These muffins was on 'The Kids Page' of the newspaper in 1996 and have become one of my favorite snacks. They are low fat since they are made with applesauce instead of butter or oil.

cooking spray
2 cups all-purpose flour
½ teaspoon salt
¾ cup white sugar
1 teaspoon baking soda
1 cup applesauce
1 egg
3 ripe bananas, diced
1 cup mini chocolate chips
1 cup dried cherries

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  • Combine flour, sugar, baking soda, and salt in a medium bowl.
  • Mix applesauce and egg together in another bowl. Add applesauce mixture to the flour mixture. Stir in bananas, chocolate chips, and dried cherries.
  • Spoon batter into the prepared muffin tin, filling each cup almost to the top.
  • Bake muffins in the preheated oven until lightly browned, about 20 minutes. Let cool for 5 minutes before transferring to a wire rack to cool completely.

Number Of Ingredients 9

1-1/2 cups all-purpose flour
1 cup sugar
1/2 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts
1 teaspoon baking soda
1 teaspoon salt
3 medium ripe bananas, mashed
1/2 cup mayonnaise
6 maraschino cherries, halves

Steps:

  • In a bowl, combine flour, sugar, chocolate chips, walnuts, baking soda and salt. In another bowl, combine bananas and mayonnaise. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. , Bake at 375° for 20-25 minutes or until a toothpick comes out clean. Press a cherry half, cut side down, into the top of reach muffin. Cool for 5 minutes before removing from pan to a wire rack.

Yum Banana Split in a muffin. I made adjustment to this recipe. The original recipe says to put the chocolate chip and pecans on top of the muffins before you bake them. I just felt it needed to be in the muffin. Then it states to add a cherry immediately after you remove it from the oven. I just couldn't see the cherry staying on top if I did that. So I've put it all inside the muffin. My only concern is that it may be to much chocolate so you may want to cut the chocolate chips down to 1/2 cup unless you are a serious chocolate lover. You can also leave out the pecans, if you like. But I hope you all enjoy!!

1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 egg
1/2 cup mayonnaise
3 ripe bananas
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans (optional)
1/2 cup maraschino cherry, cut up (optional)
additional maraschino cherry

Steps:

  • In bowl, mix flour, sugar, baking soda and salt.
  • In another bowl, combine egg and mayonnaise and mix well.
  • Add flour mixture and mashed bananas; mix well.
  • Add semi-sweet chocolate chips, maraschino cherries and pecans if you are using them.
  • Pour into muffin tins.
  • You can either, at this point, top each muffin with a maraschino cherry or bake for 5 minutes and then top with a maraschino cherry.
  • Bake 10 to 15 minutes at 350ºF.
  • ENJOY!

4 bananas, mashed

1 egg, lightly beaten
⅓ cup butter, melted
⅓ cup packed brown sugar
2 tablespoons all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups or line with muffin papers.
  • Mix 1 1/2 cups flour, baking soda, baking powder, and salt in a large bowl. Beat bananas, sugar, egg, and melted butter in another bowl. Stir banana mixture into flour mixture just until moistened. Spoon batter into prepared muffin cups.
  • Combine brown sugar, 2 tablespoons flour, and cinnamon in a small bowl. Blend in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  • Bake in preheated oven until golden and tops spring back when lightly pressed, 18 to 20 minutes.

Steps:

  • Preheat the oven to 400 degrees. Line one standard muffin pan with 12 muffin liners and a second one with two liners. Spray liners with cooking spray. In a medium bowl, whisk together the flours, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, whisk the sugar, oil, and eggs until foamy, about 1 minute. Whisk in the banana, yogurt, milk, and vanilla. Stir in the dry ingredients until just moistened, then fold in the crushed pineapple and chocolate chips.
  • Using an ice cream scoop, fill the muffin cups with the muffin batter, about ¾ full. Top each with a maraschino cherry half and some mini chocolate chips. Bake one muffin pan at a time, 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and cool on a wire rack for 10 minutes. Remove the muffins from the pan and continue to cool. Bake the remaining two muffins and repeat the cooling process. 1 cup rolled oats
2/3 cup cranberries
3 tablespoons extra virgin olive oil
1 large egg
1/3 cup skim milk
3 medium carrots, shredded
2 medium ripe bananas, mashed

Steps:

  • Preheat oven to 400 degrees.
  • Coat a 12-cup large muffin pan with cooking spray.
  • In a large bowl whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps.
  • Stir in oats and cranberries.
  • Add oil, egg, milk, carrots and banana and stir until 2 minutes.
  • Distribute batter between the 12 muffin cups.
  • Bake until a toothpick inserted in center of a muffin comes out clean, 20 to 25 minutes.
