COCONUT-CARAMEL-CHOCOLATE CRISPY TREATS
These are gluten-free and nut-free treats. They are super sweet! Flavors include coconut, caramel, and chocolate.

- Preheat the oven to 250 degrees F (120 degrees C). Line 2 jelly roll pans with parchment paper; butter the parchment paper. Spread coconut on a baking sheet.
- Bake coconut in the preheated oven until toasted and lightly browned, 10 to 15 minutes. Remove and let cool. Leave the oven on.
- Combine caramels, 10 ounces of condensed milk, and 1/4 cup butter in a microwave-safe bowl. Microwave, stopping and stirring occasionally, until caramels are melted, 1 to 2 minutes.
- Combine marshmallows and remaining 1/2 cup butter in a microwave-safe bowl. Cover and heat on high power for 30 seconds; stir. Repeat until completely blended. Add remaining sweetened condensed milk. Stir in cereal and toasted coconut. Press evenly into the prepared pans. Pour caramel mixture over cereal and smooth out. Sprinkle salt on top; add chocolate chips.
- Bake in the preheated oven until chocolate chips are melted, 1 to 2 minutes. Spread chocolate evenly. Allow to cool for 5 minutes, then roll up each, starting on the long side.
- Refrigerate until caramel has set, at least 1 hour. Slice into individual pieces, then cut in half again.

CHOCOLATE HAZELNUT S'MORES-STUFFED CRISPY RICE TREATS RECIPE BY TASTY
Gooey, buttery crispy rice treats stuffed with chocolate hazelnut and toasted marshmallows will have you wanting s'more! Quick tip: if the crispy rice mixture ever becomes too stiff, simply microwave in 2-second intervals until malleable.

- Preheat the oven to 500°F (260°C). Line a 9 x 13-inch baking dish with parchment paper and grease with nonstick spray.
- In a large saucepan, melt butter over medium heat until browned, 2-3 minutes. Using a plastic spatula, stir in the marshmallows and vanilla until completely melted. Turn off the heat, add the puffed rice cereal, and stir until well coated in the melted marshmallows.
- Spread half of the cereal mixture evenly in the prepared baking dish. Chill in the freezer for 5 minutes. Meanwhile, keep the remaining cereal mixture covered in a warm place.
- Spread the chocolate-hazelnut spread evenly across the first layer of crispy rice treats, then sprinkle the mini marshmallows on top. Place the pan in the oven for 2-3 minutes, until the tops of the marshmallows are golden brown. Transfer to the freezer to set for 5-10 minutes.
- Spread the rest of the cereal mixture evenly over the toasted marshmallow layer. (If the crispy rice mixture becomes too stiff, microwave in 2- second intervals until malleable.)
- Let the treats cool completely, about 20 minutes, then invert onto a cutting board and cut into 2-inch squares.

COCONUT TREATS
These little oven baked coconut balls are just a treat. I found the original recipe on the back of a bag of organic, unsweetened grated coconut, but I have modified it with added sweetness and flavor. A batch turns out about 28 cookies. Enjoy!

- Set the oven at 350 F, and prepare a cookie sheet lined with wax paper.
- Melt the butter before adding the powdered sugar and vanilla extract and mix well. Add the flour and mix well again before adding the grated coconut and flavoring of choice.
- Hand roll about 28 little balls individually which you place 2" apart on the lines cookie sheet and bake for 12-15 minutes in the upper half of the oven. It is important that the cookies do not over bake, or they will turn out too crumbly and dry. Even though they may seem soft when you take them out, they will harden as they cool down.

- In a bowl, cream butter, shortening and sugars until fluffy. Add eggs and vanilla; beat well. Combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Fold in oats, coconut and nuts. , Drop by tablespoonfuls onto greased baking sheets. Bake at 375° for 10-11 minutes or until golden brown. Cool 2-3 minutes before removing to a wire rack.

- Preheat oven to 350 degrees F.
- Spread the nuts out on a metal baking pan or a large sheet pan with ridges.
- Bake for 10-12 minutes or until they are very hot and fragrant.
- Carefully dump nuts into a dish towel which you've spread across the counter - a ridged dish towel or one with some sort of embroidery works well because it provides more friction.
- Bring the ends of the dish towel up around the still-hot hazelnuts and wrap them up like a present.
- Using your hands, rub them between the towel and the work surface so that the friction created by the rubbing loosens the skin.
- Discard the skins and enjoy the toasted hazelnuts whole or crush them for your favorite recipe.

- To toast your coconut: place coconut in a medium saucepan over low heat. Stir constantly for just a few minutes until coconut starts to brown. Be careful - it burns very quickly. Do NOT walk away from the stove. As soon as it starts to brown, remove it from the heat and transfer to a large bowl.
- Add marshmallows and 1/4 cup coconut oil to a second large bowl. Microwave for 1 1/2 to 2 minutes, stirring every 30 seconds, until marshmallows are melted. (Note: if your coconut oil is solid and you cannot scoop it out, heat the jar (no lid) in the microwave for about 15 seconds. You should be able to scoop it then.)

- To toast the coconut, spread the coconut onto a rimmed sheet pan. Toast in a 350°F oven, stirring frequently, until the coconut is an even brown color, about 10 minutes. Set aside to cool.
- Butter an 9×13-inch baking pan. Line the baking pan with parchment paper letting the paper extend up the two short sides of the pan and overhang slightly on both ends. Butter paper; set pan aside.
