A delicious way to make homemade candy!

1 cup (2 sticks) salted butter
1 cup granulated white sugar
1 tablespoon light corn syrup
3 tablespoons water
6 ounces milk chocolate chips, (melted)
1 cup finely chopped almonds or pecans

Steps:

  • Line an 11x7-inch pan with well-greased wax or parchment paper. Set aside.
  • Melt the butter on low in a heavy saucepan. Stir in the sugar, syrup and water. Stirring constantly, use a candy thermometer and cook until the mixture reaches 305 degrees F.
  • Pour the hot candy onto the prepared pan. Spread the mixture to the edges. Allow to sit until the mixture is stable but still hot. Spread the melted chocolate chips over the top. Sprinkle nuts over the top of the chocolate and gently press in.
  • Allow the candy to cool and harden. Break into pieces and store in an airtight container.

Number Of Ingredients 10

1 cup desiccated coconut
1 cup rolled oats
1 cup unsalted cashews or 1 cup peanuts
1 cup sunflower seeds
1/2 cup sesame seeds
1/2 cup pumpkin seeds
3/4 cup milo drinking chocolate or 3/4 cup chocolate chips
1/2 cup honey
1/4 cup raw sugar
125 g unsalted butter

Steps:

  • Pre heat oven 180'C. line a 27cm X 18cm baking tin with greaseproof baking paper.
  • Combine the first 7 ingredients into a large bowl.
  • Place honey, raw sugar and butter into a small saucepan. Bring to the boil, stirring, Simmer for 5 minutes. Then add to dry ingredients, mix well.
  • Press the mixture evenly into baking tin.
  • Bake in preheated oven for 18-20 minutes until the top is golden brown.
  • Cool and cut into bars. store in an airtight.

  • In a large pot, melt almond butter, honey and coconut oil (if using) over medium-heat until the mixture comes to a boil, stirring constantly. Lower the heat and simmer until the mixture is slightly thickened, about 2 minutes. Remove the pot. (At this point, you can add vanilla, cinnamon and salt, if using).
  • Fold in oats, shredded coconut, and chopped almonds. reserving the whole almonds for topping.
  • Transfer the mixture into the prepared pan while pressing down very firmly and flattening with a spatula until tight and compressed. Press the reserved whole almonds down into the bars, evenly spaced apart. Press in some chocolate chips or any other add-ins of your choice.

  • In a large bowl, add peeled banana. Using a fork or dough blender (recommended), mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until well incorporated.
  • Add the dry ingredients: oats, baking soda, baking powder and salt. Using a rubber spatula, fold until well mixed. Fold in seeds, dried fruit and walnuts.
  • Pour this mixture into the prepared baking pan. Using the rubber spatula, smooth into an even layer.
