These are the BEST Chicken enchiladas, my dish of choice anytime I go out for Mexican! If you're an enchilada lover like me, you will love these!!

2 garlic cloves (minced)
1-2 tbsp chipotle chilis in adobo sauce
1-1/2 cups tomato sauce
1/2 tsp chipotle chili powder
1/2 tsp ground cumin
3/4 cup reduced sodium chicken broth
kosher salt and fresh pepper to taste
1 tsp vegetable oil
9 oz cooked shredded chicken breast (from 2 small breasts)
1 cup diced onion
2 large clove garlic (minced)
1/4 cup cilantro
kosher salt
1 tsp cumin
1/2 tsp dried oregano
1 tsp chipotle chili powder
1/3 cup chicken broth
1/2 cup tomato sauce
8 7-inch low-carb whole wheat flour tortillas ((la tortilla factory))
1 cup shredded low fat Mexican cheese
non-stick cooking spray
2 tbsp chopped scallions or cilantro for topping

Steps:

  • In a medium saucepan, spray oil and sauté garlic. Add chipotle chiles, chili powder, cumin, chicken broth, tomato sauce, salt and pepper. Bring to a boil. Reduce the heat to low and simmer for 5-10 minutes. Set aside until ready to use.
  • Preheat oven to 400 degrees.
  • Heat the vegetable oil in a medium skillet over medium-high heat. Sauté onions and garlic on low until soft, about 2 minutes. Add chicken, salt, cilantro, cumin, oregano, chili powder, tomato sauce, chicken broth, and cook 4 to 5 minutes. Remove from heat.
  • Spray a 13 by 9-inch glass baking dish with non-stick spray. Put 1/3 cup chicken mixture into each tortilla and roll it.
  • Place on baking dish seam side down, top with sauce. Then top with cheese.
  • Cover with aluminum foil and bake in the oven on the middle rack for 20-25 minutes. Top with low fat sour cream or scallions if you wish. (Extra points) Makes 8 enchiladas.

Make these Easy Chicken Enchiladas in just 15 minutes of prep time. The filling is made with leftover chicken (or use rotisserie) salsa and sour cream. They're creamy, cheesy, fast and delicious!

1 15-ounce can Enchilada sauce (or 2 cups)
4 scallions, sliced, divided
4-ounce can diced chiles or canned jalapeños, drained and chopped* see ingredient note
2 cups diced or shredded cooked chicken
1 cup frozen corn, thawed under running water
½ cup salsa, plus more for serving
1/3 cup sour cream, preferably reduced-fat
10 corn tortillas (6-inch or soft taco size) *see ingredient note
1 ½ cup shredded Mexican cheese (6 ounces)

Steps:

  • Preheat oven to 400 degrees F. Coat a 9 by 13-inch baking dish with cooking spray. Spread ½ cup Enchilada sauce in the bottom of the dish.
  • Stir 2 scallions, canned chiles or jalapeños, chicken, corn, salsa and sour cream in a medium bowl until coated.
  • Warm 5 tortillas in the microwave* for 20 to 30 seconds until pliable. Spoon ¼ cup filling onto the center of a tortilla. Roll up and set, seam-side-down, in the prepared baking dish. Repeat with the remaining warmed tortillas. Warm the remaining 5 tortillas and continue filling them and arrange them into the casserole dish. Spread the remaining sauce over the enchiladas.
  • Transfer to the oven and bake 15 minutes. Top with cheese and continue baking until the enchiladas are steaming hot all the way through, the sauce is bubbling and the cheese is melted, about 10 minutes longer. Let cool 10 minutes before serving. Serve topped with the remaining 2 sliced scallions.

I've always liked this recipe because it is quick and easy. I'm always looking for ways to cut out excess fat so I use reduced-fat cheese and sour cream. I also like to add fiber to make the meal a little healthier for my family so I add black beans and some bell peppers. This also adds color! To make it super healthy I use whole-wheat flour tortillas. And it still tastes just as delicious!

4 skinless, boneless chicken breast halves
1 onion, chopped
1 cup light sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  • Melt the butter in a skillet over medium heat. Cook and stir green onion and garlic until fragrant, about 2 minutes. Add mushrooms and cook until lightly browned and tender, about 6 minutes. A healthy Chicken Enchilada recipe that's easy to make for a weeknight dinner or you can prep ahead on the weekend, freeze and heat in the oven when you need them.

