I developed this recipe in an effort to match the flavors of our favorite store-bought bread, adapting it to a recipe in my bread machine manual. It's a hearty, great-tasting loaf! -Ruth Fanger, Monroe, Oregon

Yield 1 loaf (1-1/2 pounds, 12 pieces).

Number Of Ingredients 14

1 cup water (70° to 80°)
1 tablespoon honey
1 tablespoon butter, softened
3 tablespoons toasted wheat germ
2 tablespoons mashed potato flakes
1 tablespoon nonfat dry milk powder
1 tablespoon ground flaxseed
1 tablespoon sesame seeds
1 tablespoon poppy seeds
1 teaspoon salt
1-1/4 cups whole wheat flour
1 cup bread flour
1/4 cup chopped hazelnuts
1-1/2 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed).

This is a bread machine recipe developed by my very talented mother, who grew up in Oregon, the Filbert (or Hazelnut) capital of the world! This bread has won raves from those who don't even like whole wheat bread.

½ tablespoon active dry yeast
1 ¼ cups bread flour
1 cup whole wheat flour
1 tablespoon bread flour
1 ⅛ cups warm water (110 degrees F/45 degrees C)
1 tablespoon sesame seeds
1 ½ tablespoons sunflower seeds
2 cups chopped hazelnuts
1 tablespoon white sugar
1 ½ tablespoons vegetable oil
⅔ teaspoon salt

Steps:

  • Follow the directions for your bread machine, but do not reserve the nuts for later: add them at the beginning for better flavor.

Pour boiling water over hazelnuts; cover and let stand 20 minutes. Strain hazelnut mixture through a sieve into a bowl, reserving liquid and nuts. Spread nuts in an even layer on a double thickness of paper towels; pat lightly with additional paper towels to dry. Set aside. Place reserved liquid in a small saucepan; heat until warm (100° to 104°). Transfer reserved liquid to a large bowl. Add sugar and yeast, stirring well with a whisk; let stand for 5 minutes.
  • Lightly spoon flour into dry measuring cups; level with a knife. Add 2 3/4 cups flour and salt; stir until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel tacky). Cover dough; let rest 10 minutes. Uncover; knead in reserved hazelnuts.
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size. (Press two fingers into dough. If indentation remains, dough has risen enough.) Punch dough down; cover and let rest 5 minutes. Shape dough into a 9-inch oval; place on a baking sheet sprinkled with cornmeal. Lightly spray surface of dough with cooking spray; cover. Let rise in a warm place (85°), free from drafts, 30 minutes or until doubled in size.
