HAWAIIAN ROLL CINNAMON ROLLS

Hawaiian Roll Cinnamon Rolls image

Grab a bag of Hawaiian sweet rolls and you're halfway to making these shortcut pastries. A hack that's great for dorm rooms, baking with kids and anyone who doesn't have time for kneading and rising yeasted dough.

Categories     dessert

Time 45m

Yield 24 servings

Number Of Ingredients 7

3 sticks (1 1/2 cups) unsalted butter, at room temperature, plus more for the muffin tin
1 1/2 cups granulated sugar, plus more for dusting
1/4 cup ground cinnamon
24 Hawaiian sweet rolls, such as King's Hawaiian Original Hawaiian Sweet Rolls
1 cup confectioners' sugar
2 tablespoons unsalted butter, melted
1/2 teaspoon pure vanilla extract

Steps:

  • For the rolls: Preheat the oven to 350 degrees F. Grease a 12-cup muffin tin with butter and dust with granulated sugar. Set aside.
  • In a small bowl, combine the granulated sugar and cinnamon. Set aside.
  • Cut the entire pack of rolls in half horizontally (keeping all top and bottom halves separately intact). Open up the rolls like a book on a piece of parchment so they are laying cut-side up. Spread 2 sticks (1 cup) of the butter over the cut side of both halves. Sprinkle half of the cinnamon-sugar mixture over the butter on the bottom half of the rolls, then top with the top half of the rolls, creating a cinnamon-sugar sandwich.
  • Using a rolling pin, flatten the rolls. Spread the remaining 8 tablespoons butter on top and coat with the remaining cinnamon-sugar. Starting with the long end closest to you, use the parchment paper to roll up the rolls into a tight jelly roll. Slice the roll into 12 slices and place a slice into each cup of the prepared muffin tin. Bake until golden brown and bubbling, about 20 minutes.
  • For the glaze: Meanwhile, mix the confectioners' sugar, butter and vanilla in a small bowl. Add hot water 1 tablespoon at a time until the glaze reaches the desired consistency.
  • Cool the rolls in the tin for 10 minutes, then transfer to a plate. Drizzle with the glaze and serve warm.

  • In the mixing bowl, on a stand mixer fitted with a dough hook, mix the warm water, 2 Tbs. sugar and the yeast. Let stand for 5 minutes.
  • Mix with the dough hook until well combined. Add additional flour 1/4 cup at a time until your dough is only a little sticky to the touch even though it's going to look really sticky. The dough will not clean the bottom or sides of the bowl or come together in a ball. You may not need all the additional flour. See my pictures in my post for a visual aid.
  • Knead at medium speed for 3 minutes. Remove the dough hook and cover with a dish towel to let rise.

  • First, combine the sponge ingredients in the bowl of a stand mixer (if using) or a mixing bowl. Let sit for 15 minutes (see note below about what it means to make a sponge for a dough).
  • Add the pineapple juice, softened butter, brown sugar, and eggs to the bowl, and mix until everything is well incorporated. If you are using a stand mixer, I used my paddle attachment for this stage.
  • Mix together well, at first using the paddle attachment on medium speed for a couple minutes, then switching to the dough hook and kneading for about 5-7 more minutes (or knead by hand.) This dough is VERY sticky, so don't worry if it seems very wet, but you can also add 1-2 tablespoons more flour here if it seems like it needs it.

  • For the sponge: In the bowl of your stand mixer, combine the sponge ingredients. Allow the sponge to rest for 15 minutes.
  • Add the pineapple juice, butter, brown sugar, eggs and yolk, and vanilla, mixing until well combined. Whisk together the remaining flour, potato flour, and salt before adding to the liquid ingredients.
  • Mix and knead until the dough is cohesive and smooth; it'll be very sticky at first. Beat with the flat beater of your stand mixer for about 3 minutes at medium-high speed. Scrape the dough into the center of the bowl, switch to the dough hook and knead for about 5 minutes at medium speed. It may have formed a very soft ball, but will probably still be sticking to the bottom of the bowl.
  • Lightly grease the mixing bowl, round the dough into a ball, and place it in the bowl or measure. Cover, and let rise until very puffy, about 1 1/2 to 2 hours.