1 tbsp olive oil
1 onion (finely diced)
6 chicken thigh fillets (skinned and cut into strips)
2 cloves garlic (finely chopped)
1 tbsp cumin
½ tsp Oregano (Dried herb)
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
1 tbsp apple cider vinegar
300 ml tomato puree (Or Passata)
1 cup chicken stock (250ml)
1 can black beans (drained and rinsed)
½ cup corn (frozen or fresh)
8 tortilla (Wholegrain)
½ cup Sour Cream
½ cup Cheese (grated)

Steps:

  • Preheat Oven to 180'C / 350'F. Prep a large baking tray by rubbing a little olive oil on the base (you can use parchment paper to make clean up easier).
  • Heat up a large pot on the stove top. Add olive oil and diced onions. Cook until softened (around 5 minutes). Add chicken pieces, salt and pepper. Fry until juices have evaporated and chicken starts to brown.
  • Add cumin, oregano, smoked paprika, garlic. Fry for around one minutes, stiring to coat chicken evenly with spices.
  • Pour in stock, tomato puree, beans and corn. Cover pot and allow to simmer on medium for 10-15 minutes until chicken is tender and sauce has thickened slightly. Remove from heat. Use a colander to drain the sauce from the chicken and set sauce and chicken filling aside. DO NOT THROW SAUCE AWAY.
  • Soften your tortillas by wrapping in foil and heating in the oven for a couple minutes. This makes them easier to work with.
  • Spread a teaspoon sour cream on each tortilla and spoon chicken and bean filling on top along the center. Roll up your tortilla and place seam side down in your baking tray. Repeat until all 8 tortillas are done.
  • Spoon strained enchilada sauce over the rolled tortillas and top with grated cheese.
  • Bake in the oven for 25 minutes until golden and serve.

1 cup chicken stock
1 tablespoon all-purpose flour
1 1/2 tablespoon chili powder
2 teaspoons ground cumin
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper

15 ounce can unsalted tomato sauce
3 cups shredded skinless (about 15 ounces, boneless rotisserie chicken breast or pre-cooked and shredded chicken breast)
15 ounce can black beans (rinsed and drained)
12 inch corn tortillas (6-)
Cooking spray
3/4 cup Mexican blend cheese (shredded)
1 large tomato (chopped)
1/4 cup fresh cilantro (chopped)
6 tablespoons sour cream (if desired for garnish)

Steps:

  • Preheat broiler to high. Combine first 9 ingredients (through sauce) in a medium saucepan and stir with a whisk. Bring to a boil over medium- high heat. Cook 2 more minutes or until thickened, stirring occasionally. Reserve 1 1/2 cups sauce mixture on the side.
  • Add chicken and beans to pan; cook 3-4 minutes or until chicken is thoroughly heated.
  • Stack 6 tortillas and wrap stack in damp paper towels and microwave for 15 seconds. Spoon about 1/3 cup chicken mixture in center of each tortilla and roll up. Arrange tortillas, seam sides down, in bottom of a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Repeat with other 6 tortillas starting with the stacking step.
  • Top with reserved sauce and cheese. Broil 3-4 minutes or until cheese is lightly browned and sauce is bubbly. Top with tomato and cilantro. Garnish with sour cream if desired.

Also, this does take a while to make, but it's worth it. One problem with these enchiladas is that they're high in sodium, but you can easily leave out some salt or reduce the amount of sauce you put on the chicken.

6 garlic cloves, peeled
1 medium onion, sliced

Remove vegetables, cool, and transfer to a blender. Add chili pepper, cumin, salt and pepper, and puree until smooth. Set a aside.
  • Prepare enchiladas: Combine paprika, cumin, and chili powder, in small bowl. Mix in oil and just enough water to form a paste. Rube paste on chicke. Set chicken aside for 15-30 minutes. Grill or broil chicken 5 to 7 minutes on each side or until juice runs clear when pricked with a fork. Cool. Cut into thin strips.
  • Lay tortillas on a work surface. Cover each with 1/4 of the chicken, 2 tablespoons cheese, and 2 tablespoons green chile. Roll up and place in a 9 by 13 inch baking pan, seam-side down. Cover with sauce. Bake at 350 degrees 17-22 minutes or until sauce bubbles.
