HAZELNUT MARBLE BARK
Only three ingredients are needed to make this simple holiday candy! Presented on a cookie tray or packaged as a gift, it's sure to be appreciated.

- Line cookie sheet with foil or waxed paper. In medium microwavable bowl, microwave white chocolate on High 1 minute, stirring once halfway through microwaving, until melted. If necessary, continue to microwave on High in 15-second increments, stirring until smooth.
- In another medium microwavable bowl, microwave semisweet chocolate on High 1 minute, stirring once halfway through microwaving, until melted. If necessary, continue to microwave on High in 15-second increments, stirring until smooth.
- Stir 1/4 cup of the hazelnuts into each bowl of chocolate. Alternately spoon white mixture and brown mixture in rows, side by side, onto cookie sheet; spread evenly to about 1/4-inch thickness. With knife or small metal spatula, cut through both mixtures to swirl for marbled design. Refrigerate until firm, about 1 hour. Break into pieces.

CANDIED HAZELNUTS
Add these sweet and crunchy candied hazelnut confections to a salad, sprinkle some over ice cream, or eat them on their own.

- Heat sugar and water in a small saucepan over high heat, swirling, until sugar dissolves. Bring to a simmer, and cook, swirling occasionally, until medium amber, about 4 minutes. Add hazelnuts and salt, and stir for 1 minute to coat.
- Pour mixture onto a baking sheet lined with parchment or a nonstick baking mat, and immediately separate nuts using 2 forks so that each stands alone on sheet. (You can also hold the pan at an angle and push each hazelnut onto sheet individually. If caramel thickens as you work, return to heat briefly.) Let cool. Break apart.
NO-BAKE HAZELNUT AND CHOCOLATE CANDIES
Chocolate candies are topped with crunchy, toasty hazelnuts and then dipped in more chocolate for a tempting treat.

- Preheat the oven to 350 degrees F. Spread the hazelnuts on a small rimmed baking sheet and bake until toasted and golden, 10 to 12 minutes. Let cool completely.
- Line a baking sheet with parchment or wax paper; set aside.
- Combine the confectioners' sugar, rice cereal and salt in a food processor and pulse until finely chopped. Add the chocolate-hazelnut spread and butter. Pulse until the mixture begins to form clumps and holds together when squeezed.
- Roll teaspoons of the mixture into balls, pressing a hazelnut into the center of each so the top of the nut is still visible; place on the prepared baking sheet. Freeze until firm, about 20 minutes.
- Put the chocolate and shortening in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate melts and the mixture is smooth. Gently stick a toothpick into the upper half of a candy, avoiding the hazelnut, and dip the bottom half into the melted chocolate. Allow the excess chocolate to drip into the bowl and return the dipped candy to the baking sheet. Remove the toothpick and smooth the hole with your fingertip. Repeat with the remaining candies. Refrigerate until firm, about 20 minutes.

- Spread the nuts on a separate dry baking sheet and roast in the oven for 15 minutes, giving the pan a shake a couple of times during cooking to redistribute the nuts. Let them cool on the pan.
- Put the white chocolate (and the coconut oil, if using) in a microwave safe bowl and microwave for a minute. Let sit for a minute, then stir. if it is not completely melted (it probably won't be) microwave in further 15 second bursts, stirring well in between, until most of the lumps are gone. Keep stirring until the chocolate is smooth. Stir in the hazelnuts, and then turn out onto the lined baking sheet. Spread the chocolate out into a thin rectangle. The exact size if variable, mine was about 12x7. The important thing is that there are no bare spots. Note: if you have trouble melting chocolate, see the tips in the post, above.)

- Put raw whole hazelnuts on a baking sheet in a 350 degree oven for 10 to 15 minutes. Give the pan a shake from time to time. Cool the nuts and then chop them.
- Put both bags of chocolate in a glass bowl (a quart sized glass measuring cup works great) and microwave for 60 seconds. Continue microwaving and checking every 30 seconds until the chips are melted, stirring each time. The two bags will take longer and more stirring than just one.
- Quickly mix in the nuts and cherries and spread out on a silpat or parchment lined baking sheet. Don't worry about making it an even rectangle because you're going to be breaking it up into irregular shapes anyway, just try to get the bark to a relatively even thickness.
