 tablespoon olive oil
1/2 small onion, chopped
2 cloves garlic, minced
One 28-ounce can crushed tomatoes
1 tablespoon tomato paste
2 teaspoons sugar
Pinch red pepper flakes
Kosher salt and freshly ground black pepper
4 chicken cutlets (about 1 pound)
1/2 teaspoon Italian seasoning
1/2 teaspoon sweet paprika
2 tablespoons grated Parmesan
4 slices low-moisture, part-skim mozzarella
6 basil leaves, cut into strips

Steps:

  • Turn the Instant Pot® to the low saute setting (see Cook's Note). Add the oil and heat until it is shimmering but not smoking. Add the onion and garlic and cook, stirring occasionally, until the onions just begin to soften, 4 to 5 minutes. Stir in the crushed tomatoes, tomato paste, sugar, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper then turn the pot off.
  • Season the chicken cutlets on both sides with the Italian seasoning, paprika, 1/2 teaspoon salt and a few grinds of black pepper and nestle them into the sauce, overlapping just slightly if needed. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook, on high, for 2 minutes.
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid and turn the Instant Pot® off.
  • Use tongs to reposition the chicken on top of the sauce if they have sunk. Sprinkle the tops of each cutlet with the Parmesan then place the mozzarella on top, tearing the cheese in half if needed to better cover the chicken. Place the lid back on and let sit until the cheese has melted, 3 to 4 minutes.
  • Spoon the chicken and sauce onto a plate or platter and garnish with the basil.
