2 (20 ounce) cans crushed pineapple, drained
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) package cream cheese
1 (8 ounce) container frozen whipped topping, thawed
½ cup flaked coconut
½ cup chopped walnuts
½ (10 ounce) jar maraschino cherries

Steps:

  • Prepare and bake cake mix according to package directions. Bake in a 10x15 inch pan. remove from oven and allow to cool. Spread drained pineapple on top of cooled cake.
  • Prepare pudding as instructed on package and set aside. In a medium bowl, beat cream cheese until smooth. Mix in the prepared pudding. Fold in the whipped topping. Spread evenly over the pineapple.
  • Sprinkle top with coconut, chopped walnuts and maraschino cherries. Store in refrigerator.

1 cup sweetened coconut flakes

Steps:

  • Bake cake mix according to package directions in a 9x13 pan. Cool completely.
  • While cake is baking, mix cream cheese, pudding and milk together in a mixer or with electric beaters until blended well and thickened. Place pudding mixture in refrigerator. It will continue to thicken until cake is cooled.
  • When cake is cooled, poke holes evenly in the top of the cake with the round handle end of a wooden spoon.
  • Spread crushed pineapple evenly over the cake.
  • Add the pudding mixture.
  • Spread whipped topping over the pudding mixture and sprinkle entire cake with coconut flakes.
  • Serve immediately or keep covered and refrigerated until ready to serve.

1-1/4 cups buttermilk
4 large egg whites
1 large egg
1 package (8 ounces) reduced-fat cream cheese, cubed
1 cup cold 2% milk

2 cans (one 20 ounces, one 8 ounces) unsweetened crushed pineapple, drained

Steps:

  • In a large bowl, combine the cake mix, buttermilk, egg whites and egg beat on low speed for 30 seconds. Steps:

  • Preheat oven to 350°F. In a bowl, mix the white sugar, brown sugar, baking soda, all-purpose flour, walnuts, 3/4 cup flaked coconut, cinnamon, nutmeg, and salt together. Then add the eggs, vanilla, and crushed pineapple with all of the juice and mix well. Pour into a well greased pan 9-inch round or 9-inch X 13-inch baking dish. Bake 35 to 40 minutes at 350°F (or until toothpick in the center comes out clean). WHIPPED CREAM CREAM CHEESE FROSTING: In a small bowl beat whipping cream until stiff peaks form; set aside. 1 box cake mix, i used duncan heinz yellow cake mix but you can use the flavor of your choice
2 box vanilla pudding, instant, you can use the flavor you want
8 oz cream cheese, room temperature
2 can(s) crushed pineapple, drained, save juice, 20 oz.
8 large ripe bananas, sliced lengthwise [i use lemon juice on the bananas so they wouln't turn brown
1 large carton of frozen whipped topping, thawed
1 pkg coconut, flaked, can be toasted or left plain
3 small cans of mandrin oranges, drained
1 jar(s) marachino cherries, drained

Steps:

  • 1. Preheat oven to 350 degrees. Fix cake mix according to directions. [ I used the pineapple juice for the water that was to be used in the cake mix] Then take a cookie sheet or 11 x 16 pan and spray with non stick cooking spray. Pour cake mix evenly in pan. Bake for 13- 15 minutes or until done. Let cool completely.
  • 2. Combine puddings, cream cheese, and 2 1/2 cups of milk. [ I used the rest of the pineapple juice which was 2 cups and then I added 1/2 cup of milk] Spread this evenly over the cake. Then add the banana slices, then the pineapple, then the mandrin oranges. [except I kept out three for later.]Then apply the whipped topping, Coconut, marachino cheeries, and the three orange slices.

Maraschino cherries (for garnish, optional)

Steps:

  • Preheat oven to 325 degrees. Coat a 9-inch by 13-inch cake pan with nonstick spray.
  • In a large bowl, whisk the eggs and oil together until well blended. Whisk in the cake mix until smooth. Carefully fold in the mandarin oranges and their juice.
  • Pour the batter into the prepared pan and bake 25 to 35 minutes (check at 25 minutes). Cool completely, at least 30 minutes.
  • When the cake is cool, blend whipped topping and dry vanilla pudding mix in a large bowl (do not prepare the pudding mix into pudding). Carefully fold in pineapple and juice. Spread the frosting in a thick, even layer on the cake.

1 box yellow cake mix ((make according to package instructions usually includes egg(s), oil, and water. I used Betty Crocker brand.))
20 ounces crushed pineapple, (not drained)
1 cup granulated sugar
3 medium-sized bananas (sliced into ¼-inch pieces)
5.1 ounces vanilla instant pudding,
8 ounces Cool Whip, (thawed)
½ cup sweet shredded coconut, (lightly toasted)
½ cup walnuts, (chopped and lightly toasted)

Steps:

  • Preheat oven to 350°F or according to box cake mix directions.
  • Spray a 9x13 pan with baker's spray and then bake the cake mix as directed.
  • While the cake is baking, in a medium saucepan on medium heat, heat the pineapple (with liquid) and sugar just until the sugar dissolves.
  • When the cake is done baking, remove the baking pan from the oven and immediately poke holes all over the top of the cake with the handle of a wooden spoon.
  • Pour the pineapple mixture over the cake. Spread the pineapple mixture evenly over the cake then allow to cool on the counter for 30 minutes.

Steps:

  • Drain pineapple, and reserve the juice. Set aside.
