GENUINE HAWAIIAN TERIYAKI SAUCE
Easy to make, last weeks and tastes delicious! You will find yourself putting this on almost anything once it's in your refrigerator.

Steps:
- Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar. Remove from heat and add remaining ingredients.
- Let cool and store in a glass jar in refrigerator.
- A light inexpensive soy works well for this, just make sure it is real not one with caramel coloring as an ingredient. Tamari is a bit too heavy for this, though will work in a pinch.
- I use my parmesan cheese grater to grate ginger--comes out well that way.
- This is also great on noodles, tofu, vegetables, added to stir frys, besides grilled meats and burgers.

- Add soy sauce, garlic, brown sugar, pineapple juice and apple cider vinegar to a small pot. Bring to a boil then simmer over low heat for 2 minutes. Remove from heat and pour the marinade into a large shallow dish (to marinate steaks later). Set aside until it's cooled, or to speed up the process, cover and place it in the fridge until it's cool.
- Add steak into the dish with marinade. Cover and place in fridge for 1 hour. Flip sides and cover for another 1 hour in the fridge. I prefer to marinate over night.
- 20 minutes before starting the grill, take dish with steaks out (still covered) to cool to room temperature. Heat grill.
- Heat grill to high and grill steaks for 5 minutes. Flip and continue to grill for 4 minutes (for medium-rare to medium). Use an internal thermometer (135F for medium-rare and 140F for medium). Transfer steaks to a platter and tent with foil to let rest for 5 minutes. Grill some pineapple slices along with the steaks for garnish.
HAWAIIAN BEEF TERIYAKI

- In a Ziploc, combine all the except the green onion, and the pineapple. Beef, pineapple juice, soy sodium, garlic, ginger, allspice, salt, and pepper. Massage the beef and marinate for at least one hour.
- The beef is very thin if you're working with a thick beef you might want to pound to flatten it before adding the rest of the ingredients; just place the beef on your parchment paper on a countertop, cover with another parchment paper or plastic cling and use a rolling pin/mallet to gently pound to flatten it.
- Place a skillet over high heat and cook on both sides about 5 minutes or more.
- Remove and transfer into a plate. In the same pan, add the chopped onions and cook until soft, add the pineapple bites then combine and cook for about 1 minute.
- Slice into small bites/strips and return to the same pan transfer and all the juice that drip while cutting back into the pan.
- Combine and allow everything to warm up.
- Serve and garnish with the green onion if desired.
HAWAIIAN TERIYAKI SAUCE
There is regular teriyaki sauce, and then there is Hawaiian Teriyaki Sauce (which is also called Hawaii-Style Teriyaki Sauce and Local Teriyaki Sauce). This Hawaii version is super easy to make, all you need is soy sauce, sugar, and ginger!

- Combine the soy sauce, sugar, and grated ginger in a small saucepan. Bring to a boil, and then simmer for 10 minutes.
- Remove from heat and pour the sauce into a glass jar. Let cool, cover and store in the fridge. Use as needed (see notes below).
GRILLED SKIRT STEAKS WITH HAWAIIAN-STYLE TERIYAKI GLAZE AND GRILLED BROCCOLI
Steps:
- Preheat a 2-burner cast-iron grill or two grill pans over medium-high heat for about 3 minutes.
- Drizzle the grapeseed oil over the steaks and sprinkle with salt. Place the steaks on the grill, seasoned-side down, and cook for 4 to 5 minutes per side, or to the desired doneness.
- Place the broccoli spears on the grill next to the steaks and cook for 4 minutes per side. Brush the steaks with some teriyaki glaze just before taking them off the grill. Let the steaks rest for about 8 minutes before slicing.
- Arrange the sliced steak and grilled broccoli on a serving platter and finish with additional teriyaki glaze. Sprinkle with toasted sesame seeds and garnish with several sprigs of cilantro.
- Combine the pineapple juice, soy sauce, scallions, brown sugar, ginger, garlic and sesame oil in a medium saucepan. Bring to a boil, then reduce the heat to a simmer. Cook until thick, about 20 minutes.

- Mix water, pineapple juice, brown sugar, tamari, garlic, ginger paste, and onion powder together in a resealable zip-top bag. Reserve 1/2 cup marinade, add tapioca flour to reserved marinade and set aside. Cut beef into 1-inch pieces; add to the marinade in the bag, seal the bag, and refrigerate for 45 minutes.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil; add red pepper flakes and sirloin pieces, discarding marinade. Saute until browned, 5 to 7 minutes.
- Place bell peppers, onion, and carrots in a steamer bucket. Place bucket on top of meat. Hit Cancel.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Carefully remove vegetable bucket. Set aside.

- Mix together all ingredients, excluding beef. Set aside about 1/2 cup of the sauce, cover and refrigerate.
- Place beef in a Ziploc bag and pour marinade over. Press out all the air, seal, and marinate for at least 6 hours (overnight works great).
- Over prepared grill on medium-high heat, grill steak a minute or two on each size until cooked to your desired doneness (with the steak being so thin, you don't have to grill it for too long).

- Soak 12 bamboo skewers in a large bowl of water and set aside.
- Make the marinade by combining the soy sauce, sugar, and ginger in a bowl. Stir until the sugar is completely dissolved.
- Place the thinly sliced beef in a bowl and pour the marinade over the beef, making sure all the slices are covered in the marinade.
- Let marinate for 30-45 minutes in the refrigerator.
- Remove from the refrigerator and thread the marinated beef onto the skewers.
- Turn on the grill and lightly oil the grates. Cook the skewers for about 2 minutes on each side, making sure they are nice and charred.

- In a 9×13 baking dish, add 1/2 bottle of the marinade (save the rest for another use), pineapple juice, ginger, and rosemary. Whisk to combine. Add the steak, making sure that it is covered with the marinade. Add extra teriyaki and pineapple juice if necessary. Cover with plastic wrap and marinate in the fridge for at least 24 hours.
- Remove the steak from the refrigerator about 30 minutes prior to cooking. Taking the chill off helps the meat to cook evenly.
- Heat your grill to high. Remove the steak from the marinade and pat dry with paper towels. Drizzle lightly with olive oil and rub it in to coat (this prevents sticking on the grill). Season with salt and pepper and set aside.
