HAWAIIAN ICED TEA
I first tasted this tea in a popular Italian restaurant in my college hometown of Kailua. I have been craving it ever since, and have experimented with a few proportions. Add more tea leaves for a stronger tea, but do not steep longer or the tea will end up tasting bitter. (If it does, add a pinch of baking soda.) Always make something to your liking! This is also great to serve at showers.

Steps:
- Pour the barely boiling hot water into a large pitcher, and add the tea bags. Steep the tea, 2 to 4 minutes. Remove the tea bags and pour in the ice water. Pour in the pineapple juice. Refrigerate until thoroughly chilled, about 1 1/2 hours.
- Pour the tea over ice, garnish with pineapple spears, and serve.

PLANTATION ICED TEA
Steps:
- Cold-brew the tea by putting 4 heaping teaspoons of black tea leaves (or 4 tea bags) in a jar and adding 1 quart cold water. Cover the jar and leave the fridge to cold-brew for 8-12 hours.
- Once the tea is done brewing, strain out and discard the tea leaves (or remove the tea bags). You now have 1 quart of cold-brew black tea.
- In a pitcher, mix together 6 ounces pineapple juice and 2 ounces simple syrup.
- Add the 1 quart of cold-brew black tea to the pitcher and stir till combined.
- Fill glasses ice with, pour in the Plantation Iced Tea and serve!
LEMONGRASS AND CINNAMON HAWAIIAN PLANTATION ICED TEA RECIPE
Hawaii has changed Iced Tea for me and it's all because of Plantation Iced Tea. Like an Arnold Palmer but with pineapple juice, the best I've come across is from Diamond Head Grill and this is my shot at recreating it, as a Lemongrass and Cinnamon Hawaiian Plantation Iced Tea recipe.

Steps:
- Bring water to a simmer in a medium saucepan over medium-high heat (don't let it boil), about 5 minutes. Add tea, cover partially, and let steep until the flavor is stronger than desired but not bitter, about 8 to 10 minutes. Meanwhile, trim the ends off the lemongrass, and cut the stalk into 2-inch pieces. Cut each 2-inch piece in half lengthwise then bruise by lightly hitting with the back of a wooden spoon.
- Once the tea has steeped, discard the tea, add lemongrass, cinnamon, and mint (minus about 6 to 8 stems you'll want to reserve for garnish) and let cool to room temperature, about 1 hour. Add the ice to the tea, then stir in the pineapple juice, and sugar or honey. Place in the refrigerator to cool completely, about 2 hours.
- Once the tea is cold, discard the cinnamon, lemongrass, and mint and stir in the lime juice. Taste and adjust with more lime juice or sugar as desired. Serve iced tea over ice and garnish each glass with a sprig of mint.
