Steps:
- Preheat oven to 350°F; line two baking sheets with parchment paper or use a silpat.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.
- Add the egg, followed by the applesauce and vanilla extract.
- Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips.
- Drop heaping tablespoonfuls (approx 1 tbsp each) of the dough onto prepared baking sheets, flattening each cookie slightly (I forgot to do this).
- Bake for about 10-12 minutes, or until cookies become light brown at the edges.
- Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container so you don't eat them all in one sitting!

- In a medium-sized mixing bowl, whisk together the flour, cinnamon, baking soda, and salt. Stir in the old-fashioned rolled oats and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a handheld mixer, beat the butter, light brown sugar, and granulated sugar together for 1-2 minutes or until well combined.
- Mix in the egg and vanilla extract, stopping to scrape down the sides of the bowl as needed.
- Add the dry ingredients and mix on low speed until just combined, then mix in the chocolate chips on low-speed until fully incorporated into the cookie dough. Cover tightly and refrigerate for at least 30 minutes.

- Preheat oven to 350 degrees F and prepare 2 baking sheets with parchment paper or aluminum foil. If you are using aluminum foil give the foil a spritz of olive oil to prevent sticking.
- Mix: Add Butter and Brown Sugar to a large mixing bowl. Use an electric mixer to mix the butter and brown sugar together until smooth. If you don't have an electric mixer or just don't feel like breaking out appliances and having more things to clean you can easily blend together using a fork and spatula.
- Once you have mixed your butter and brown sugar well add in the egg and vanilla extract. Mix all together.
- Now add in the Kodiak Cakes Whole Wheat, Oat, & Honey Flapjack & Waffle Mix and the rolled oats. Mix all together until it turns into a nice doughy batter.

- Now that your cookie batter is prepared to your liking scoop 2-3 tablespoon-sized dollops onto your prepared baking sheets.
- Bake for 9-11 minutes in the oven until golden around the edges. You can also make these in the air fryer in small batches. Just cut a small square of parchment paper and place 2-3 dollops on the paper in the air fryer and air fry for about 3 minutes at 350 degrees. You may have to adjust the time and temp for your air fryer as some air fryers cook hotter than others. I find the Ninja Foodie cooks very hot and fast so those cookies will cook quick but the air fryer is perfect if you just want to make 2-3 fresh cookies for the day as snacks in the morning.
