- In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the tomatoes, cabbage, onions and celery; bring to a boil. Reduce heat; simmer, uncovered, for 25 minutes or until vegetables are tender. Stir in salt and pepper.

- Heat oil in a large pot over medium heat. Add onion, carrots and celery. Cook, stirring, until the vegetables begin to soften, 6 to 8 minutes. Add bell pepper, garlic, Italian seasoning, pepper and salt and cook, stirring, for 2 minutes.
- Add broth, cabbage and tomato; increase the heat to medium-high and bring to a boil. Reduce heat to maintain a simmer, partially cover and cook until all the vegetables are tender, 15 to 20 minutes more. Remove from heat and stir in vinegar.

- In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic; cook until onion is transparent, about 5 minutes.
- Stir in water, bouillon, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.
- Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.

- Sautee onion in 3 tablespoons of olive oil over medium heat for about 3 minutes. Add in the celery and carrots. Sautee for about 5-7 minutes or until soft. Season with a teaspoon of kosher salt, a few grinds of fresh pepper, and a 1/2 tsp red pepper chili flakes. Stir in garlic, whole sprigs of thyme and rosemary and sautee for another minute or two.
- Add in chicken stock and bring to a boil. Add in cabbage and tomatoes and simmer for about ten minues. Taste for seasoning and adjust. I usually find it needs a dash more salt.
- Add in remaining vegetables and continue to simmer until just cooked thorugh. Right before serving stir in parsley.
